RESUMOA intoxicação alimentar por estafilococos é uma das doenças transmitidas por alimentos (DTA) mais comuns e resulta da ingestão de enterotoxinas estafilocócicas (EE) pré-formadas em alimentos. Este trabalho teve como objetivo elaborar uma revisão sobre a ocorrência de Staphylococcus em alimentos, surtos de intoxicação estafilocócica, enterotoxinas comumente envolvidas em surtos e métodos de identificação de enterotoxinas estafilocócicas.No Brasil os dados do Sistema Nacional de Agravos e Notificações da Secretaria de Vigilância em Saúde SINAN\SVS, Ministério da Saúde, atribuem ao S. aureus a ocorrência de 7,7% dos surtos de origem alimentar no período compreendido entre 2000 a 2015. Para melhorar a caracterização de EE várias técnicas têm sido integradas na estratégia de diagnóstico, sendo os métodos mais utilizados para detectar as toxinas bacterianas nos alimentos: bioensaios, biologia molecular e imunológico. Os métodos convencionais de detecção de EE são de trabalho intensivo e incapaz de satisfazer as necessidades de detecção em tempo real. A biologia molecular baseada em PCR é um método viável, mais rápido e com resultados conclusivos. Os métodos cromatográficos são eficientes e sensíveis, porém, os requisitos da amostra, instrumentos caros e treinamento de pessoal limitam a sua aplicação. Palavras-chave: Staphylococcus aureus. ABSTRACTStaphylococcal food poisoning is one of the most common foodborne diseases (DTA) and results from ingestion of pre-formed staphylococcal enterotoxins (SE) in food. This work aimed to review the occurrence of Staphylococcus in food, outbreaks of staphylococcal intoxication, enterotoxins commonly involved in outbreaks and methods of identification of staphylococcal enterotoxins. In Brazil, data from the National Health and Aging System SINAN/ SVS, Ministry of Health, attribute to S. aureus the occurrence of 7.7% of food-borne outbreaks in the period from 2000 to 2015.In order to improve the characterization of EE, several techniques have been integrated into the diagnostic strategy, the most used methods being to detect bacterial toxins in food: bioassays, molecular biology and immunology. Conventional EE detection methods are labor-intensive and unable to meet real-time detection needs. PCR-based molecular biology is a viable, faster and conclusive method. Chromatographic methods are efficient and sensitive, however, sample requirements, expensive instruments and personnel training limit their application.

Jackfruit drying curves were obtained using a convective vertical tray drier at dry bulb temperatures of 50, 60 and 70°C requiring of 9.92, 6.1 and 4.75 h, respectively, to reach a dry basis moisture content of 21.3 %. The Fick diffusion and the PAGE models were fitted to the experimental data of drying velocity using non-linear regression analysis. The coefficient of determination obtained for the Fick model was high (R 2 = 0.99). Water activity was determined throughout the drying process for the three drying temperatures and used to generate moisture isotherms at the three drying temperatures. ResumenSe obtuvieron curvas de secado de jaca usando un secador de bandejas con convección vertical a temperaturas de bulbo seco de 50, 60 y 70 °C requiriendo 9.92, 6.1 y 4.75 h, respectivamente, para alcanzar un contenido de humedad de 21.3 % en base seca. Los modelos de difusión de Fick y de PAGE fueron ajustados a los datos experimentales de velocidad de secado usando análisis de regresión no lineal. El coeficiente de determinación obtenido para el modelo de Fick fue elevado (R 2 = 0.99). La actividad de agua fue determinada durante todo el proceso de secado para las 3 temperaturas y se utilizó para generar las isotermas de sorción a las 3 temperaturas de secado.
A busca por alimentos saudáveis, com melhor qualidade e mais convenientes tem demonstrado tendência de expansão em supermercados e em grandes centros urbanos. Um dos fatores que merece destaque é a falta de conhecimento e planejamento dos produtores rurais quanto à comercialização de seus produtos de maneira mais rentável, fato que ocasiona uma série de consequências em cadeia, como falta de estrutura na colheita e pós-colheita, que gera impactos nas áreas de armazenamento, transporte, embalagem, manipulação e processamento dos produtos hortícolas, desencadeando, assim, dificuldades na comercialização, como reduzida vida de prateleira, baixa qualidade, escassez de oferta e preços elevados. Diante disso, o presente trabalho teve como objetivo em avaliar as formas de acondicionamento dos principais produtos comercializados no CEASA (banana e citros) armazenados no CEASA de Palmas, coletando informações importantes que possibilitem conhecer a dimensão do mercado consumidor desses produtos, como os principais problemas enfrentados nas condições de armazenagem, fatores esses que podem reduzir o desperdício e agregar valor às frutas e hortaliças.
