<p>Neste trabalho objetivou-se avaliar o teor de sólidos solúveis (Brix), pH, acidez em acido cítrico e acidez total bem como os parâmetros microbiológicos do tubérculo da cultura da beterraba (<em>Beta vulgares L</em>) irrigada com efluente agroindustrial procedente do processamento de leite e frutas. Os experimentos foram realizados em campo nas dependências do IFPB-campus-Sousa, no período de agosto a dezembro de 2014. Empregou-se o delineamento experimental em blocos casualizados utilizando esquema fatorial (3x5), três tipos de água e cinco doses de nitrogênio com 4 repetições, totalizando 15 tratamentos e 60 parcelas experimentais. Os tratamentos corresponderam a: água do açude de São Gonçalo, água de açude + efluente (1:1) e efluente bruto combinada com seguintes doses de Nitrogênio 0, 30, 60, 90 e 120% ou 0, 3, 6, 9 e 12g/m<sup>2</sup>. Avaliando os parâmetros físico-químicos e microbiológicos da beterraba irrigada com efluentes agroindustrial comparando com a irrigada com água de açude. Observou-se que a água de reuso não interferiu na sua composição físico-química, assim como na contaminação microbiológica, para os diferentes tratamentos não apresentando diferença significativa entre as variáveis estudadas, apontando que é possível produzir beterraba com água de reuso diluída 1:1 e bruta com qualidade igualando ao irrigar com água de açude.</p>
