Este trabalho teve como objetivo avaliar o comportamento produtivo do Sorgo granífero (L) variedade IPA-467, mediante condições de irrigação e adubação, bem como, a caracterização físico-química da farinha de diferentes tipos de grãos e de rapadura obtida a partir de combinações de caldo de sorgo (CS) x caldo de cana (CC). O experimento resultou em uma produção de biomassa, sementes, colmo, caldo, melaço fino e melaço grosso, respectivamente, de: 64t/ha; 3,5t/ha; 46t/ha; 700L/t de colmo; 140L/t de colmo e 90L/t de colmo. A farinha obtida a partir de grãos de sorgo apresenta teor de açúcares totais inferior aos da farinha de trigo. As rapaduras em que o caldo de sorgo foi adicionado nas proporções de 10 e 20%, em associação com o caldo-decana, obtiveram maior nível de aceitação, quando comparada à rapadura obtida a partir de 100% de caldo de cana-de-açúcar. A aceitação de rapaduras formuladas a partir 30% de caldo sorgo e 70% de caldo de cana não diferiu de rapaduras obtidas de 100% de caldo de cana. qualidade; r; rapadura; melaço; caracterização físico-química.
A agroindústria é um dos seguimentos que mais produz resíduos orgânicos, os quais são geralmente descartados no meio ambiente de forma incorreta levando à poluição ambiental. Sendo assim, a utilização dos coprodutos agroindustriais pode contribuir para reduzir os impactos ambientais, visto que são ricos em compostos bioativos que atuam na promoção da saúde podendo ser utilizados para o desenvolvimento de produtos alimentícios com valor agregado representando uma promissora área de desenvolvimento científico e tecnológico. O objetivo deste estudo foi identificar o potencial dos coprodutos de frutas tropicais e sua utilização na formulação de novos produtos alimentícios. A revisão de literatura foi realizada utilizando as bases de dados eletrônicos Science Direct, Scielo e PubMed e também o Google Acadêmico. Foram incluídos artigos completos publicados durante o período de 2016-2022 nas línguas portuguesa e/ou inglesa e relacionados de forma relevante e objetiva ao tema proposto. Os resultados evidenciaram que estes coprodutos podem ser utilizados para formulação de novos produtos como farinhas, biscoitos, pães, cookies, doces, apresentam baixo custo de produção e alto valor nutricional e funcional. Dessa forma, há diversos benefícios no aproveitamento dos coprodutos agroindustriais de frutas tropicais, sendo uma alternativa promissora para inovação na indústria alimentícia, promovendo saúde e bem-estar e estimulando a economia circular de forma que a indústria e a sociedade se beneficiam, contribuindo para o desenvolvimento sustentável e para o enfrentamento da insegurança alimentar.
A Bahia é um grande produtor da manga ‘Tommy Atkins’, um fruto climatério que apresenta respiração celular intensa, o que aumenta a sua velocidade de deterioração, necessitando de estratégias para prolongar seu tempo de prateleira. No presente trabalho, mangas ‘Tommy Atkins’ foram imersas em revestimentos comestíveis elaborados a partir da mucilagem da palma com adição de óleo essencial de alecrim e glicerina e avaliadas durante 15 dias. As análises físicas envolveram perda de massa, índice de coloração da casca e da polpa, incidência de manchas e podridões e caracterização físico-química. Análises microbiológicas foram realizadas no tempo inicial e final. Os resultados mostraram que houve variação nos parâmetros avaliados entre tempo inicial e final, acompanhados da diminuição da acidez titulável e do aumento dos teores de sólidos solúveis totais e pH. A perda da massa fresca foi observada ao longo do estudo. Quanto à incidência de manchas e podridões, os achados foram semelhantes entre os tratamentos, com exceção do tratamento 4 (Mucilagem + 0,5 % de óleo de alecrim + 1,0 % de glicerina) que foi a menos afetada, não chegando a mais de 45% dos frutos afetados. Os resultados apontam a influência dos recobrimentos na qualidade pós-colheita e conservação das mangas ‘Tommy Atkins’.
A palma (Opuntia fícus indica L. Miller) é uma cactácea reconhecida pelo seu valor nutricional e funcional, porém, pouco explorada na alimentação humana brasileira. O objetivo deste trabalho foi obter a farinha de palma e elaborar uma formulação de torta salgada de sardinha contendo 50% desta farinha em substituição à farinha de trigo, avaliando sua aceitação sensorial. Os cladódios de palma foram colhidos na zona rural de Vitória da Conquista-BA, higienizados e secos em estufa de ar forçado a 60ºC para a produção de farinha que foi caracterizada quimicamente e avaliada quanto ao teor de compostos bioativos. Seguidamente, foram elaboradas formulações de torta de sardinha padrão e torta de sardinha com 50% de farinha de palma. A escala hedônica de 9 pontos foi utilizada para avaliação da aceitação da aparência, textura, aroma, sabor e avaliação global. Dentre os resultados da composição química da farinha, destacaram-se o elevado teor de açúcares redutores e cinzas e o baixo teor lipídico. Quanto aos compostos bioativos, observou-se o teor considerável de clorofila total (40,48 ± 2,68 mg.100 g-1) e flavonoides amarelos (12,77 ± 1,56 mg.100 g-1). A aceitação sensorial da formulação de torta com 50% de farinha de palma foi menor (p<0,05) que a padrão, entretanto, apresentou nota 7,11 no atributo avaliação global. Conclui-se que a farinha de palma, mostrou-se fonte de nutrientes e compostos bioativos e sua utilização em substituição à farinha de trigo na formulação de torta mostrou-se viável e aceitável sensorialmente, podendo ser uma alternativa para enriquecimento de produtos de panificação.
