This study aimed to produce microcapsules using ‘jabuticaba’ byproduct through lyophilization, and evaluate the stability of the powder, intended for use in gelatin. Three formulations were prepared, including the pure lyophilized extract (E), capsule with maltodextrin (CapM), and capsule with maltodextrin and xanthan gum (CapMG). The storage stability was evaluated at 4 and 25 ºC, and in the presence and absence of light, regarding color parameters, phenolic compounds and monomeric anthocyanins. The microencapsulated powders were applied in gelatin and analyzed for sensorial acceptance. Following an investigation of the storage stability of the three powders at 4 °C for 60 days, the sample that presented the best result was then analyzed at 25 ºC in the presence/absence of light. Microcapsules, independent of the encapsulant agent, exhibited lower values of degradation (2.82% phenolic compounds and 14.5% monomeric anthocyanins) than extract E when exposed to light and at 25 °C. Regarding color stability, CapMG showed smaller variations in the total color difference (ΔE) than the other samples. The lowest ΔE value corresponded to the gelatin sample with CapM, stored in the absence of light. It is possible to conclude that microencapsulation is an alternative for the preservation of ‘jabuticaba’ byproduct extracts, facilitating their use, retaining some compounds and protecting them against adverse conditions.
Os frutos da Opuntia spp. destacam-se não apenas pela presença de compostos fenólicos, mas especialmente pelo teor de fibras, dentre elas a mucilagem. Este trabalho teve como objetivo elaborar um sorvete com a aplicação da mucilagem da fruta da Opuntia ficus indica em sua formulação. Duas formulações foram preparadas: (1) padrão e (2) sorvete com mucilagem. O sorvete de mucilagem apresentou coloração ligeiramente mais escura (L*=83,45, a*=0,00, b*=12,31), enquanto o sorvete padrão era mais claro (L*=89,83, a*=-2,52, b*=9,32). O sorvete de mucilagem apresentou derretimento em maior quantidade em um intervalo menor de tempo em comparação com o padrão. Ambos sorvetes apresentaram pH próximo de 7. O sorvete com mucilagem apresentou menor porcentagem de umidade e menor conteúdo de cinzas, enquanto ambos continham 3% de proteínas. Portanto, foi possível produzir um sorvete com a aplicação da mucilagem da fruta da Opuntia ficus indica como substituto de gordura.
The Cerrado is a biome and is increasingly being explored due to its wide diversity of fruits that have characteristics of exotic flavors and great technological potential. Thus, this study aims to conduct bibliographical research on the fruits of the cerrado and highlight their benefits to health and its technological application to be explored. Both fruits highlighted in this study showed numerous health benefits as an antioxidant, antimicrobial, anticarcinogenic, antidegenerative, and aging retardant. In addition to the applications by the food industry, using such as juices, jellies, ice cream, and substitutes for conventional oils, where their phytochemical profiles guarantee a high added value product, characteristic of the fruits of this biome.
Instituto Federal do Paraná -Campus ParanavaíObjetivou-se caracterizar físico-quimicamente grãos de Kefir e padronizar os parâmetros de processo da bebida, a fim de obter um produto ótimo. Os grãos eram constituídos basicamente de água (85,61 ± 0,41%) e tinham pH ácido (4,45) e baixa acidez (0,44 ± 0,09% de ácido lático). Para determinar os parâmetros de processo foi utilizado um planejamento fatorial 2 3 com 3 repetições no ponto central, sendo avaliados a quantidade de grãos (2-6%), quantidade de açúcar (10-14%) e tempo de fermentação (18-24 horas) a 25°C.A quantidade de açúcar ou grãos não teve influência sobre o pH e a acidez titulável. Um maior tempo de fermentação (24 horas) resultou em produtos com pH e acidez dentro do recomendado, enquanto menor quantidade de grãos (2%) não resultava em bebidas demasiadamente firmes. A formulação com melhores características físico-químicas e sensoriais tinha 2% de grãos, 10% de açúcar e 24 horas de fermentação, sendo descrita como cremosa, ligeiramente ácida, e com doçura intermediária.
