• Objectif Cet article propose une réflexion méthodologique pour l’étude des innovations sociales. Constatant le besoin de travaux contextualisés permettant d’identifier les pratiques et initiatives originales portées par des acteurs en quête de renouveau et de transformations au sein de nos sociétés, nos travaux montrent que l’ethnographie comme approche immersive et participative est une méthode adaptée pour atteindre cet objectif. • Méthodologie Basés sur le récit de la recherche ethnographique menée auprès de l’association La Cocotte Solidaire, nous discutons de l’adoption du statut de participant observateur et du déploiement d’un dispositif de collecte de données alliant triangulation et quête d’informations chaudes et froides. • Résultats Nous précisons les moyens de s’emparer des initiatives socialement innovantes en tenant compte des spécificités culturelles et organisationnelles qu’elles impliquent : objectif de performance sociale, ancrage territorial ou encore fonctionnement collectif et démocratique. • Implications managériales Nos travaux valorisent les collaborations entre acteurs académiques et praticiens – innovateurs sociaux, ces derniers doivent prendre conscience de leurs capacités à innover socialement et de l’intérêt « d’embarquer » dans leur démarche des chercheurs-ethnographes. • Originalité L’article s’inscrit dans le champ de l’ethnomarketing et ouvre la voie méthodologique de l’étude de nouveaux phénomènes vecteurs de transformation sociale.
L’objectif de ce travail est d’identifier les conditions d’émergence des projets entrepreneuriaux hybrides. Les projets hybrides étudiés intègrent une diversité d’acteurs et de logiques en centrant leur activité sur la création de valeur sociale grâce à des ressources mixtes. L’hybridité d’un projet implique la présence irrémédiable de tensions organisationnelles dues aux logiques parfois contradictoires traversant le projet. Toutefois, nous en savons peu sur les conditions explicatives de l’hybridité d’un projet entrepreneurial et l’apparition de ces tensions. Dès lors, nous mobilisons une approche par les dispositifs de gestion en nous appuyant sur l’étude de cas d’un dispositif participatif créé pour stimuler l’émergence de projets entrepreneuriaux hybrides. L’étude de l’impact du dispositif de gestion sur l’émergence des organisations hybrides révèle que le dispositif marque les entrepreneurs d’une diversité de logiques (d’action publique, citoyenne et entrepreneuriale) porteuses de tensions et devient une opportunité pour la structuration de projets innovants et endogènes au territoire. Le pâturage des bovins est perçu par le consommateur comme une pratique d'élevage de meilleure qualité, ancrée dans son territoire et porteuse d'un meilleur traitement animal. Cette étude explore les moyens les plus efficaces de communiquer sur le sujet, mais également les inférences engendrées au niveau du produit. Elle appréhende l'impact relatif de messages présents sur le packaging d'une même pièce de viande. Ces messages valorisent le pâturage selon trois angles d'argumentation : l'expérience de consommation, les croyances liées aux bienfaits sur la santé ou celles liées aux bienfaits pour l'animal et pour l'environnement. Cet article valide la reconnaissance d'une communication sur le pâturage comme signal de qualité avant tout reliée à l'expérience gustative. Our study aims at understanding and building an efficient communication strategy around the pasture-raised attribute on meat products. We use quality perception theory and consider the impact of different messages on the packaging of a piece of meat. These messages valorize pasture raising according to three lines of argumentation: the consumption experience, beliefs related to health benefits, and beliefs related to positive effects on animal welfare and the environment. We confirm the positive perception of communication on pasture raising as a sign of quality linked above all to the gustatory experience. (JEL: M31, M37).
