Un tema de mucha transcendencia en la actualidad agrícola es la presencia del cadmio en el cultivo de cacao; dado que compromete severamente la salud, seguridad alimentaria y al medioambiente. Aunque la demanda de cacao crece significativamente, la presencia de este contaminante es una limitante potencial para su exportación y comercialización. Este artículo describe los efectos ambientales que provoca el cadmio en la planta de cacao, en los ecosistemas suelo-agua, en la salud humana y algunos conflictos socioeconómicos. En este sentido, a través de una revisión bibliográfica sistemática e información disponible en bases de datos, se presenta un enuncio enfocado básicamente al cadmio como uno de los metales más tóxicos e inhibitorios de los procesos fisiológicos de las plantas ya que reduce el crecimiento, la actividad fotosintética, la transpiración y el contenido de clorofilas, además de provocar un desbalance nutricional importante en las plantas con sus consecuentes efectos sobre la productividad. Su acumulación degrada el suelo, altera sus propiedades químicas (nutrientes y pH), físicas (textura, permeabilidad, retención de agua y densidad) y biológicas (hongos y bacterias), perdiendo su capacidad de autodepuración. En las partes áreas de las plantas permite su paso a la cadena trófica donde se bioacumula, provocando efectos perjudiciales en la salud de las personas, dañando principalmente riñones e hígado, pudiendo provocar nefropatía y daño hepático irreversible. La ingesta continuada de este metal pesado puede provocar fragilidad ósea. Palabras clave: Cacao, cadmio, ambiente, salud
El riesgo sanitario en el matadero corresponde a las probabilidades que tiene la carne de contaminarse biológica, química o físicamente con agentes perjudiciales presentes en el ambiente, materiales, equipos, por una incorrecta higiene e inadecuada manipulación de operarios intencional o no intencional y otros factores, que podrían poner en peligro la salud o la vida humana como resultado a una exposición, siendo necesario identificar para los respectivos correctivos. El objetivo de la investigación fue evaluar los riesgos sanitarios del centro de faenamiento en la ciudad de Portoviejo–Manabí, Ecuador. La investigación fue observacional, descriptiva y cuali–cuantitativa. La población estuvo conformada por los elementos que integran el establecimiento, la muestra la integró la línea de procesamiento de ganado bovino. Se utilizó la observación y el método lógico deductivo, los instrumentos usados fueron las guías de encuestas y guía de cumplimiento de buenas prácticas respaldadas por expertos. Para el procesamiento de las encuestas se utilizó el software Tableau Desktop versión 2023.1. En el procesamiento estadístico se manejó el software RapidMiner Studio versión 9.9, se usó el algoritmo de Random Forests para obtener el peso de cada pregunta y visualizar el árbol de decisión, para ellos se entrenó el modelo con el 30 % de los datos; éste se aplicó para las encuestas de operarios y veterinarios. El trabajo de investigación contó con la autorización CBI–UTM–INT– 23–03–01_MHDD del Comité de Bioética Institucional de la Universidad Técnica de Manabí. Los riesgos de que la carne se contamine están relacionados con la infraestructura antigua del matadero, falta de gestión de residuos e insuficiente capacitación de operarios que concuerdan con el nivel de cumplimiento de Buenas Prácticas MEDIO; debe considerarse una alerta para la salud de la ciudadanía. Es necesario la implementación de programas de formación a operarios para concienciar sobre higiene y manipulación adecuada de la carne y estrategias sostenibles de gestión de residuos.
The bulb onion (Allium cepa L.) is a vegetable widely cultivated and in high demand in national and international markets. Due to the risks that the indiscriminate use of agrochemicals represents for human health and the environment, the present study aimed to make a comparative analysis of the effects of organic vs chemical fertilization currently used in the cropping of red hybrid bulb onion (Eureka). Three organic fertilizers (Zumsil®, ComCat® and EcoFungi®) were compared to three chemical fertilizers (15-15-15®, Muriate of Potash® and Nitrofoska®). The response variables were: plant height at 30 and 60 days after transplanting (DAT), length, diameter and average weight of bulbs, yield in tons per hectare and the relationship between height at 30 and 60 DAT. The experiment was carried out under a completely randomized design with four replicates, seven treatments and 28 experimental units. The statistics used include an analysis of variance and a Canonical Biplot that allowed to obtain groups of variables and to determine their correlation with each one of the treatments. Additionally, a marginal analysis of dominant treatments was performed. Positive response of variables was strongly associated with organic fertilizers. From the economic point of view, the ComCat® organic fertilizer represented an ecological alternative with excellent benefits for the producer. This research is in line with the trends for agrochemical-free foods.
Se evaluó los capitales de medios de vida de los productores del cultivo de café en la comunidad Cerro Grande del cantón Jipijapa, provincia de Manabí. Los capitales considerados en la investigación son: humano, cultural, social, político, físico y financiero, los datos se obtuvieron mediante la aplicación de una encuesta estructurada al total de las familias de la comunidad. Con la información de la disponibilidad de capitales se definieron las estrategias para los productores de este sistema cafetalero. Se registró que el sistema cafetalero estudiado, es una nueva propuesta desde hace seis años de un sistema agroforestal utilizando la variedad Arara (Arara-Sarchimor amarelo). El sistema productivo predominante de la comunidad es el cultivo de café. Existe por parte de los agricultores la disposición para aplicar los conocimientos obtenidos en capacitaciones relacionadas al cultivo de café propuestas por instituciones públicas y privadas. Una amenaza es la inestabilidad de los precios del café en el mercado, y la principal oportunidad encontrada es el interés de organizaciones extranjeras por la calidad del café del sitio. Entre las estrategias se encuentra promover y proteger con incentivos tributarios a los caficultores orgánicos, Alianza con hoteles, restaurantes gourmet, para difundir la calidad del café de la comunidad y potenciar en temas específicos como postcosecha y comercio.
