Resumo A utilização de ingredientes microencapsulados na indústria alimentícia apresenta crescente expansão. A microencapsulação é utilizada para proteger o material ativo de condições adversas e apresenta ainda mais vantagens quando utilizada juntamente com a liberação controlada. O uso da atomização para microencapsulação é uma das técnicas mais utilizadas devido ao seu baixo custo e facilidade de aplicação. Esta revisão descreve a produção de micropartículas contendo ingredientes alimentícios através da secagem por atomização e discute a liberação controlada do material ativo das micropartículas pelo mecanismo de difusão e modelos cinéticos.
Contamination of enteral diets represents a high risk of compromising the patient's medical condition. To assess the microbiological quality and aseptic conditions in the preparation and administration of handmade and industrialized enteral diets offered in a hospital in the Valley of Jequitinhonha, MG, Brazil, we performed a microbiological analysis of 50 samples of diets and 27 samples of surfaces, utensils, and water used in the preparation of the diets. In addition, we assessed the good handling practices of enteral diets according to the requirements specified by the Brazilian legislation. Both kinds of enteral diets showed contamination by coliforms and Pseudomonas spp. No sample was positive for Staphylococcus aureus and Salmonella spp. On the other hand, Listeria spp. was detected in only one sample of handmade diets. Contamination was significantly higher in the handmade preparations (p < 0.05). Nonconformities were detected with respect to good handling practices, which may compromise the diet safety. The results indicate that the sanitary quality of the enteral diets is unsatisfactory, especially handmade diets. Contamination by Pseudomonas spp. is significant because it is often involved in infection episodes. With regard to aseptic practices, it was observed the need of implementing new procedures for handling enteral diets.
The aim of this study was to assess the influence of the wall materials on the microencapsulation of pequi oil. An emulsion containing pequi oil in the oil phase was microencapsulated by spray drying process at 120 °C using gum Arabic, maltodextrin, or a 25:75 (w/w) mixture of gum Arabic and maltodextrin as wall material. The emulsions were characterized for droplet size, Polydispersity Index (PDI), and zeta potential. Pequi oil microparticles were analyzed for moisture content, water activity, wettability, encapsulation efficiency, antioxidant capacity, and color. Ultrastructural examination was performed by Scanning Electron Microscopy (SEM). The Droplet Size Distribution (DSD) of the emulsions exhibited a relatively wide size distribution (2.67 to 8.96 μm) and high PDI (> 0.3). Smooth microparticles with high encapsulation efficiency (79.17% to 84.20%), and good antioxidant capacity (28.20 to 28.71 μmol Trolox equivalents/g dry extract) were obtained. Microparticles prepared using gum Arabic as wall material had higher antioxidant capacity than that prepared with maltodextrin. All microparticles had satisfactory encapsulation efficiency, water activity, moisture content, and wettability. These results indicate that pequi oil microparticles have characteristics that can contribute to good stability during storage and handling of encapsulated oil. Therefore, pequi oil can be successfully encapsulated by spray drying using gum Arabic, maltodextrin, or 25:75 (w/w) mixture of gum Arabic and maltodextrin as wall materials, but the physicochemical properties of microparticles vary with wall material composition.
RESUMOObjetivou-se avaliar a influência dos tratamentos térmicos na composição nutricional e físico-químicas da farinha da semente de abóbora obtida pela secagem em micro-ondas e em estufa. As sementes de abóbora, da espécie Cucurbita maxima L, adquiridas da agricultura familiar da região de Diamantina -MG, foram extraídas para a produção da farinha. Uma parte das sementes foi submetida a secagem em estufa convencional e outra em micro-ondas. Determinou-se a composição centesimal e de minerais, solubilidade de nitrogênio, absorção de água e óleo, volume de espuma e estabilidade de emulsão, oxidação proteica e oxidação lipídica das farinhas produzidas. Os valores de carboidrato total, lipídios, resíduo mineral fixo e minerais não diferiram estatisticamente entre as amostras. O conteúdo médio de proteínas e fibra alimentar para a farinha de semente de abóbora obtida pelo tratamento térmico em micro-ondas e estufa, foi de 5,22±0,05 e 4,95±0,09 e 65,50±0,55 e 63,95±0,64, respectivamente. Com relação a solubilidade de nitrogênio de acordo com diferentes tipos de pH, houve diferença significativa entre os processamentos nos pHs 7, 8 e 9 e maiores valores de solubilidades na farinha de semente de abóbora seca em micro-ondas. Os tratamentos térmicos influenciaram significativamente na absorção de água, na oxidação proteica e lipídica, no volume de espuma nos tempos 30, 60, 90, 120 e 150 minutos e na estabilidade de emulsão em todos os tempos analisados.
O iogurte é um dos produtos lácteos fermentados mais populares e um excelente veículo para a entrega de ingredientes funcionais, como os prebióticos. Em iogurtes, os prebióticos podem atuar como substrato para o crescimento da microbiota intestinal melhorando as funções gastrointestinais e o sistema imunológico. Diante deste contexto, o presente trabalho teve como objetivo avaliar a influência da adição de três prebióticos como lactulose, dextrina resistente e fruto-oligossacarídeos até a concentração de 5 %, nas caraterísticas físico-químicas, texturométricas e sensoriais do iogurte tipo grego através de um Planejamento de Mistura Simplex-Lattice. As variáveis dependentes estudadas foram: extrato seco, acidez titulável total, pH, firmeza e aceitação. Através da metodologia de Superfície de Resposta, observou-se que as variáveis independentes apresentaram efeitos estatisticamente significativos (p<0,10) para extrato seco, textura e aceitação. As variáveis independentes não influenciaram na acidez e no pH. O extrato seco e a firmeza dos iogurtes foram menores quando da utilização de maior concentração de lactulose. Em contrapartida, os iogurtes com maior concentração de lactulose receberam as maiores notas para aceitação. A formulação otimizada foi obtida com 5 % de lactulose, 0 % de dextrina resistente e 0 % de fruto-oligossacarídeos com uma probabilidade de sucesso de 98,21 %. Considerando o ponto otimizado, uma porção de 120 g de iogurte grego irá conter a quantidade de lactulose recomendada pela Anvisa, a qual é de 3,0 g por porção.
