RESUMO -Os efeitos dos meses do ano sobre a composição e produção do leite foram avaliados através do acompanhamento de 10 unidades produtoras de leite, divididas em três sistemas de produção classificados como especializado (ES), semi-especializado (SE) e não-especializado (NE), durante 11 meses do ano. Foram coletadas amostras de leite diretamente dos tanques refrigeradores para determinação das características físico-químicas e contagem de células somáticas (CCS). Quantificaram-se a incidência de mastite e a produção média de leite (litros/vaca/dia) e coletaram-se amostras de água utilizada para consumo e limpeza, de pastagem, concentrado e silagem. O delineamento adotado foi o completamente casualizado, em arranjo fatorial desbalanceado, considerando como fatores os meses do ano, os sistemas de produção e a sua interação. Não foi encontrada variação significativa entre os meses estudados para produção de leite, valores de crioscopia, porcentagens de gordura, extrato seco, nitrogênio não-protéico, CCS, composição química, contagem de coliformes da água e composição bromatológica do concentrado. Os maiores valores de proteína verdadeira do leite foram observados em outubro e novembro, enquanto os maiores de caseína, em outubro, novembro, março e abril. O extrato seco desengordurado foi superior em dezembro e a acidez variou juntamente com a incidência de mastite, sendo superior nos meses de novembro e maio. Em relação à proteína bruta, ocorreu interação entre meses e sistemas. Foram observadas correlações negativas entre produção de leite e gordura, mastite e CCS, e correlação positiva entre produção de leite e lactose. O leite produzido nos diversos meses do ano diferiu, principalmente, quanto à incidência de mastite, fração protéica, extrato seco desengordurado e acidez. The aim of this study was to measure changes in biochemical markers in the peripartum period of primiparous Holstein cows diagnosed with subclinical and clinical mastitis. In this study, 37 dairy cows were monitored daily during milking until 60 days postpartum and were categorized according to the occurrence of clinical mastitis (group mastitis (GM), n = 9) or subclinical mastitis (group subclinical mastitis (GSUB), n = 10) or absence of symptoms (control group (CG), n = 18). Blood samples were collected weekly from -30 to 60 days from calving. Samples were grouped for prepartum (-30 to 0 days from calving), early postpartum (0 to 30 days from calving), and late postpartum (30 to 60 days from calving) periods. Prepartum serum non-esterified fatty acid (NEFA) concentration was higher in GM than in CG (P < 0.01). In addition, CG had higher prepartum serum glucose concentration than GM (P = 0.03). In the early postpartum period, aspartate aminotransferase (AST) activity was lower in CG than in GSUB (P < 0.05), and in the late postpartum period, AST activity was lower in CG than GSUB and GM (P = 0.01). Somatic cell count was higher during the early and late postpartum periods for GM and GSUB when compared to CG (P < 0.01). In this study, primiparous cows with low glucose and higher NEFA in the prepartum were more susceptible for mastitis in the early postpartum, probably due to low immune function associated to a more negative energy balance. In sum, increased prepartum serum NEFA concentration and decreased glucose in primiparous cows were associated with clinical mastitis incidence in the postpartum period.
-This study was carried out to evaluate the effect of the use of supplementation in pasture cultivated with Avena strigosa (black oats), Lolium multiflorum (ryegrass) and Vicia sativa L. (common vetch) on the composition and somatic cells count (SCC) of Jersey cow milk. Eight cows of the Jersey breed were separated by milk production, lactation period and live weight and were randomly blocked into two homogeneous groups (one with supplementation and other only on pasture), in a randomized complete design. Both groups were allowed to pasture for about 7 hours per day in a rotational grazing system in strips, with a one-day occupation period. The supplemented group was fed daily with 8 kg of supplement made of soy bean meal, soy shells, calcium limestone and mineral salt. The results showed significant differences between the two groups, because the percentage of total solids, protein and milk fat were higher in the supplemented cows. The lactose percentage was not influenced by the supplement intake. The somatic cell count, although there was a lower statistical difference for the group on pasture, showed small numerical oscillation between the groups and therefore should not be considered an effect of supplementation. The supplement supply to Jersey cows during lactation caused an increase in the total milk solid percentage, because it raised the fat and protein concentration.
A utilização de equipamentos alternativos de comprovada eficiência pode colaborar na viabilização do uso da pasteurização lenta por pequenos produtores, melhorando a rentabilidade da atividade e diminuindo o comércio de leite informal. O presente trabalho teve por objetivo avaliar a eficiência de equipamento alternativo para pasteurização lenta de leite previamente envasado. Quatorze partidas de 30 L de leite foram processadas e analisadas. As provas realizadas foram contagens de mesófilos aeróbicos, coliformes totais e coliformes termotolerantes, cálculo da redução de mesófilos aeróbicos e pesquisa da atividade das enzimas fosfatase e peroxidase. A eficiência do processo de pasteurização em reduzir o número de mesófilos aeróbicos do leite variou de 99,97 a 99,99%. Todas as amostras de leite pasteurizado apresentaram contagens de coliformes totais e termotolerantes <0,3 NMP/mL e resultados negativos e positivos para fosfatase e peroxidase, respectivamente. O equipamento testado foi eficiente na pasteurização lenta do leite previamente envasado, pois, em todas as partidas analisadas, foi obtido leite pasteurizado dentro dos padrões estabelecidos pela legislação brasileira para os parâmetros estudados. palavras-chave: pasteurizador, microbiologia, leite pasteurizado. summArY VALUE OF ALTERNATIVE EQUIPMENT FOR SLOW PASTEURIZATION OF PREVIOUSLY PACKED MILK. Alternative equipment with proved efficacy can help to make the use of slow pasteurization feasible by small producers, increasing their gain and reducing the illegal milk business. In the present study, the efficacy of alternative equipment for slow pasteurization of previously packed milk was evaluated. Fourteen lots with thirty liters of milk were studied. The analyses were mesophilic aerobes, total coliforms and thermotolerant coliform counts, reduction of the mesophilic aerobe number, and phosphatase and peroxidase activity tests. The efficiency of pasteurization to reduce the mesophilic aerobes number in milk ranged from 99.97 to 99.99%. All samples of pasteurized milk presented total and thermotolerant coliform counts <0.3 MPN/mL, and negative and positive results for phosphatase and peroxidase tests, respectively. The equipment tested was efficient at slow pasteurization of previously packed milk as the pasteurized milk complied with Brazilian legislation. Dulce de leche is a food obtained by concentration and heating of milk with the addition of sucrose. The common practice of opening the dulce de leche containers in retail markets can lead to food contamination by Salmonella. The objective of this study was to evaluate the survivability of Salmonellaenterica subsp. enterica serotypes Typhimurium, Enteritidis, Infantis and Derby in pasty dulce de leche. Aliquots of this sweet were experimentally contaminated with these microorganisms and later analyzed to evaluate microorganism viability after storage for 0, 1, 2, 3, 5, 10, and 20 days. Salmonella was recovered up to the 20th day. These results are a warning about the need to adopt proper sanitary-hygienic measures for handling and packaging this food aiming at food safety.
O estudo teve por objetivo avaliar a prevalência de mastite subclínica e a sensibilidade dos agentes isolados frente aos antimicrobianos. Foram acompanhadas vinte UPL da Região Sul do RS de maio de 2010 a maio de 2015. Foram coletadas amostras de leite dos quartos mamários com mastite subclíni-ca. As amostras foram identificadas e as colônias caracterís-ticas foram submetidas ao teste de disco-difusão. Do total de 2350 amostras coletadas, 44% dos isolados foram identificados como Staphylococcus coagulase negativa, 26% Staphylococcus coagulase positiva, 10% como Streptococcus spp.. Os Staphylococcus coagulase positiva apresentaram maior resistência a cefalexina, gentamicina, neomicina, tetraciclina e trimetoprima. Os Staphylococcus coagulase negativa, mostraram-se mais resistentes a gentamicina, neomicina, tetraciclina, trimetoprima e penicilina G. Os resultados obtidos mostram que é necessário realizar um controle de mastites mais eficiente nas propriedades, assim como salientar o uso consciente de antimicrobianos nos tratamentos terapêuticos.
