The prevalence and aetiology of natural paramphistomosis was investigated in cattle slaughtered in the Castilla y León region (Spain) over a 3 year-period. The overall prevalence of positive animals was 6.20%. The parasite burden per animal ranged from 8 to 8005 (median=144) and the ruminal atrium had the highest parasite burden whereas the ruminal dorsal sac the lowest. The prevalence and parasite burden increased with age while these parameters were lower in cattle under intensive management. Calicophoron daubneyi was the only Paramphistomidae species identified using morphoanatomical, histological and molecular methods in the studied animals.
Thirty-two lambs were used to study the effect of sunflower soap stocks (SS), a by-product from the vegetable oil refinery industry, on meat chemical composition, fatty acid profile, volatile compounds, and consumer acceptability. Lambs were finished (average length of fattening period 35 ± 7.3 d, 26.8 ± 0.09 kg final BW) on a pelleted total mixed ration (TMR) with no SS (00SS) or including 15, 30 or 60 g SS/kg (15SS, 30SS, and 60SS, respectively). Sunflower soap stocks decreased the percentage of SFA, increased the proportion of -MUFA ( < 0.05), and modified the levels of several odor-active lipid-derived volatile compounds ( 0.05). Consumers were able to distinguish between control and 15SS meat samples in a triangular test ( < 0.05), but a well-defined preference for meat of any of these treatments was not exhibited ( > 0.05). Atherogenicity and saturation indexes decreased by 31% and 27%, respectively, in SS groups compared to control (linear 0.05). However, certain volatile compounds (benzene and toluene) and 10-18:1 fatty acid, known potential hazards for human health, were increased in meat from lambs fed TMR with SS. For this reason, only inclusion rates up to 15 g SS/kg TMR seem to sustain a satisfactory balance between beneficial and detrimental effects on lamb meat composition and quality.

La especie de grillo Acheta domesticus presenta una anatomía y una fisiología favorables para su producción en intensivo. Además, su harina tiene alto valor nutritivo, especialmente reconocido por su elevado contenido en proteína y minerales. Hay una creciente cantidad de estudios sobre la producción de este grillo y la composición de su harina, que demuestran el interés científico que suscita. Esta harina es una gran fuente de proteínas explotable en alimentación humana y animal, pero su contenido lipídico es también de gran importancia. La cantidad de grasa de la harina de grillo está entorno al 10-16% (sobre materia seca) y su perfil lipídico presenta aspectos muy favorables desde el punto de vista de la nutrición humana, dado que la mayoría de los ácidos grasos son insaturados, siendo mayoritarios los poliinsaturados. Ésta es una diferencia notable con la carne de las especies animales de abasto, las cuales representan una fuente de proteína habitual en alimentación humana, pero cuyos perfiles lipídicos contienen unos niveles muy inferiores de ácidos grasos poliinsaturados. Es remarcable también la posible modificación de la cantidad de grasa y el perfil de ácidos grasos de la harina de grillo mediante cambios en su dieta. Aún quedan muchos ámbitos que estudiar en profundidad para optimizar la producción de estos insectos, cuyo potencial para su empleo en la industria alimentaria es progresivo.
