The protein and total starch contents of the bean flours ranged from 17.72 to 20.27% and from 39.68 to 43.78%, respectively. Os amidos de feijão possuem pequenas quantidades de proteínas, lipídeos e material mineral. O teor de amilose variou entre 45,32 e 51,11% e a densidade absoluta, de 1,55 a 1,78 g.cm -3 . Os amidos de feijão apresentaram formato arredondado a ovoide, com superfície lisa. Six different common bean cultivars (BRS Embaixador, BRS Pitanga, BRS Estilo, Pérola, BRS Campeiro and BRS Esplendor) were characterized aiming to determine possible uses for them in various food products. The samples were analysed to determine their chemical composition, weight per hundred beans, pH, water and oil absorption capacities (WAC and OAC, respectively), foaming at pH 2.5, 5.6 and 8.0 and emulsifying properties. The relationship between the physicochemical and functional properties was described using the Principal Component Analysis (PCA). The results of the chemical composition, weight per hundred beans, WAC and OAC showed differences even between cultivars of the same commercial group. Foaming also varied between the cultivars and foaming capacity and stability were greatest at pH 5.6 and 8.0. The emulsifying capacity proved quite high for all cultivars, as well as the stability of the emulsion. According to these properties, with the contribution of the PCA, each different bean cultivar can be destined to specific applications according to its physicochemical properties. ResumoSeis diferentes cultivares de feijão comum (BRS Embaixador, BRS Pitanga, BRS Estilo, Pérola, BRS Campeiro e BRS Esplendor) foram caracterizados visando suas possíveis utilizações em produtos alimentícios variados. As amostras foram analisadas para determinação da composição química, peso de 100 grãos, pH, capacidade de absorção de água e óleo (CAA e CAO, respectivamente), propriedades espumantes nos pHs 2,5; 5,6; e 8,0 e propriedades emulsificantes. A relação entre as propriedades físico-químicas e funcionais foi descrita utilizando Análise de Componentes Principais (ACP). Os resultados da composição química, peso de 100 grãos, CAA e CAO mostraram diferenças até mesmo entre cultivares do mesmo grupo comercial. A capacidade de formação de espuma também variou entre os cultivares. A capacidade de formação de espuma e a estabilidade da espuma foram maiores nos pHs 5,6 e 8,0. A capacidade emulsificante foi alta para todos os cultivares bem como a estabilidade da emulsão. De acordo com estas propriedades, com a contribuição da ACP, cada cultivar diferente de feijão pode ser destinado a aplicações específicas, de acordo com as suas propriedades físico-químicas. This work investigated the pH, titratable acidity and total solids of the cassava starch fermentation water, using the traditional method and a method modified through the addition of glucose. Sour cassava starch production controlled by the characteristic of the fermentation water produced the best product (biscuit specific volume of 7.66 AE 0.41 mL g À1 ) at 33th day of fermentation in the modified method and at 85th day (biscuit specific volume of 6.53 AE 0.59 mL g À1 ) in traditional method. But, comparatively to the commercial sour cassava starch (biscuit specific volume of 3.48 AE 0.12 mL g À1 ), both traditional and modified methods, controlled by titratable acidity of fermentation water, can be retired from the fermentation tank in the 19th and 32th day of fermentation, with biscuit specific volume of 4.75 AE 0.30 and 5.17 AE 0.46 mL g À1 , respectively. Determining fermentation time can help to standardise sour cassava starch and to promote future applications of the fermentation water as a raw material.
There are 50 to 60 bamboo species, which the shoots are edible. This work aimed for the development and characterization of a new product from the Dendrocalamus asper specie, related to physicochemical, microbiological, texture and color characterization of a bamboo shoot paste. Cyanide was eliminated through preprocessing and the formula of the new product did not compromise bamboo shoots characteristics, as low-fat content food. The presence of phenolic compounds in the paste and antioxidant activity, even considering a product of high content of moisture, supports its consumption. As to the obtaining conditions, microbiological results indicate that consumption is safe, right after the paste production and during storage. The texture characteristics during storage, at room temperature and under cold, indicate the technical viability for this product, achieving stability, although it is still nonexistent in the market. Color changes in the final product, comparing to raw material, kept typical characteristics of bamboo shoot during storage, even considering browning reactions due to thermal treatment.
O objetivo deste estudo foi caracterizar o resíduo sólido do beneficiamento de brotos de bambu, que corresponde a mais de 70% da matéria-prima, além das propriedades tecnológicas e remoção de cianeto. O pré-processamento foi realizado em água fervente por 30, 45, 60 e 90 minutos. As amostras de resíduos (controle, tratadas e pré-tratadas) foram secas em estufa com circulação de ar por 48 horas a 65 ± 5 °C seguida de moagem em moinho de facas e padronizadas em peneira granulométrica 60 mesh. O pó apresentou baixo teor de lipídios e alto teor de fibras, proteínas e minerais proporcionais às farinhas tradicionais. As propriedades tecnológicas foram avaliadas quanto à capacidade de retenção de água e óleo, apresentando valores elevados, comprovados por análise de microscopia eletrônica de varredura (MEV), que apresentou estrutura de alta porosidade. Em relação à presença de glicosídeos cianogênicos, concluiu-se que o pré-processamento e secagem reduziu significativamente, mas não eliminou a taxifilina, o que gera um alerta para o processamento deste material como alimento seguro, porém demonstrando ser um importante material absorvente no tratamento de óleo -águas e solos contaminados.
