Chitosan is one of the most studied polysaccharides nowadays. Because of its biocompatibility, biodegradability and abundance in nature, it has had a wide number of applications. In this chapter, an overview of chitosan including its physicochemical properties and characterization methods is presented. Subsequently, the main chitosan chemical modiications via the hydroxyl and amino groups are discussed. These chemical modiications improve chitosan physical properties and expand its range of applications especially in the biomedical ield which will also be studied.
