Devido ao aumento significativo do consumo de frutas e seus derivados, é preciso investir em operações que visem seu aproveitamento, minimizando as perdas pré e pós-colheita, devido a sua alta perecibilidade. O processamento de polpa de frutas é uma técnica muito utilizada, pois grande parte da população busca praticidade e uma alimentação mais saudável, além de aumentar o tempo de conservação do produto e conseguir fornecê-lo a regiões distantes e em períodos de entressafras. O presente trabalho avaliou físico-química e microbiologiamente, em três meses consecutivos, 17 sabores de polpas de fruta de uma empresa produtora com a finalidade de utilizar o controle do produto final como meio de identificar falhas de controle presentes na aquisição de matéria-prima e durante as etapas de processamento e embalagem. Percebeu-se que cerca de 65% do total das polpas estavam impróprias ao consumo humano, sendo o maior percentual entre as análises físico-químicas (45%), seguidas pelas microbiológicas (30%). Na característica microbiológica, a grande quantidade de bolores e leveduras sugere falha nas etapas de limpeza e sanitização dos frutos e na área de processamento. Para as análises físico-químicas, pH e teor de sólidos solúveis totais foram os mais alarmantes, verificando-se a possibilidade de adição de água (ilegal) e excesso de acidulante, o que faz com a polpa perca sua identidade com a fruta. As frutas mais problemáticas foram abacaxi, ameixa, cajá, caju, graviola, goiaba e maracujá. O controle do produto final se mostrou essencial para a garantia de qualidade da empresa. ABSTRACT: Due to the significant increase in consumption of fruits and their derivatives, it is necessary to invest in operations aimed at their use, minimizing the pre and post-harvest losses, due to its high perishability. The fruit processing pulp is a widely used technique because much of the population seeking convenience and a healthier diet, in addition to increase the product shelf life and can provide it to distant regions and periods off season. This study evaluated physicochemical and microbiological characteristics, in three consecutive months, 17 flavors of fruit pulp of a manufacturing company in order to use the final product control as a means to identify control gaps present in the acquisition of raw materials as well as during processing steps and packaging. It was noticed that about 60% of all pulps were unfit for human consumption, with the highest percentage in the physicochemical analysis (45%), followed by microbiological (30%). In the microbiological characteristics, the large amount of molds and yeasts suggest failure through cleaning and sanitizing fruits and in the processing area. For the physicochemical analysis, pH and total soluble solids content were the most alarming, verifying the possibility of water adittion (illegal) and acidulant excess, which causes the pulp loses its fruit identity. ABSTRACT. Second generation ethanol from lignocellulose materials has been used in applications for food processing wastes. Since Brazil has a leading position in orange juice exports, the influence of acid and alkali pretreatments on liquor saccharification, solubilization of solid fraction and mass yield was evaluated. Time and C acid or C alkaline at different concentrations of solids (low to moderate, 1 to 9%) and high catalyst concentrations were analyzed. A hydrothermal pretreatment was conducted under the same conditions of acid and alkaline treatments to investigate the relative selectivity increase in using the catalysts. The chemical analyses of wastes indicated a 70% total carbohydrate level denoting a promising raw material for bioethanol production. Pretreatment caused acid saccharifications between 25 and 65% in total reducing sugars (TRS) and mass yields (MY) between 30 and 40%. In alkaline pretreatment, these rates ranged between 2 and 22.5% and between 30 and 80, respectively. In hydrothermal pretreatment, solubilized TRS varied between 3 and 37%, whereas MY remained between 45 and 60%, respectively. Etanol de segunda geração a partir de materiais lignocelulósicos tem sido abordado como uma das aplicações de resíduos de processamento de alimentos. Sendo o Brasil líder na exportação de suco de laranja, avaliou-se a influência de pré-tratamentos ácidos e alcalinos na sacarificação do licor, na solubilização da fração sólida e no rendimento mássico. Para isso, estudou-se tempo e C ácido ou C álcali em diferentes concentrações de sólidos (baixo a moderado, 1-9%) e altas concentrações de catalisador. Um pré-tratamento hidrotérmico foi realizado, tendo as mesmas condições dos tratamentos ácido e alcalino, a fim de investigar o aumento da seletividade em relação ao uso desses catalisadores. Análises químicas de resíduos indicaram um nível total de carboidratos de 70%, denotando uma matéria-prima promissora para a produção de bioetanol. O pré-tratamento conduziu a sacarificações ácidas de 25 a 65% em açúcares redutores totais (ART) e rendimentos mássicos (RM) entre 30 e 40%. Para o pré-tratamento alcalino, esses valores foram de 2 a 22,5%, e de 30 a 80%, respectivamente. No pré-tratamento hidrotérmico, o ART solubilizado variou entre 3 e 37%, enquanto que o RM manteve-se entre 45 e 60%. Brasil é o maior produtor mundial de laranjas, bem como grande potência na exportação de suco, gerando milhares de toneladas de bagaço. Como alternativa ao impacto causado pelo descarte deste resíduo, o trabalho avalia o pré-tratamento ácido do bagaço de laranja (Citrus sinensis L. Osbeck) visando à produção de etanol de segunda geração. Utilizou-se um planejamento experimental 2 3 , tendo como variáveis o tempo (15 a 120 min), a C ácido (1 a 4% v/v) e a C biomassa (1 a 9% m/v). A caracterização físicoquímica da farinha, obtida por secagem à 50ºC e moagem em peneira de 30 mesh, indicou alto teor de carboidratos e fibras. No pré-tratamento, as variáveis analisadas apresentaram sacarificação na fração líquida entre 30 e 60%, influenciadas pela concentração de biomassa e tempo, rendimento mássico entre 30 e 40%, com significância do tempo, e °Brix/g biomassa, influenciada pela concentração de biomassa e ácido. Percebeu-se, em alguns casos, que a severidade do pré-tratamento foi desnecessária e comprometeu a quantidade de açúcares, sugerindo a condução do processo por 15 min a 120°C e 1atm, com menores concentrações de ácido e de biomassa.
