Objetivo: Caracterizar, quanto aos aspectos biopsicossociais, a população de crianças e adolescentes em situação de acolhimento institucional em um município da região centro-oeste de Minas Gerais. Métodos: Estudo do tipo exploratório descritivo. Os participantes foram 11 crianças e 12 adolescentes institucionalizados em Abrigos de um município de Minas Gerais. A coleta de dados ocorreu de outubro a dezembro de 2018, por meio de um roteiro semiestruturado inspirado no questionário da Pesquisa Nacional de Saúde do Escolar - PeNse. Resultados: Quanto ao consumo de alimento em cinco dias ou mais na semana, todos os participantes, de ambos os sexos, consomem diariamente feijão e frutas; 81% do sexo masculino comem guloseimas e 50% do sexo feminino tomam refrigerante; 53% dos participantes praticam atividade física e 10% assistem televisão mais de duas horas por dia. Em relação a tabacos e drogas, 53% disseram já ter experimentado alguma bebida alcóolica e 15% usaram drogas ilícitas uma vez na vida. Conclusão: O contexto familiar composto de situações de risco e vulnerabilidades permite que as crianças e adolescentes tenham suas histórias de vida permeadas por condições socioeconômicas precárias, bem como aproximações diretas e indiretas com consumo de drogas lícitas e ilícitas.
After harvest, macaw palm fruits show high deterioration rates when improperly preserved. A possible cause is the high fruit water content favoring enzymatic and microbiological degradation. Therefore, this study aimed to evaluate the effect of drying on the mesocarp oil quality during storage and to set the drying curve of macaw palm fruits. For that, two experiments were carried out. In the first, the drying curve of macaw palm fruits was determined at 60 °C, and mathematical models were defined for the process. Drying was performed with freshly harvested fruits (S0) and with fruits stored for 20 days after harvest (S20). Fruits were stored for 20 days after harvested and then went through drying. The fruits were dried in a prototype dryer at 60 °C. After drying, the fruits were stored for different periods (0, 15, 30, 45, 60, and 90 days) and evaluated for oil physicochemical parameters. When compared to S0, drying of macaw palm fruits in the S20 treatment showed a lower drying time until equilibrium moisture was reached. In general, all the mathematical models tested were adequate to describe the drying process. Fruits dried at 60 °C controlled mesocarp oil acidification for up to 90 days in storage. On the other hand, drying impaired the mesocarp oil oxidative stability. We may conclude that the drying process is efficient to maintain acidity during the storage of macaw palm fruits. Uma possível causa é o elevado teor de água nos frutos, o que pode favorecer a degradação enzimática e microbiológica dos frutos. Diante do exposto, objetivou-se com esse estudo avaliar o efeito da secagem na manutenção da qualidade do óleo do mesocarpo durante o armazenamento e determinar a curva de secagem de frutos de macaúba. Para isso, realizou-se dois experimentos. No primeiro, determinou-se a curva de secagem dos frutos de macaúba na temperatura de 60 °C e definiu-se modelos matemáticos para o processo. A secagem foi realizada com frutos recém colhidos (S0) e frutos armazenados durante 20 dias após a colheita (S20). Após a colheita os frutos foram armazenados durante 20 dias, após esse período foi realizado o processo de secagem. Os frutos foram secos em um secador protótipo a temperatura de 60°C. Após a secagem, os frutos foram armazenados por diferentes períodos (0, 15, 30, 45, 60 e 90 dias) e avaliados quanto aos parâmetros físico-químicos do óleo. A secagem dos frutos de macaúba no tratamento S20, apresentou menor tempo de secagem até atingir umidade de equilíbrio comparado a S0. Em geral, todos os modelos matemáticos testados foram adequados para descrever o processo de secagem. Macauba fruits are oil-rich drupes with high moisture content at harvest. This feature can affect the chemical properties of the oil and increase the costs of biodiesel production. Therefore, it is necessary to adopt postharvest strategies to ensure oil quality. The aim of this work was to evaluate the effect of drying macauba fruit on the quality of the pulp oil. Husked and dehusked fruits were dried at 60°C and then stored. At 0, 15, 45, 100, and 180 days after storage, fruit samples were retrieved, and the oil from the pulp was evaluated for physicochemical parameters. The removal of the husk from the fruits considerably reduced the drying time compared to that of the husked fruits. Drying prevented deterioration of the fruit even after 180 days of storage, regardless of the presence of the husk. The drying process allowed for efficient storage of the macauba fruit while maintaining low levels of oil acidity. Furthermore, the oxidative stability of the pulp oil from the dehusked dried fruits lasted longer than that from the husked dried fruits. Therefore, drying is a viable alternative for the postharvest of macauba fruits to maintain the quality of the oil for biodiesel production.
This study aimed to evaluate the quality of beans (Phaseolus vulgaris L.) stored with different moisture contents under hermetic conditions. Beans with 12.3%, 15.7%, and 17.8% moisture content were used in the experiment. They were packed in bag type silos (3 kg), PET bottles (1.5 L), and glass containers (3 L), covered with organza fabric (control), and stored at 25 °C and 70±5% relative humidity, for 120 days. The evaluated characteristics included moisture content, apparent density, electrical conductivity, germination percentage, cooking time, and bean classification, every 30 days. Except for the electrical conductivity and cooking time, the other characteristics were kept for 120 days in the stored product with moisture contents of 12.3% and 15.7% in hermetic conditions. Beans with 17.8% of the moisture content, electrical conductivity and cooking time increased, and apparent density and germination were reduced. Beans stored in the control, with any of the moisture contents, showed high quality loss during the long storage. It was concluded that it is possible to storage beans with moisture contents of 12.3% and 15.7%, with quality, for until 120 days, in hermetic conditions. Feijão com teores de água de 12,3%, 15,7% e 17,8% foram acondicionados em silos tipo bolsa (3 kg), garrafas pet (1,5 L) e recipientes de vidro (3 L), cobertos com organza (controle) e armazenados à temperatura de 25 °C e umidade relativa de 70±5%, por 120 dias. Avaliaram-se o teor de água, a massa específica aparente, a condutividade elétrica, a porcentagem de germinação, o tempo de cocção e a classificação do feijão, a cada 30 dias. À exceção da condutividade elétrica e do tempo de cocção, as demais características foram mantidas por 120 dias no material armazenado com teores de água de 12,3% e 15,7%, em condições herméticas. No produto armazenado com 17,8%, ocorreu aumento no teor de água, condutividade elétrica e tempo de cocção, e redução na massa específica aparente e na germinação. No controle, independentemente do teor de água, o material apresentou acentuada perda de qualidade ao longo do armazenamento. Concluiu-se que é possível armazenar feijão com teores de água de 12,3% e 15,7%, com qualidade, por até 120 dias, em condições herméticas. The presence of microorganisms, especially during storage, can lead to the rapid deterioration of macauba fruits (Acrocomia aculeata) and reduce the quality of extracted oil for biodiesel production. An alternative to ensure the quality of the oil is the use of ozone gas, a oxidizing agent that has high antimicrobial and sanitizing power. The objective of this study was to evaluate the influence of high concentrations of ozone gas on macaúba fruit and its effect on the quality of the oil throughout storage for the production of biodiesel. Ozonation was performed 20 days after harvest using fruits with and without the epicarp. Ozone was applied at a concentration of 18.0 mg L-1 and a flow of 1.5 L min-1 for 10 h. After ozonation, the fruits were stored for different periods, and the physical-chemical parameters of the oil were evaluated. The ozonation of fruits without the epicarp visually reduced microorganism attack. In general, the ozonation process of macauba fruits maintained the visual characteristics of the fruits and the physical-chemical characteristics of the oil for biodiesel production compared to untreated fruits. The average acidity values of the oil were lower in the treatments with the ozone gas. Removal of the epicarp tends to facilitate the ozonation process, potentially by improving gas penetration into the fruit.
