Avaliação dos compostos bioativos e ação antioxidante do iogurte de beterraba com limão Evaluation of bioactive compounds and antioxidant action of beet yoghurt with lemon
Resumo-Vinagre consisti em um condimento obtido através da fermentação alcoólica que converte açúcar em etanol (álcool), este sofre transformação em ácido acético pela fermentação acética decorrente de bactérias e conferindo o gosto característico de vinagre. Nesse condimento a adição de ervas e/ou especiarias pode acarretar um aumento das características sensoriais de aroma, sabor e também valor nutricional e econômico. A incorporação de microcápsulas de wasabi (wasabia japonica) especiaria de sabor picante e aromatizante, rico em betacaroteno glucosinolatos e isotiocianatos, agrega valor ao vinagre de álcool. O objetivo deste trabalho foi desenvolver e avaliar as características físico-químicas de vinagre de álcool incorporado com microcápsulas de wasabi obtidas pela técnica de gelificação iônica. Na caracterização das microcápsulas foi verificado que encapsulamento aumentou o teor de clorofila. Já no vinagre foi constado pelas análises físico-químicas que os valores obtidos estavam de acordo com as definições e parâmetros da legislação. Na determinação de carotenóides e clorofila, avaliados após a adição das microcápsulas, foi constatado inicialmente uma elevada migração dos pigmentos para o vinagre e posteriormente a migração foi decaindo, sendo estabilizada após 5 horas. Após 7 dias foi feita uma nova leitura desses pigmentos, aonde foi observado uma diminuição do teor de carotenóides e de clorofila da microcápsula, já na leitura desses pigmentos no vinagre foi verificado o aumento dos valores desses pigmentos e mudanças no seu perfil sensorial. Conclui-se que a incorporação de microcápsulas de wasabi em vinagre de álcool, agrega valor econômico como também nutricional e sensorial. Palavras-chave-vinagre condimentado; wasabi; microcápsulas.
