Hopfen und Gerste sind die unentbehrlichen landwirtschaftlichen Rohstoffe fur die Bierbereitung. Es wurde deshalb vor rund 7 Jahren versuchsweise mit dem Anbau von Hopfen auch in der Deutschen Demokratischen Republik begonnen mit dem Erfolg, daB bereits im Jahre 1958 nahezu die Halfte des Bedarfs an Hopfen aus eigener Erzeugung gedeckt werden konnte.Brauereitechnologisch versteht man unter ,,Hopfen" die mit noch ungefahr I cm langen Stielen behafteten, getrockneten Zapfen von Humulus lupulus. Sie entstehen aus den unbefruchteten, weiblichen Blutenstanden dadurch, da13 derer, Ulatteile nach der Blute weiterwachsen. An den Vpr-und Deckblattern dieser Pflanzenteile entwickeln sich Haardriisen, die entsprechend ihrem Entwicklungszustand als Scheiben-oder Becherdriisen ausgebildet sein konnen. Diese Driisen, die durch eine Kutikula verschlossen sind, entstehen dadurch, daB einzelne Epidermiszellen uber ihre Umgebung becherformig heraustreten. Die Kutikula hebt sich unter dem Druck des Sekretes, das den fur die Bierbereitung wertvollen Bestandteil der Zapfen darstellt. Es besteht aus bitter schmeckenden Harzen (ca. 16% des lufttr. Hopfens) und einem Duftol (ca. 0,5% des lufttr. Hopfens).Die chemische Zusammensetzung dieses Duftoles ist noch nicht vollstandig bekannt. Sie ist nicht nur von der H e r k~n f t l ,~* 3 $~9~, sondern auch von der Intensitat des Trocknungs-und Schwefelungsprozesses216>7, den Lagerungsverhaltnissen und dcm Alter des Hopfen9 abhangig und kann demzufolge innerhalb weiter Grenzen schwanken. * Vgl. auch Dissertation von H. Schon WOLLMER' hatte in den zwanziger Jahren in der a-Saure, die man als ,,Humidon" bezeichnete, den fur die Bierbereitung wichtigsten Bitterstoff des Hopfenzapfens erkannt. Er brachte dies in seiner bekannten Bitterkeitsskala der Hopfenharze, in der er dem Humulon den starksten Bitterungswert fur das Bier zusprach, zum Ausdruck. Es wurde aber in den letzten Jahren klargestellt, dal) dieses ,,Humulon" keine einheitliche Substanz ist, sondern im wesentlichen aus drei verschiedenen a-Shren, die alle denselben chinonartigen Molekulkern besitzen, besteht2'nunmehr Humulon, Cohumulon und Adhumulon genannt -, deren prozentuale Anteile sortenmaoig verschieden sind und die bei der Bierbereitung in unterschiedlichem Grade ausgenutzt werden4. Die brautechnische Bedeutung der a-Sauren in der Gesamtheit wird hierdurch indessen nicht geschmalert. Ihr prozentuales Vorkommen insgesamt im Hopfen ist daher fur eine mengenmaBig richtige Hopfengabe im Sudhaus von unveranderter Wichtigkeit, zumal die Zusammensetzung der a-Saurenfraktion innerhalb einer Hopfensorte ziemlich konstant zu sein scheint. Bei Gewachsen des Hallertauer und Saazer Anbaugebietes besteht sie beispielsweise aus rund 65% Humulon, 20% Cohumulon und IS"/;, Adhumulon4.Fur die analytische Ermittlung des Gehaltes der Hopfenzapfen an a-Sauren sind bis vor kurzer Zeit in Deutsch1a.nd die im Jahre I930 von WOLLMER' angegebene Methode und in GIoBbritannien jene von WALKER und HASTINGS~, die aus dem Jahre 1933 stammt, nahezu ausschliefilich ublich gewesen. In beiden Fallen werden die herausgelosten a-Sauren gravimetrisch als Bleisalze bestimmt, was nur in zeitraubender und umstandlicher Arbeit moglich ist. Erst in den letzten

Von diesen Gewinnungsmethoden wird iiberwiegend die Wasserdampfdestillation sowohl im Laboratorium als auch in der Industrie verwendet. Man kann mit Sicherheit annehmen, daB das auf diese Weise gewonnene 01 in Hinblick auf seine chemische Zusammensetzung nicht mehr dem in der Pflanze vorkommenden Duftol entspricht : Einerseits konnen Duftolkomponenten wie Terpene, Sesquiterpene, Alkohole, Aldehyde, Ketone, Ester und dergleichen durch Einwirkung des Wasserdampfes chemische Veranderungen erfahren; anderseits ist dies auch denkbar bei anderen, nicht zum Duftol gehorenden Pflanzeninhaltsstoffen, indem vielleicht wasserdampffluchtige Zersetzungsprodukte entstehen, die das mittels Wasserdampfdestillation gewonnene 01 verunreinigen. Letzteres konnte in nicht unbetrachtlichem Ma13 die Ergebnisse von Duftolgehaltsbestimmungsmethoden in Pflanzenmaterial, die fast alle die Wasserdampfdestillation zur Grundlage haben, beeinflussen. In der Pharmakognosie betrachtet man indessen die Duftolgehaltsbestimmung als Konventionsanalyse, ebenso wie auch die Definition der atherischen ole im DAB 6 eine Konvention darstellt.
