Na última década, houve aumento da demanda por alimentos que melhoram ou beneficiam a saúde, a aveia se destaca por se enquadrar em duas categorias de alimentos funcionais: grão integral e fonte de fibras solúveis. Além disso, a procura de cereais em lojas de produtos a granel é cada vez mais comum entre a população. Entre as qualidades desejáveis que se deve relacionar com os alimentos está a isenção de microrganismos patogênicos. Objetivos: Avaliar a qualidade microbiológica da aveia comercializada a granel em casas de cereais de Recife-PE, Brasil, verificando a carga microbiológica através de coliformes totais, Escherichia coli e contagem de bactérias mesófilas aeróbias. Método: Foram analisadas 10 amostras de aveia, cuja compra ocorreu na forma de consumidora comum do produto, sem que o estabelecimento fosse alertado. O número mais provável de coliformes totais e E.coli foi determinado através da técnica dos Tubos Múltiplos e para a avaliação da qualidade sanitária do alimento foram quantificadas as bactérias mesófilas aeróbias, segundo o crescimento das colônias no ágar Plate Count Agar. Resultados: Observou-se a presença de contaminação por bactérias mesófilas aeróbias em sete (7) amostras. Na análise de E. coli, não houve amostras positivas. Todas as amostras analisadas estão próprias para o consumo quando comparadas com a RDC nº 331 e IN 60 de dezembro 2019. Conclusão: As amostras estão adequadas para o consumo. No entanto, mais estudos devem ser realizados a fim de verificar a qualidade microbiológica de outros produtos comercializados a granel nas demais regiões nacionais.
