Foodborne illnesses are caused by the ingestion of contaminated food and water and the main agents are biological. To identify the most related factors that are associated with these diseases, this study aimed to highlight the most frequently reported microorganisms in outbreaks, as well as the main foods involved and the causes of their contamination, present in publications from 2017 to 2021. Therefore, the search on the Web of Science platform was performed using the terms "foodborne diseases", "foodborne outbreaks" and "foodborne illness". The research's scope was restricted by associating "outbreak" to the others. As a result, the publications presented a greater number of foodborne outbreaks caused by Salmonella spp., Escherichia coli , Staphylococcus spp., Bacillus cereus and Vibrio spp., among bacteria. The most reported viruses were rotaviruses and noroviruses and the parasite Cyclospora spp. Among foods, it was clear that cattle and poultry meats were the most frequently reported. Resumo. O leite instável não ácido apresenta instabilidade na presença do etanol a 72°GL e quantidades de ácido lático entre 0,14 e 0,18g/100mL de leite. Este leite é descartado pela indústria causando perdas econômicas. Visando avaliar a possibilidade de uso desta matéria prima, o objetivo deste trabalho foi avaliar as características do LINA e o rendimento do queijo fresco sem sal produzido a partir dele, comparando-o com o produzido com leite normal e ácido. Para isso foram coletadas 46 amostras de leite, sendo 43,47% LN, 32,61% LINA e 23,92% LA. Os leites foram avaliados quanto a sua qualidade e características físico-químicas e queijos foram produzidos por coagulação enzimática. Leites ácidos tiveram menores teores de lactose, grau de estabilidade, pH e maior temperatura de congelamento quando comparado ao leite normal. Já o LINA apresentou estabilidade ao etanol menor que o LN e igual ao LA. A semelhança do LINA com o LN foi encontrada também nos teores de lactose, pH e crioscopia. Em relação aos queijos frescos sem sal produzidos, observou-se que os teores de gordura e a sinérese total foram significativamente maiores quando produzidos com LA. Não houve diferença entre os queijos produzidos quanto a rendimento, extrato seco e acidez. Com base nos resultados obtidos, pode-se afirmar que, do ponto de vista composicional, o LINA pode ser utilizado para a produção e queijos frescos, já que o rendimento dos queijos produzidos com ele não apresenta diferenças estatísticas em relação aos produzidos com LN.Palavras chave: laticínios, leites anormais, rendimento de queijo Characterization of fresh cheese produced with milk of different degrees of ethanol stability
Temperaturas de resfriamento do leite facilitam a multiplicação de microrganismos psicrotróficos que produzem enzimas termorresistentes com potencial para degradar os componentes do leite. Visando avaliar o comportamento de microrganismos psicrotróficos em leite cru refrigerado, este estudo teve por objetivo verificar a multiplicação e atividade enzimática de leites contaminados intencionalmente com tais microrganismos em temperatura de refrigeração. Também teve a intenção de avaliar a atividade enzimática durante a pasteurização lenta (LTBT). Para isso, microrganismos psicrotróficos produtores de enzimas proteolíticas foram isolados de leite cru refrigerado. Esses microrganismos foram testados quanto ao seu tempo de geração em temperatura de 7°±1°C por oito dias em dois diferentes meios: Caldo cérebro coração (BHI) e leite desnatado reconstituído a 10% (LDR). Também foram avaliados quanto à produção de proteases e suas respectivas atividades enzimáticas durante a pasteurização lenta. Os resultados demonstraram que os isolados não atingiram a fase estacionária na curva de crescimento bacteriano durante os oito dias de incubação. Além disso, atividades das enzimas proteolíticas foram detectadas mesmo após o tratamento térmico, indicando resistência das mesmas às temperaturas da pasteurização lenta. Concluindo, para evitar perdas econômicas associadas à atividade enzimática, sugere-se que haja maior controle sanitário do ambiente de produção, assim como reduzidos períodos de armazenamento anteriores ao processamento térmico, visando reduzir a multiplicação de psicrotróficos proteolíticos.
Cooling of milk in dairy favors the multiplication of psychrotrophicbacteria that can produce thermoresistant proteolytic enzymes and degrade milk components. To verify the effects of these enzymes in dairy products, this study aimed to evaluate the physicalchemical characteristics of plain yogurt produced from milk contaminated with proteolytic psychrotrophic bacteria. For this, psychrotrophicbacteria producing proteolytic enzymes were isolated from raw milk, having been identified like Pseudomonassp., Alcaligenes sp. and Butiauxella sp. These microorganisms were inoculated in pasteurized milk and stored for 48 and 72 hours at a temperature of 7°±1°C. After the storage, the milk was heated to 90°± 5°C for 10 min and immediately cooled to 43°C. The ingredients were added and plain yogurts were produced, and then evaluated for their protein, fat and acidity contents. The plain yogurts produced, in terms of fat and protein contents, were significantly higher in yogurts produced with control milk (not inoculated). In addition, the acidity of yogurt produced with milk stored for 72 hours at 7°±1°C was significantly higher on day zero, regardless of the microorganisms intentionally added. Thus, it can be concluded that the physical-chemical characteristics of plain yoghurts produced with contaminated milks were different from those obtained from yogurts produced with non-contaminated milks, being important to reflection of the cold storage periods due to the favoring of multiplication of proteolytic psychrotrophic microorganism.
