The expediency of optimization of starter cultures composition of mixed cultures Lactococcus sp. and mixed cultures Bifidobacterium bifidum BB 01 + Bifidobacterium longum BL 01 + Bifidobacterium breve BR 01 for the manufacture of fermented milk products and cosmetics for teenagers and people under the age of 40-45 years with probiotics has been substantiated.The value of titratable acidity, number of viable cells of bifidobacteria has been determined, as well as the most probable number of lactobacterium in fermented probiotic clots obtained with different ratios of mixed cultures Lactococcus sp. and mixed cultures of Bifidobacterium sp. in starter cultures compositions (the initial concentration of the mixed cultures (MC) Lactococcus sp. and MC Bifidobacterium sp. varied within the range of 1×105 – 1×106 CFU/cm3 of the inoculated milk, enriched with fructose as a growth factor of bifidobacteria). The high content of probiotics and the lowest values of titratable acidity are typical of the fermented milk clots obtained using starter cultures composition with a ratio of MC Lactococcus sp. : MC Bifidobacterium sp. 1 : 10. The maximum number of lactococci viable cells is observed in clots obtained using starter cultures composition with the initial ratio of MC Lactococcus sp. : MC Bifidobacterium sp. 10 : 1. The optimum ratio of MC Lactococcus sp. and MC Bifidobacterium sp. – 1 : 10 has been established (initial concentration of the cultures at inoculation – 1×105 and 1×106 CFU/cm3, respectively) for the production of fermented milk products and cosmetics with probiotics, where the maximum value of the quality aggregated factor – 7, 12 is noted.It is shown that a fermented probiotic milk clots obtained using starter cultures composition with an optimum ratio of cultures of lacto- and bifidobacteria (1 : 10) have good sensory characteristics, contain a high number of viable cells of bifidobacteria and lactobacteria – (9,15±0,14)×109 and (8,50±0,50)×108 CFU/cm3, respectively, and a low level of titratable acidity at a specified value of the active acidity and are safe in terms of microbiological characteristics
В роботі наведені результати дослідження зразків молочних сумішей з вівсяним борошном з метою підбору раціональних параметрів виробництва та коректування технологічних режимів. Для вирішення проблеми оптимального збалансованого харчування необхідні розробка та впровадження у виробництво продуктів заданого складу (високобілкові, високовуглеводні, вуглеводно-мінеральні та ін.), які повинні сприяти підвищенню працездатності, відновленню організму, забезпеченню необхідними нутрієнтами. Сучасні технології виробництва харчових продуктів включають використання різних добавок для поліпшення технологічних параметрів продуктів, а також сенсорних і текстурних характеристик. Охарактеризовано властивості вівсяного борошна як унікального інгредієнта в плані набору вітамінів, мікроелементів, амінокислот, солей, ферментів, ефірних масел, жирів, вуглеводів. Наведено доцільність використання інгредієнтів рослинного походження як стабілізаторів структури продуктів харчування. Постановка експерименту базується на класичній технологічній схемі виробництва йогурту з незначними змінами. Описані основні технологічні операції виробництва з зазначенням параметрів процесів. На підставі досліджень обґрунтовано та розроблено рецептури йогурту з різною масовою часткою вівсяного борошна, проведено порівняння зі зразком, аналогом. Фізико-хімічні, мікробіологічні дослідження проводили за допомогою загальноприйнятих методик, органолептичні – дегустаційним методом, комісією в складі 6 осіб. Проведена порівняльна характеристика фізико-хімічних властивостей та якості отриманих згустків. Експериментально встановлена оптимальна масова частка вівсяного борошна в йогурті. Вивчено вплив технологічних факторів на якість продукту, встановлена залежність часу сквашування від масової частки внесеної вівсяної муки. Вдосконалена технологія вироблення йогурту з вівсяним борошном шляхом розробки нової рецептури і зменшення терміну сквашування за рахунок внесення вівсяної муки як стабілізаційної системи.
В роботі наведено результати визначення ефективності параметрів теплового оброблення молочних сумішей у технологіях сиркових десертів для людей, схильних до артеріальної гіпертензії (АГ). Вибір режиму пастеризації зумовлюється не тільки необхідністю знищення мікрофлори, а й особливостями технологічного процесу виробництва цільових молочних продуктів. Обґрунтування режимів теплового оброблення молочної сировини є одним із важливих етапів при розробці та удосконаленні технологій кисломолочних продуктів взагалі, і сиркових десертів, зокрема. Дослідження проводили за допомогою чашкового методу, посівом підготовлених зразків в розплавлене поживне середовище з подальшим культивуванням. Перевірку ефективності режимів теплового оброблення знежиреного молока, збагаченого фруктозою та/або рисовим борошном для дитячого харчування, здійснювали розрахунковим методом за співвідношенням КМАФАнМ до та після пастеризації. В результаті експериментальних досліджень встановлено раціональні режими теплового оброблення молочних сумішей при виробництві сиркових десертів для людей, схильних до АГ;показановідсутність впливу фруктози та рисового борошна для дитячого харчуванняна ефективність пастеризації;обґрунтовано можливість та доведено доцільність використання традиційних технологічних режимів теплового оброблення при виробництві сиркових десертів для людей, схильних до АГ, а отже – відсутність необхідності встановлення додаткового обладнання у технологічній лінії.
