Poor intrauterine environment by limited and excess protein supply retards fetal growth, but only limited protein supply impairs myogenesis, persistently restricts muscle growth potential, and favors obesity at infancy.

This article reports on the effect of laminar shear on structural and mechanical properties of physical mixtures of fully hydrogenated soybean oil (FHSO) in soybean oil (SO). Blends were crystallized statically and under laminar shear rates of 30 and 240 s(-1) at different wall temperatures (-10, 0, 20 degrees C). The micro- and nanocrystalline structures were characterized using Polarized Light Microscopy (PLM), and Cryogenic Transmission Electron Microscopy (Cryo-TEM). Rheological analysis was used to determine changes in mechanical properties. Oil-binding capacity was analyzed through the measurement of the oil lost from the fat samples (OL). Shearing greatly affected the structure at the nano- and mesoscale. At low shear rates, blends displayed the largest increase in crystal size with an increase in wall temperature at both the nano- and mesoscale. On the other hand, at shear rates of 240 s(-1), the effect of crystallization temperature was observed only at the nanoscale since no changes in meso-crystal sizes were observed at different temperatures. Crystallization under laminar shear promoted the growth of spherical crystalline particles at the mesoscale, called here "solid-lipid meso-particles". Crystallization under higher shear rates led to the formation of a weak network with low oil-binding capacity and promoted the asymmetric growth of nanoplatelets. In statically crystallized blends, nanoplatelets had an aspect ratio of -2, while in sheared blends this value increased significantly. These results revealed the existence of critical shear rate values above which strong alterations in the structure of the solid crystalline network took place. Shearing also affected the material's strength. Laminar shear induced a decrease in elastic modulus and yield stress values which was more pronounced at higher shear rate-temperature combinations. Shear-temperature combinations were successfully used to structure fats at the nano and mesoscale.

RESUMOO setor pesqueiro, em especial a pesca extrativa marinha, é uma atividade de grande importância econômica em diversas localidades do Brasil. A industrialização de peixe gera uma quantidade expressiva de resíduos ricos em proteínas e em ácidos graxos de cadeia longa, entre os quais se destacam os insaturados da série ômega-3. Este trabalho teve como objetivo fazer uma revisão sobre as alternativas tecnológicas disponíveis para aproveitamento de resíduos de peixe, como maneira de se agregar valor a este material, sob o enfoque da tecnologia limpa. Este material pode ser processado para a obtenção de óleo, farinha ou silagem que, por sua vez, podem ser aplicados na alimentação animal. O óleo obtido pode ainda ser estabilizado mediante reações de interesterificação, sendo que os triacilgliceróis estruturados assim obtidos podem ser aplicados em rações, com vantagens nutricionais sobre os óleos originais. Os resíduos de peixe podem ser aplicados como substrato para a produção de proteína texturizada, concentrado protéico, carne mecanicamente separada, surimi, produtos reestruturados ou até mesmo óleo, utilizados na alimentação humana. A conversão do óleo obtido a biodiesel é outra proposta de interesse particular no campo de combustíveis alternativos. Industrial fish processing operations generate a significant amount of wastes, which are rich in proteins and longchain fatty acids, among which the unsaturated omega-3 fatty acids are prominent. The aim of this study is to make a review about the technological alternatives available for the utilization of fish wastes, such as a way for adding value to this material, focusing on green technologies. This material can be processed to obtain oil, meal or silage, that may be applied in livestock feeding. The obtained oil can further be stabilized by means of interesterification reactions, considering that the structured triglycerides thus obtained can be used in animal feeding, with nutritional advantages over original oils. The fish wastes can be applied as a substrate for the production of texturized proteins, protein concentrate, mechanically deboned meat, surimi, reestructured products or even oil, used for human feeding. The conversion of the extracted oil into biodiesel is another proposal of particular interest in the field of alternative fuels.

The aim of this study was to investigate whether dietary protein intake of gilts during gestation below (50%) or above (250%) recommendations affects body composition, carcass and meat quality, and properties of skeletal muscle and subcutaneous adipose tissue (SCAT) in offspring at d 83 and 188 of age. German Landrace gilts were fed isoenergetic gestation diets (~13.7 MJ of ME/kg) containing a low (LP, 6.5%; n = 18), an adequate (AP, 12.1%; n = 20), or a high (HP, 30%; n = 16) protein content from mating until farrowing. Within 48 h of birth, offspring were cross-fostered to sows fed a standard diet. On d 83 of age, no effects of the LP diet on BW and body composition were detected, whereas HP pigs showed a slight growth delay (P = 0.06) associated with increased relative weights of small intestine (P < 0.01) and brain (P = 0.08), and reduced relative thymus weight (P < 0.01). On d 188 of age, BW was not different among the dietary groups. However, the carcass of LP pigs contained less (P = 0.01) lean and more (P = 0.07) fat compared with AP and HP pigs, which was only pronounced in pigs originating from large litters (P < 0.05). Like skeletal muscles (P = 0.06), the heart muscle weighed less (P = 0.02) in LP than AP pigs. Compared with AP pigs, LP pigs exhibited a fewer (P = 0.09) total number of myofibers in semitendinosus muscle plus LM both at d 83 and 188 of age, whereas total muscular DNA was less (P = 0.02) at d 188 only. The mRNA abundance of IGF2 measured on d 188 was reduced in SCAT (P = 0.03) and LM (P = 0.07) of LP compared with AP pigs. No changes in muscular fiber type frequency, capillary density, or creatine kinase activity, as well as SCAT adipocyte size and number, were observed at either stages of age. Meat quality characteristics remained unchanged at d 83, whereas Warner-Bratzler shear force value in LM was decreased (P = 0.03) in LP compared with AP pigs on d 188 of age. The results suggest that the maternal LP diet impairs prenatal myofiber formation, reduces the potential of postnatal lean growth related to reduced IGF2 mRNA expression and myonuclear accumulation, and consequently changes carcass quality toward reduced lean proportion and improved tenderness at market weight. In contrast, except for a slight transient growth delay, excess dietary protein during gestation seems to have little effect on the fetal programming of postnatal muscle and adipose tissue phenotype of the progeny.
