Compostos como polifenóis, flavonóides e vitaminas são boas opções de compostos bioativos que podem ser usados para fortificar produtos alimentícios, aumentando a sua funcionalidade. Porém, a baixa estabilidade e biodisponibilidade desses bioativos dentro da microestrutura heterogênea do alimento e no trato gastrointestinal, dificulta a ação benéfica aos consumidores. Os lipossomas podem ser usados para encapsular compostos bioativos, uma vez que são capazes de encapsular moléculas hidrofílicas, hidrofóbicas ou ambas, simultaneamente. São amplamente usados como veículos de entrega para a incorporação de compostos bioativos lipofílicos em produtos alimentares, aumentando a sua estabilidade e biodisponibilidade. Além disso, pode ser usado para promover uma aplicação eficaz em alimentos funcionais e nutracêuticos. Na presente revisão, são abordadas as aplicações, preparação, classificação e encapsulamento de compostos bioativos utilizando o método de lipossomas.
As indústrias de alimentos produzem diariamente grandes quantidades de subprodutos provenientes do processamento de leite, carne, cerveja, vinho, cana-de-açúcar, café, hortaliças e frutas, entre outros produtos. Os subprodutos alimentares gerados incluem cascas, sementes, caules, raízes, bagaço, resíduo de polpa e soro de leite. A falta de gestão sustentável associada aos baixos estímulos de aproveitamento desses subprodutos por meio da legislação vigente, estimula o descarte desses materiais em aterros sanitários. No entanto, estudos apontam grande potencial no desenvolvimento de biomateriais utilizando subprodutos como fonte de máteria-prima, instigando o meio acadêmico e industrial na busca por novos materiais de caráter sustentável, possibilitando o aumento da receita, além de reduzir possíveis agentes poluidores. Diante disso, essa revisão tem como objetivo destacar a aptidão de subprodutos alimentares na formulação de biomateriais.
Devido a projeção de crescimento populacional para as próximas décadas, a demanda pela produção de alimentos vem desencadeando um aumento na geração de subprodutos agroindustriais. No passado, esses subprodutos eram vistos como uma problemática a ser solucionada, porém, no cenário atual, eles podem servir como matéria-prima para diversas indústrias, sendo a principal estratégia utilizada para o desenvolvimento de produtos e processos e, também, para a extração de compostos de interesse, como os compostos bioativos. Os compostos bioativos são divididos em grupos contendo várias substâncias e, dentre elas, destacam-se os polifenóis e carotenoides, que podem expressar atividades biológicas e funcionais importantes, despertando a atenção para sua extração. Neste contexto, a aplicação de tecnologias inovadoras de extração nas indústrias de alimentos tem sido amplamente estudada e investigada, principalmente devido ao aumento da consciência dos consumidores por opções mais ecológicas que não incluam a utilização de solventes orgânicos nocivos à saúde. Dessa forma, extrações assistidas por tecnologias não convencionais ou emergentes como ultrassom (US), micro-ondas (MO), fluído supercrítico (FS), fluído pressurizado (FP), alta pressão hidrostática (AP) e campo elétrico pulsado (CEP) têm demonstrado diversas vantagens quando comparadas aos métodos de extração tradicionais, como uso de temperaturas moderadas e menor tempo de extração, porém ainda enfrentam barreiras para sua inserção à nível industrial. Portanto, esta revisão visa apresentar os compostos bioativos provenientes de frutas e vegetais e seus métodos de extração, enfatizando o potencial das tecnologias emergentes para tal finalidade.
A demanda por produtos de origem animal cresce ao longo dos anos, o que gera preocupações ambientais, sociais e econômicas. A sustentabilidade na cadeia produtiva de alimentos é um assunto que vem sendo muito discutido, visto que, se a população não mudar seus hábitos e a ciência não buscar formas de preencher essa lacuna, um dos maiores problemas que o ser humano enfrentará no futuro será a fome. Os atuais sistemas de produção de carne são uma fonte de poluição e um consumo significativo de terra e recursos hídricos. A carne artificial é uma alternativa frente aos problemas encontrados devido a sua forma mais sustentável de cultivo. Desta forma, essa revisão aborda as técnicas de cultivo e as perspectivas dessa cadeia produtiva.
