ResumoO trabalho foi desenvolvido com o propósito de elaborar formulações de macarrões a partir da inclusão de farinha integral de centeio, observando o valor nutricional agregado, as propriedades tecnológicas e a aceitabilidade do consumidor. Foram elaboradas cinco formulações: padrão e substituição de 10, 25, 50 e 75% da farinha de trigo pela farinha integral de centeio. O incremento de centeio elevou os teores de minerais, proteínas, lipídios e fibras alimentares, principalmente de fibra alimentar solúvel. Os valores de Falling Number demonstraram elevada atividade enzimática, enquanto que, na avaliação dos atributos de cor, observou-se redução da luminosidade e aumento nos atributos que remetem ao vermelho e ao amarelo para maiores proporções de centeio. As propriedades alveográficas demonstraram aumento na tenacidade, redução na extensibilidade e menor força necessária para danificar as massas com maior proporção de centeio. As propriedades de mistura, avaliadas por farinografia, demonstraram aumento na absorção de água, maior resistência à mistura, menor estabilidade e menor tempo de saída em maiores proporções de centeio. O tempo de cozimento dos macarrões foi reduzido com a inclusão da farinha de centeio, refletindo em menor ganho de peso, mas com maior volume nos macarrões cozidos. A análise sensorial demonstrou que a formulação de macarrão com 25% de centeio não apresentou diferença estatística significativa em relação ao padrão para os atributos sensoriais avaliados. Já a formulação com 75% de centeio foi a menos aceita. Considerando-se apenas os atributos tecnológicos, a formulação com 10% de centeio apresentou-se mais próxima ao padrão, mas se consideradas a funcionalidade dos nutrientes agregados, a possibilidade de ajustes à tecnologia de produção e a aceitação dos consumidores, a formulação com 25% de centeio mostrou-se mais promissora.
