A preocupação com a manutenção da saúde e com a prevenção de certas doenças tem sido associada a uma ingestão adequada de Fibra Alimentar (FA) por parte dos profissionais de saúde, e também por uma parcela da população atenta às informações que, já há algum tempo, vêm sendo veiculadas. A FA, considerada o principal componente de vegetais, frutas e cereais integrais, permitiu que estes alimentos pudessem ser incluídos na categoria dos alimentos funcionais, pois a sua utilização dentro de uma dieta equilibrada pode reduzir o risco de algumas doenças, como as coronarianas e certos tipos de câncer (FOOD..., 1998).Além dos alimentos convencionais ricos em fibras, existem inúmeros alimentos não convencionais geralmente não utilizados na alimentação humana que possuem grande quantidade desse nutriente. Esses talos, AbstractThe objective of the study was to use Stalk Flours (SF) to prepare cookies. The ST was made with dehydrated Kale Stalks (KSF) and Spinach Stalks (SSF). Three kinds of cookies were prepared by modification of the sugar-snap cookie formula, 10-50D method (AMERICAN..., 1995): control cookie, cookie with 15% of KSF, and cookie with 15% of SSF. The centesimal composition was performed on the SF by the AOAC (ASSOCIATION..., 1995) and the nourishing fibers were prepared according to van Soest (1963). The following parameters were analyzed: weight, thickness, diameter, volume, and apparent density according to the 10-50D method of the AACC (AMERICAN..., 1995), titratable acidity and pH using the Adolfo Lutz Institute (2005) technique, and also revenue and caloric factor. The determination of the centesimal composition of the cookies followed the AOAC regulations (ASSOCIATION..., 1995), and a 9-point hedonic scale of was used for the acceptance testing. It was observed that the SF had a low energetic density and a high value of nourishing fiber and ashes. The cookies analyzed showed a higher value of thickness (p < 0,05), higher value (p < 0,05) of titratable acidity, and a lower value (p < 0,05) of pH compared to the control. The centesimal composition showed a lower value of fat and caloric density and a higher value of humidity and fiber in the cookies tested. The aim of this work was to evaluate the suitability of yogurt containing açaí pulp as a food carrier of probiotic cultures. Probiotic yogurts containing increasing amounts of açaí pulp (3, 5 and 7%) were processed and submitted to a physicochemical analysis and viable microbial count during refrigerated storage. In general, all the physicochemical parameters showed variations proportional to the amount of açaí pulp in the product formulation. Probiotic activity was verified throughout refrigerated storage for all the products, although there was a fall of one logarithmic cycle for both micro‐organisms during this period (107–108 CFU/mL).
IntroduçãoGrande desperdício de produtos de origem vegetal in natura ocorre durante os processos de distribuição e comercialização, em virtude da perda de qualidade, do processo de preparação para o transporte ou venda. Nessa cadeia não é considerado o desperdício que acontece no âmbito doméstico, já que folhas, cascas e talos de hortícolas são desprezados, devido aos tabus alimentares ou ignorância de sua utilidade como alimento (PRIM, 2003).Os subprodutos de frutas e hortaliças apresentam quantidades apreciáveis de fibra e de outros constituintes importantes à alimentação humana. O consumo regular dessas frações reduz significativamente a prevalência de algumas doenças degenerativas, visto que são substâncias biologicamente ativas que trazem benefícios à saúde ou efeitos fisiológicos desejáveis (MELO et al., 2006). Cakes without watermelon inner skin (control) and others containing 7 and 30% of watermelon inner skin(experimental), a non-wheat flour substitute, were elaborated. The chemical composition, physical, and physicochemical characteristics were evaluated. In the sensory evaluation, one hundred non-trained panelists were assigned blocks of four samples and performed sensorial tests using a nine point hedonic scale and multiple comparison. The obtained data were evaluated by descriptive statistics, ANOVA, and Tukey and Dunnet tests. The results revealed that 100 g of the watermelon inner skin flour contained 9,06 g of moisture, 12,72 g ashes, 0,7 g fats, 1,2 g proteins, 31,01 g insoluble fibers, 45,21 g total carbohydrates, and 192,75 kcal. The weight, height, and yield were higher and the diameter was greater in the experimental cakes, whereas the spreading factor and the apparent volume of the cake with 30% of watermelon inner skin flour were lower. The experimental cakes presented lower pH, higher titratable acidity, higher contents of fiber and moisture, lower contents of total carbohydrates, and reduced energetic value. The cakes presented good acceptance and more than 60% of the panelists would buy the cakes. The cake with 7% of watermelon inner skin flour was slightly better than the control and differed from the cake containing 30% of watermelon inner skin flour in aroma and flavor. Therefore, the use of watermelon inner skin flour for cake production, under the conditions of this research, is viable from the technological, nutritional, and sensorial point of view. OBJETIVO: O objetivo desta pesquisa foi avaliar o efeito da farinha de semente de abóbora (Cucurbita maxima, L.) sobre o metabolismo glicídico e lipídico em ratos. MÉTODOS: Vinte ratos Wistar machos recém-desmamados, distribuídos em quatro grupos, receberam por 10 dias, rações controle e experimental com farinhas de semente de abóbora integral, peneirada ou residual substituindo 30% do valor total de amido e dextrina da dieta controle. As dietas foram isocalóricas. Foram determinados os macronutrientes e a fibra insolúvel nas farinhas. As dietas tiveram a composição química calculada a partir dos dados dos rótulos dos produtos, da tabela de composição de alimentos e da análise química das farinhas de semente de abóbora. O peso corporal e a ingestão dos animais foram tomados a cada 48 horas. O sangue, coletado por punção cardíaca, teve os níveis de triacilgliceróis, colesterol e glicose analisados por métodos enzimáticos. RESULTADOS: As farinhas de semente de abóbora foram boas fontes de proteínas, lipídeos e, especialmente, fibras alimentares. Os animais tiveram ganho ponderal e ingestão semelhante (p>0,05). Os níveis de glicose e triacilgliceróis foram reduzidos significantemente para os grupos que receberam dietas com farinhas de semente de abóbora integral e peneirada. CONCLUSÃO: Frente às suas propriedades química e funcional, concluiu-se que a farinha de semente de abóbora interferiu no metabolismo do rato diminuindo significantemente os níveis de glicose e triacilgliceróis séricos.

As distinções das propriedades físicas e bioquímicas obtidas para os grânulos, embora moderadas entre si e bastante distintas em relação ao amido de milho, não explicaram a alta resistência dos amidos das bananas à digestão enzimática. Os parâmetros obtidos nas análises permitiram, pela primeira vez avaliar as características e diferenças entre grânulos de amido de espécies distintas de banana e suas relações ao amido de milho. Avaliação do efeito fisiológico da farinha de semente de abóbora (Cucurbita maxima, L.) no trato intestinal de ratos Evaluation of the pumpkin (Cucurbita maxima, L.) seed flour effects on the intestinal tract of rats
Pães de mel elaborados com farinha de diferentes variedades de banana verdeHoney Breads made with flour of different varieties of green banana Resumo Objetivou-se desenvolver pães de mel com farinhas de banana verde cozida de duas variedades: prata (FBVCP) e nanicão (FBVCN), caracterizando-os física, química, físico-química e sensorialmente. As polpas de banana verde cozidas foram desidratadas em estufa ventilada a 65ºC/20 h e moídas, obtendo assim as Farinhas de Banana Verde Cozida. Foram desenvolvidas três formulações de pão de mel por modificação da formulação padrão (P), com substituição parcial da farinha de trigo pelas FBVCP e FBVCN em 30% e com 15% de ambas as farinhas, sendo estes denominados, respectivamente, de pão de mel A, B e C. As análises físicas para FBVC foram os resíduos das perdas do processamento e o rendimento final. Já para os pães de mel peso, altura, e diâmetro antes e pós-cocção, densidade, fator térmico e rendimento, foram em amostras aleatórias constituídas de unidades provenientes de uma mesma fornada. As análises químicas e físico-químicas realizadas das farinhas e dos pães de mel foram: umidade, cinzas, fibra alimentar insolúvel (FAI), proteína, lipídios, Amido resistente (AR) e carboidratos (por diferença), acidez titulável e pH. Os pães de mel também foram analisados sensorialmente por provadores não treinados da universidade (Universidade Federal do Rio de Janeiro-UFRJ), aplicando o teste de preferência ordenação em 37 provadores e aceitação através da escala hedônica de nove pontos para os atributos aparência, aroma, textura, sabor e aspecto global em 73 provadores, com seu consentimento e aprovado pelo comitê de ética em Pesquisa da Universidade sob o número 164/07. Cassava is regarded as the nutritional base of populations in developing countries, and flour, product made of cassava, is the most consumed in the world. The cassava leaves are very rich in vegetable proteins, but a big amount is lost in processing the crop. The objective of this study was to do a sensory evaluation of cassava flour to which a protein concentrate obtained from cassava leaves (CPML) was added. The CPML was obtained from cassava leaves by isoelectric precipitation and added to cassava paste for preparation of flour in three parts 2.5, 5, and 10%. The acceptance test was done by 93 consumers of flour, using hedonic scale of 7 points to evaluate characteristics like color, scent, flavor, bitterness, texture, and overall score. By the method of quantitative descriptive analysis (QDA), eight trained tasters evaluated the following characteristics: whitish color, greenish color, cassava flavor, bitter flavor, characteristic flavor, lumpiness, raw texture, leaf scent, and cassava scent. The acceptability test indicated that flour cassava with 2.5 was preferred. Whitish color, greenish color, cassava flavor, bitter flavor, salty flavor, characteristic flavor, lumpiness texture, raw texture, and the smell of the leaves and cassava flour were the main descriptors defined for flour cassava with CPML has better characteristics.
