El punto de partida para este trabajo sobre la naturaleza de la demanda del producto de gastronomía turística es la motivación que los turistas tienen para los destinos y experimentar su gastronomía. Con base a este argumento se realiza la investigación en la Ciudad de Baños de Agua Santa, cantón de la Provincia de Tungurahua considerado como uno de los destinos turísticos más visitados en el Ecuador. La investigación se realiza considerando una muestra de turistas a los que se les aplica una encuesta para determinar las motivaciones de su viaje. De igual manera se procede con los restaurantes legalmente registrados a los que se les aplica un instrumento similar con el propósito de conocer la oferta gastronómica. Los resultados obtenidos indican los aspectos relevantes de la situación de la gastronomía en la ciudad de Baños de Agua Santa estableciéndose que es un elemento importante en el entorno y desarrollo de las actividades turísticas como soporte de la operación, presenta una diversidad de comidas nacionales e internacionales buscando satisfacer los requerimientos de los visitantes. Al comparar los resultados obtenidos y realizar un análisis de contraste entre el tipo de turistas y el tipo de gastronomía se establece que, sin embargo de ser la gastronomía un elemento importante que da sostenimiento a la actividad turística de la ciudad, no es un factor determinante como para que los turistas elijan el destino por esta razón. Sin embargo se concluye que la gastronomía manejada de forma adecuada, manteniendo los niveles de calidad de la oferta de platos y la calidad de servicio se constituye en un elemento promocional importante que por sus características de experiencia sensorial es capaz de potenciar el destino.
El propósito de este artículo es registrar los saberes ancestrales al saber escondido entre los olores, sabores, texturas y tradiciones de las parroquias de Cacha y Flores, la cual pervive como una evidencia viva de la historia e identidad de los pueblos kichwa de la sierra centro en Ecuador. Para efectos de esta investigación, se adoptó el concepto establecido por la Convención para la Salvaguardia del Patrimonio Cultural Inmaterial UNESCO. El análisis de la información fue cualitativo, compilando historias, entrevistas y el ordenamiento territorial del Cantón Riobamba junto a las parroquias Rural Cacha y Rural Flores, con la finalidad de cumplir con el proceso de salvaguardar el patrimonio cultural e inmaterial de estos pueblos. Para finalizar, es importante destacar que la parroquia de Cacha se autodefine como Primera Parroquia Indígena en Ecuador, por lo que muchas de las prácticas y tradiciones que se mencionan sobre esta parroquia, no están presentes en Flores, que tiene otros sentidos de identidad y muchos de sus elementos culturales así como su autodefinición, están relacionados con el mestizaje.
Hypertension presents major risk factors for cardiovascular and renal disease. High salt and high fructose (HSHF) consumption contribute to hypertension via salt retention and obesity. Sex differences in blood pressure regulation are well known. Some studies have shown protection for females from angiotensin II (AngII)‐induced and dietary‐induced increase in blood pressure. Our results indicate that HSHF consumption increases blood pressure in male and female mice. Also, AngII administration increased blood pressure in male and female mice while consuming normal diet with water, but no sex differences were noted (Rouch, A. FASEB J. 32(1) A904.6, 2018). The objective of this study was to determine the effects of AngII on blood pressure, sodium excretion, and urine flow rate in male and female CD‐1 mice while consuming a HSHF diet. Four groups of mice included male‐vehicle, male‐AngII, female‐vehicle, and female‐AngII (n=6/group). Mice at four weeks of age were placed in metabolic cages for a 5‐day baseline period followed by a ten‐day AngII period where AngII was administered via an Alzet® osmotic minipump containing either saline (vehicle) or AngII to yield 1mg/kg/min. All mice consumed a diet of 4% salt with fluid containing 1% NaCl and 20% fructose ad libitum. Systolic blood pressure was measured daily via the tail‐cuff method (CODA, Kent Scientific). Excessive fluid retention evidenced by a significant increase in body weight of 4–5 g occurred in the AngII‐treated mice of both sexes in the first 5 days of the AngII period. One mouse of each AngII‐treated group died before the end of the AngII period while the other mice recovered to their normal body weight by the end of the ten‐day period. AngII increased systolic blood pressure (mmHg) in females from 108.0 ± 3.4 to 130.0 ± 6.1 (p<0.0001) and in males from 101.1 ± 1.3 to 127.5 ± 3.2 (p<0.0001). In both AngII‐treated groups, daily urine flow rate and sodium excretion demonstrated biphasic patterns of significant decreases in the first 5 days of the AngII period followed by increased levels to achieve fluid and sodium balance. We conclude that AngII‐infusion during HSHF consumption in mice presents with potentially fatal salt and water retention. El acné vulgar es una enfermedad inflamatoria multifactorial que compromete la unidad pilosebácea y afecta el 80 % de la población adolescente. Se han propuesto diversos mecanismos en su patogénesis, entre los cuales se menciona, especialmente, el inmunológico posiblemente asociado al sobrecrecimiento bacteriano. En este artículo se revisan los avances más recientes de la fisiopatología e inmunología, la relación con Propionibacterium acnes y las posibles implicaciones terapéuticas.
Se realizó un análisis químico, microbiológico y sensorial de los helados de mora (Rubus glaucus Benth) a base de leche de chocho (Lupinus mutabilis Sweet). Se aplicó un diseño experimental DBCA con tres tratamientos y tres repeticiones para la leche de chocho y los helados de mora. La información fue analizada en el programa SPSS, mediante ANOVA y la prueba de Duncan para los contenidos de proteína, grasa, sólidos totales y cenizas. Se realizó un test con un grupo de estudio de 36 degustadores, donde se utilizó una escala hedónica verbal. La leche de chocho del tratamiento T 3 (LHC3) fue considerado como el mejor tratamiento para la elaboración del helado con proteína 4.17%, grasa 2.18%, sólidos totales 6.77%, cenizas 0.20%. Para el helado de mora, el tratamiento más aceptado fue T 1 (HLM1) con proteína 6.21 %, grasa 2.20 %, sólidos totales17.84 %, cenizas 0.58 % siendo aptos para el consumo.
