Consumers are more interested in having healthier and better quality products. The diet offered to animals can strongly affect the composition of meat. Thus, this study aimed to evaluate the effect of different levels of concentrate on lipid profile (in natura meat) and cholesterol content (in natura and cooked meat) of ewe lambs' meat cuts. Therefore, twenty-four lambs with a mean weight of 23.1 ± 2.1 kg were confined and fed different levels of a concentrate (20, 40, 60 and 80%) for 120 days. The diets consisted of tifton hay and concentrate based on corn and soybean meal. The muscles triceps brachii (shoulder), longissimus dorsi (loin) and semimembranosus (leg) represented the respective cuts that were analyzed. Increased levels of concentrate decreased only C18:3 (5.82 to 0.20 mg/100 g) in meat and without affecting saturated fatty acids (SFA), unsaturated (UFA), monounsaturated (MUFA), polyunsaturated (PUFA), both desirable and total levels. Levels of concentrate had no effect on UFA/ SFA (1.01), MUFA/SFA (0.97), PUFA/SFA (0.04) ratios, or the atherogenic (AI) and thrombogenic index (TI), nor on the content cholesterol in natura and cooked meat. The meat cuts had different lipid profiles, IA, IT and cholesterol content. Concentrate levels slightly alter the lipid profile and do not alter the cholesterol content, while meat cuts are different for these components. Objetivou-se avaliar a eficiência de dietas contendo diferentes aditivos sobre o desempenho, características qualitativas da carcaça e da carne de 150 novilhas Brangus suplementadas a pasto diariamente com 0,32% do peso vivo. Os tratamentos foram: suplemento base (sem aditivos); farinha de algas calcárias (Lithothamnium calcareum) adicionada ao suplemento base; vitamina E e selênio orgânico adicionados ao suplemento base; gordura protegida adicionada ao suplemento base; uma aplicação por via subcutânea de vitamina D 7 dias antes do abate + suplemento base; e uma associação de vitamina E, selênio orgânico e gordura protegida adicionados ao suplemento base + uma aplicação por via subcutânea de vitamina D 7 dias antes do abate. Os animais foram suplementados por 109,80 ± 11,71 dias, quando foram abatidos ao alcançarem 337,95 ± 20,56kg de PV. O delineamento experimental foi inteiramente casualizado, com seis tratamentos e 25 repetições. O desempenho, as características de carcaça e da carne não foram afetados pelos aditivos utilizados. A média da área de olho de lombo de 52,00 cm² e a média da espessura de gordura subcutânea de 3,58mm dos animais que receberam a associação de aditivos não diferiram dos valores dos animais do tratamento controle. A adição de vitamina D3 não teve efeito sobre a força de cisalhamento da carne. O uso de aditivos conforme os protocolos adotados não foi eficiente para melhorar o desempenho, as características de carcaça e as características físicas da carne de novilhas suplementadas a pasto.

Food additives were used to improve meat characteristics of Brangus heifers supplemented on pasture daily (0.32% LW). The treatments were: supplement (with no additives); calcareous seaweed flour (Lithothamnium calcareum) added to the supplement; vitamin E and organic selenium added to the supplement; protected fat added to the supplement; a subcutaneous application of vitamin D seven days before slaughter + supplement; and the association of vitamin E, organic selenium and protected fat added to the supplement + one subcutaneous dose of vitamin D seven days before slaughter. The animals were supplemented by 109.80±11,71 days and were slaughtered when they reached approximately 337.95±20,56kg of LW. The experimental design was completely randomized with six treatments and 25 repetitions. TheLongissimus dorsi muscle’s chemical composition did not differ between treatments (P>0.05). The use of seaweed flour, vitamin D, protected fat and the association of additives has the potential to improve the concentration of some unsaturated fatty acids in the Brangus heifers’ meat (P˂0.05), but without improving the level of unsaturated fatty acids class. We conclude that the use of additives in heifers finished in the pasture/supplement system has no effect on the meat quality, but only, isolated outcomes, on the content of some fatty acids.

This study evaluated the effects of hanging the carcass by the Achilles tendon (AS) versus pelvic suspension (PS) on meat quality traits. Bos indicus carcasses of two distinct biological types/sex categories comprised 10 young Brangus heifers and 10 Nellore bulls which were finished in a feedlot. Half-carcasses of each biological type/sex category were randomly hung using Achilles suspension (n = 20, AS) or pelvic suspension (n = 20, PS) for 48 h. At boning, longissimus samples were collected for evaluation by untrained consumers for tenderness, liking of flavor, juiciness and overall acceptability, after aging for 5 or 15 days. Objective samples were also tested for shear force (SF), Minolta meat colour, ultimate pH, cooking loss (CL) and purge loss (PL). There was a positive effect (p < 0.01) of PS on the sensory tenderness of Nellore bulls and Brangus heifers aged for 5 days compared to the AS method. At 15 days of aging, difference in sensory tenderness was observed (p < 0.05) in either group. Additionally, an interaction occurred between the suspension method and the aging of Nellore beef (p < 0.05) on liking of flavor, juiciness and overall acceptance, while the same effects were not observed for Brangus beef (p > 0.05). Nellore carcasses submitted to PS tended (p = 0.06) to produce more tender meat than those submitted to AS (SF = 44.62 ± 6.96 vs. 50.41 ± 8.04 N), and lower CL (p < 0.05) were found (27.7 vs. 30.9%). Carcass-suspension methods did not influence meat color, pH or PL in either group (p > 0.05). The PS contributes to improve the quality of Bos indicus bulls loins; in addition, this method allows a reduction in the aging time from 15 to 5 days, and it can be used to supply meat consumer markets which accept a certain level of eating quality.

Objetivou-se avaliar as características físico-químicas e a composição centesimal da carne de borregas confinadas recebendo diferentes relações volumoso (V):concentrado (C) (80:20; 60:40; 40:60 e 20:80) e os cortes cárneos destes animais (paleta, lombo e do pernil). Foram utilizadas 24 borregas (mestiças) recém-desmamadas com peso vivo inicial médio de 23,1 ± 2,1kg, confinadas por 120 dias. Após o abate, foram removidos os músculos Triceps brachii (paleta), Longissimus dorsi (lombo) e Semimembranosus (pernil) para representar os respectivos cortes. O aumento nos níveis de C não influenciou a composição centesimal dos cortes cárneos e diminuiu a luminosidade (L*) e aumentou a tonalidade vermelha (a*). O lombo apresentou o menor teor de umidade (U) (699,7g/kg) e maior teor de extrato etéreo (64,5g/kg), enquanto a paleta apresentou maior teor de U (738,7g/kg) e menor teor de PB (214,0g/kg), e o pernil apresentou o maior valor para PB (232,8g/kg) e valores intermediários para U (716,3g/kg) e EE (40,1g/kg). O pernil forneceu a carne menos macia (FC=2,98kgf). Para as características físico-químicas, o lombo e a paleta apresentaram carnes com maior valor de b* e o pernil e a paleta obtiveram maiores valores para a*. As diferentes proporções V:C não alteram a composição centesimal e proporcionam valores diferentes para L* e a*. Os cortes cárneos apresentam diferenças na composição química e nas características físicas.
