Resumo: Atualmente os produtos orgânicos vêm roubando a cena dos produtos tradicionais, por serem saudáveis, livres de agrotóxicos e por gerarem menor impacto no meio ambiente. O minimilho (Zea mays, L.) também conhecido como "babycorn", uma espiga imatura ainda não fertilizada (espiguetas), é uma hortaliça, produto considerado fino que vem ganhando importância no mercado de conservas no Brasil. Esta pesquisa se propôs avaliar a qualidade de minimilho orgânico in natura de diferentes variedades e determinar a composição centesimal e nutricional.Utilizou-se como metodologias analíticas as determinações de rendimento, peso médio, diâmetro e comprimento das espiguetas, além de pH, sólidos solúveis, acidez titulável, umidade, cinzas, lipídeos, proteínas, carboidratos e valor energético total. Com os resultados obtidos concluiu-se que as variedades que apresentaram maior rendimento foram Pipoca (48,75%), Eldorado (42,06%)e Branco (40,50%), sendo mais recomendadas para o beneficiamento e que o minimilho se trata de um produto de baixo valor calórico, podendo ser indicado em dietas hipocalóricas. Palavras-chave: estudo, espiguetas, produção orgânica.Abstract: Currently organic products come stealing the show from traditional products to be healthy, free of pesticides and generate less impact on the environment. The lithe corn (Zea mays L.) also known as " babycorn " an immature ear is not fertilized (spikelets), is a vegetable , thin product concerned that has gained importance in the market preserved in Brazil. This research aims to evaluate the quality of organic fresh baby corn in different varieties and determine the composition and nutritional. Used as analytical methodologies determinations yield , average weight , diameter and length of the spikelets , and pH , soluble solids , titratable acidity, moisture, ash , lipids , proteins , carbohydrates and total energetic value . With these results it was concluded that the varieties of higher yield were Popcorn (48.75%), Eldorado (42.06 %) and White (40.50 %), and most recommended for improvement and that is babycorn is a product of low calorific value and can be displayed on a hypocaloric diet.
ResumoOs frutos da jaqueira (Artocarpus heterophyllus Lam.) são consumidos na forma in natura pelas mais diversas camadas da população e sua alta perecibilidade leva a um índice elevado de perda pós-colheita, acarretando prejuízos para os produtores dessa frutífera. Sendo assim, o objetivo desse trabalho foi avaliar o efeito da temperatura de secagem (50, 60 e 70 °C) e do teor de umidade final (20 e 25%) sobre as características químicas e sensoriais da jaca desidratada. Foram realizadas análises de matéria seca, cinzas, proteínas, lipídeos, carboidratos, além da avaliação sensorial. Os resultados globais obtidos mostraram que a jaca desidratada possui teor de matéria seca de 74,2 a 80,9%, cinzas de 3,1 a 3,8%, proteínas de 3,2 a 6,6%, lipídeos de 0,09 a 1,2% e carboidratos de 89,8 a 92,4%. A avaliação sensorial mostrou que o produto de maior aceitação (média de 5,95) foi aquele desidratado a 50 °C e com 20% de umidade final, demonstrando que este pode ser uma alternativa alimentar para as regiões produtoras de jaca. SummaryJackfruits (Artocarpus heterophyllus Lam.) are consumed in natura by the most diverse sectors of the population, and their high perishability lead to high indexes of postharvest losses, leading to prejudice for the producers of this fruit. Thus the objectives of this work were to evaluate the effects of the drying temperature (50, 60 and 70 °C) and the final moisture content (20 and 25%) on the chemical and sensory characteristics of dried jackfruit. The overall results obtained showed that the dehydrated jackfruit had a dry matter content of from 74.2 to 80.9%, ash content from 3.1 to 3.8%, protein content from 3.2 to 6.6%, fat content from 0.09 to 1.2% and carbohydrate content from 89.8 to 92.4%. The sensory evaluation showed that the most accepted product (average of 5.95) was dehydrated at 50 °C, with a final moisture content of 20%, showing that this could be a food alternative for areas producing jackfruit.

É necessário planejar, executar e compreender cada atividade e os funcionários envolvidos, para melhorar a competitividade, conseguindo desenvolver bom resultados e diminuir o desperdício. Desta forma, neste artigo buscou-se averiguar a qualidade como fonte de vantagem competitiva para as empresas de refeições coletivas através de um levantamento bibliográfico. Constatou-se que a qualidade deve ser um sistema permanente de aprimoramento no sentido de satisfazer o cliente em suas necessidades.
The use of wine in the preparation of sauces adds value to this type of culinary preparation, catering for a diverse audience and preferences. The aim of this work to produce wine sauces and determine their acceptability (acceptance test and purchase intention) and physicochemical characteristics. It was fond that the sauces were satisfactory, making the manufacture of the products viable. For the sensory analysis, a hedonic scale was used to assess the color, appearance, aroma, texture and flavor. In the general evaluation, the sensory analysis of the wine-based sauces showed satisfactory acceptance, particularly the dry white wine sauce. The production of wine sauces proved to be viable, and may represent an option for those in search of foods with possible health benefits.
