RESUMOA intoxicação alimentar por estafilococos é uma das doenças transmitidas por alimentos (DTA) mais comuns e resulta da ingestão de enterotoxinas estafilocócicas (EE) pré-formadas em alimentos. Este trabalho teve como objetivo elaborar uma revisão sobre a ocorrência de Staphylococcus em alimentos, surtos de intoxicação estafilocócica, enterotoxinas comumente envolvidas em surtos e métodos de identificação de enterotoxinas estafilocócicas.No Brasil os dados do Sistema Nacional de Agravos e Notificações da Secretaria de Vigilância em Saúde SINAN\SVS, Ministério da Saúde, atribuem ao S. aureus a ocorrência de 7,7% dos surtos de origem alimentar no período compreendido entre 2000 a 2015. Para melhorar a caracterização de EE várias técnicas têm sido integradas na estratégia de diagnóstico, sendo os métodos mais utilizados para detectar as toxinas bacterianas nos alimentos: bioensaios, biologia molecular e imunológico. Os métodos convencionais de detecção de EE são de trabalho intensivo e incapaz de satisfazer as necessidades de detecção em tempo real. A biologia molecular baseada em PCR é um método viável, mais rápido e com resultados conclusivos. Os métodos cromatográficos são eficientes e sensíveis, porém, os requisitos da amostra, instrumentos caros e treinamento de pessoal limitam a sua aplicação. Palavras-chave: Staphylococcus aureus. ABSTRACTStaphylococcal food poisoning is one of the most common foodborne diseases (DTA) and results from ingestion of pre-formed staphylococcal enterotoxins (SE) in food. This work aimed to review the occurrence of Staphylococcus in food, outbreaks of staphylococcal intoxication, enterotoxins commonly involved in outbreaks and methods of identification of staphylococcal enterotoxins. In Brazil, data from the National Health and Aging System SINAN/ SVS, Ministry of Health, attribute to S. aureus the occurrence of 7.7% of food-borne outbreaks in the period from 2000 to 2015.In order to improve the characterization of EE, several techniques have been integrated into the diagnostic strategy, the most used methods being to detect bacterial toxins in food: bioassays, molecular biology and immunology. Conventional EE detection methods are labor-intensive and unable to meet real-time detection needs. PCR-based molecular biology is a viable, faster and conclusive method. Chromatographic methods are efficient and sensitive, however, sample requirements, expensive instruments and personnel training limit their application.
Os Coronavírus pertencem a um grupo taxonômico de vírus que causam infecções respiratórias e podem acometer humanos e outros animais. No final de 2019, uma nova espécie de coronavírus foi identificada como a causa de um conjunto de casos de pneumonia em Wuhan, uma cidade na província de Hubei, na China. O vírus se espalhou rapidamente, resultando em uma epidemia em todo o país, seguido por um número crescente de casos em outros países do mundo. Em fevereiro de 2020, a Organização Mundial da Saúde designou a doença COVID-19, que significa doença de coronavírus 2019. O vírus que causa o COVID-19 é designado por coronavírus 2 ou vírus da síndrome respiratória aguda grave 2 (SARS-CoV-2). Pacientes infectados por esse vírus podem desenvolver desconforto respiratório agudo e alta probabilidade de internação em terapia intensiva, podendo evoluir para o óbito. Baseado no exposto o objetivo desse estudo foi promover a descrição da biologia do vírus (SARS-CoV-2), as formas de propagação e transmissão, além do processo de patogênese através de uma revisão literária sistemática.
Botulismo é uma doença rara, grave, de progressão rápida e potencialmente letal causada pela toxina botulínica, uma das mais potentes neurotoxinas produzida por algumas espécies de bactérias clostridiais, mais frequentemente pela Clostridium botulinum, um bacilo Gram-positivo com formato de bastonete, exclusivamente anaeróbico, que pode formar esporos, ubíquo e facilmente isolado de solo, poeiras, legumes e frutos. O termo botulismo inclui o botulismo alimentar, o botulismo por ferimentos, o botulismo infantil e a toxemia intestinal. A principal manifestação clínica do botulismo é a paralisia simétrica descendente flácida aguda num doente em estado de alerta sem febre nem alterações sensoriais, que pode progredir para comprometimento respiratório. O seu tratamento baseia-se essencialmente num diagnóstico precoce, cuidados intensivos e administração atempada de antitoxina botulínica. Este estudo pretende fazer uma revisão do conhecimento actual sobre o botulismo destacando a sua relevância clínica, etiologia, epidemiologia, transmissão, diagnóstico, tratamento e prevenção. Pode ser concluído que o botulismo é um problema de saúde pública que requer cuidados especiais ao nível da prevenção da sua etiologia, especialmente no que se refere à preparação de alimentos.
As intoxicações alimentares são consideradas um dos maiores problemas de saúde pública do mundo. Principalmente pelo consumo de alimentos contaminados com microrganismos patogênicos e suas toxinas. O Bacillus cereus é uma bactéria atuante na deterioração dos alimentos e está associada à produção de enterotoxina. O presente estudo teve como objetivo demonstrar a importância do Bacillus cereus através do entendimento da sua epidemiologia, sintomatologia e dos fatores de virulência das toxinas emética e diarréica, bem como formas para evitar a intoxicação e os tratamentos para prevenção. Foram estudados vários casos de intoxicação em que a presença do Bacillus cereus foi detectada em alimentos, equipamentos e utensílios, mostrando que são fontes potenciais de transmissão do microrganismo. Foi evidenciado a necessidade de aprimoramento das notificações de surtos alimentares visando contribuir na diminuição da chance de novas ocorrências de toxinfecções. A inocuidade dos alimentos é de extrema importância para a saúde da população tornando-se necessária a implantação e intensificação de medidas de controle na produção, armazenamento e higienização correta dos equipamentos.
