O mandacaru - Cereus jamacaru - é uma cactácea de frutos com elevado potencial ao consumo in natura/industrial. Assim, objetivou-se quantificar os compostos bioativos em frutos de mandacaru colhidos na zona rural de Pombal, Sertão Paraibano. O experimento foi realizado no Laboratório de Química, Bioquímica e Análise de Alimentos, Centro de Ciências e Tecnologia Agroalimentar, da Universidade Federal de Campina Grande, Campus Pombal-PB. Após a colheita, os frutos foram selecionados e classificados em estádios de maturação conforme a cor da casca (maduro, casca totalmente vermelha e no estádio de transição, casca verde com manchas vermelhas). O delineamento experimental utilizado foi inteiramente ao acaso, em um fatorial 2 x 2 (fator 1: estádios de maturação, transição e maduro; fator 2: porção do fruto, casca e polpa), com 4 repetições. Os parâmetros estudados compreenderam o pH, íons H+, sólidos solúveis, acidez titulável, ratio, ácido ascórbico, clorofilas (a, b e total), carotenoides e compostos fenólicos. Os frutos em transição obtiveram teores significativos de clorofilas, carotenoides e compostos fenólicos, principalmente na casca. Isto evidencia o potencial bioativo do mandacaru, valorizando o fruto in natura e sua aplicabilidade na agroindústria.
<p class="Default"><strong>INTRODUÇÃO</strong>: A cirigueleira é uma espécie muito conhecida no nordeste brasileiro, pois produz frutos de sabor exótico, aroma característico e de boa aceitação pelos consumidores. Seus frutos têm destino diversificado podendo ser comercializados “in natura” e utilizados na fabricação de subprodutos. No intuito de aumentar o aproveitamento dos frutos é importante ter um conhecimento das características físico-químicas, uma vez que a ciriguela é uma fruta perecível e necessita de alguns cuidados pós-colheita. <strong>OBJETIVOS</strong>: Desta forma, objetivou-se avaliar as características físico-químicas de frutos da cirigueleira após a colheita. <strong>MATERIAIS E MÉTODOS</strong>: Foram utilizados frutos obtidos na cidade de Sousa, Paraíba. As ciriguelas foram colhidas e transportadas para o Laboratório de Química Bioquímica e Análise de Alimentos da Universidade Federal de Campina Grande, Campus Pombal. Os frutos foram higienizados em água corrente e conduzidos para a avaliação do pH, concentrações de íons H<sup>+</sup>, acidez titulável e ácido ascórbico. <strong>RESULTADOS E DISCUSSÃO: </strong>Os frutos da cirigueleira obtiveram um pH de 3,70 considerado normal se comparado a literatura, em contrapartida observou-se uma elevada concentração de íons H<sup>+</sup> que foi de 203 µM, a correlação entre essas variáveis foi -0,998 sendo negativamente alta, isso deve-se ao comportamento inversamente proporcional dessa característica. O teor de acidez titulável foi de 0,81%, influenciada pelo valor do pH e concentrações de H<sup>+</sup>, tendo em vista que em pH baixo a concentração de H<sup>+ </sup>e a acidez aumentam, esses parâmetros são importantes porque estão relacionados ao sabor do fruto. Houve uma correlação negativa entre o pH e a acidez. No entanto, ocorreu uma correlação positiva entre a acidez e a concentração de H<sup>+</sup>, mostrando que essas variáveis estão interligadas. O ácido ascórbico foi de 30 mg 100 g<sup>-1</sup>, sendo uma característica importante, visto que quanto maior a quantidade de vitamina C melhor a aceitabilidade do fruto, uma vez que, esse composto atua na prevenção de doenças. Houve forte correlação negativa entre o ácido ascórbico e a acidez. <strong>CONCLUSÃO</strong>: A ceriguela apresentou baixa acidez e elevada concentração de ácido ascórbico, comprovando que o fruto possui excelente característica relacionada ao sabor e ao valor nutricional.</p>
<p>O alho apresenta propriedades condimentares com aroma e sabor característico. Sua composição nutricional e compostos bioativos aumentam o interesse por essa hortaliça. A tecnologia do processamento mínimo aumenta a praticidade e variabilidade de formas como este alimento pode ser disponibilizado ao consumidor. Assim, objetivou-se avaliar a composição centesimal e os compostos bioativos no alho minimamente processado. Foram utilizados 3 tratamentos: alho com casca (CC), alho sem casca (SC) e o alho minimamente processado (MP), os bulbos foram debulhados manualmente, retirando as folhas externas, o processamento mínimo foi realizado manualmente retirando o prato basal pelo corte de 2 mm da base dos bulbilhos. Foi acondicionamento 70 g de alho em embalagens de polietileno de baixa densidade, a composição centesimal e os compostos bioativos do alho foi verificado em triplicata. Na produção de alicina mostrou interação significativa. Os valores de umidade e cinzas foram estáveis, no entanto, houve uma interação significativa nos teores de carboidratos, proteínas e lipídios. Nos componentes bioativos, os polifenóis, antocianinas e ácido ascórbico apresentaram interação significativa. No decorrer do armazenamento o alho sem casca indicou uma maior produção de alicina, entretanto, o alho minimamente processado apresentou qualidade na composição centesimal e nos compostos bioativos. Logo, o produto obtido serve como alternativa para aumentar a viabilidade dessa hortaliça durante o excedente de produção.</p>
The juazeiro (Ziziphus joazeiro Mart.) is a typical plant from Northeastern Brazil that has edible fruits, with sweet taste and rich in vitamin C. Some research is directed to the physical characterization of these fruits, however, little is known about the their respiratory nature. In this way, the objective was to evaluate the respiratory activity (CO2) and the physicochemical characteristics of juazeiro fruits in different stages of development. For this, fruits in five maturation stages (I, II, III, IV and V) were harvested from plants located at the Center for Science and Agri-Food Technology, at the Federal University of Campina Grande, Campus Pombal-PB, and evaluated according to titratable acidity, pH, soluble solids, ratio, ascorbic acid, total chlorophyll, total carotenoids and respiratory rate. The juazeiro fruits of stage IV maturation obtained low acidity, high levels of soluble solids and ascorbic acid. In the sensory and nutritional aspect, these characteristics are important for fresh consumption and processing. The respiratory rate increased with storage time for all stages of maturation. The fruits of stage IV maturation showed climacteric peak at 16 hours of storage, proposing that juazeiro fruits have a climacteric nature.
