Increase in the nutritional quality of tilapia mechanically separated meat and application in fish patties Aumento da qualidade nutricional da carne mecanicamente separada de tilapia e aplicação em empanados de peixes
The aim of this work was to evaluate the feed management (feed percentage and feeding frequency) of pacu (Piaractus mesopotamicus) juveniles bred in net cages. To evaluate the feed percentage 2,000 juveniles (12.12±0.51 g) were randomly distributed in 20 cages of 1 m3 (0.8 m3 of useful volume). The fish were fed four times a day (8:00 a.m.; 11:00 a.m.; 2:00 p.m.; and 5:00 p.m.) with 4, 7, 10, 13, and 16% of feed. To evaluate feeding frequency, another 2,000 juveniles (9.56±0.56 g) were randomly distributed in 20 cages of 0.8 m3 of useful volume. The fish were fed one, two, three and four times a day. Due to the feed percentage, significant effects (P<0.05) were observed for the parameters of weight gain, final length, final biomass, specific growth rate, and apparent feed conversion. The performance parameters, centesimal composition, and blood biochemistry were not influenced (P>0.05) by the feeding frequency. Considering the weight gain and apparent feed conversion of pacu juveniles cultivated in net cages, 8% of feed is recommended regardless of the feeding frequency adopted.
Vitamins are present in small amounts in food and are essential for the organic balance of fish. Liposoluble vitamins are stored in the liver and may lead to hypo or hypervitaminosis which in both cases can generate complications to animal homeostasis. This study aimed to evaluate the effects of vitamin A supplementation in the diet of pacu fingerlings (Piaractus mesopotamicus). A total of 240 fingerlings with the initial average weight of 17.55 ± 3.22 g were randomly distributed in 20 500 L-circular tanks. Diets were supplemented with retinol acetate (1,000,000 IU of vitamin A g-1) to contain 0, 3,000, 6,000, 9,000, and 12,000 IU of vitamin A kg-1 of diet. The fish were fed ad libitum. Productive performance, carcass yield, visceral fat, hepatosomatic ratio, carcass chemical composition, hematology blood parameters, and liver histology were evaluated. The quadratic effect was observed on final weight and apparent feed conversion with optimum levels at 6,583 and 5,555 IU of vitamin A kg-1 of feed, respectively. There was no influence of vitamin A supplementation on survival, carcass chemical composition, hematology, and liver histology. The minimum supplementation of 5,555 IU of vitamin A kg-1 of ration is indicated to obtain enhanced results in weight gain and apparent feed conversion in pacu fingerlings.

Pre-gelatinized starch and dextrin help in the gelatinization of patties without adding heat to improve texture. Aiming to evaluate the effect of the addition of pre-gelatinized starch and dextrin in the preparation of mechanically separated meat patties obtained from Nile tilapia filetage residues. An experimental planning of the rotational central Composite Design (DCCR) 2 2 with 4 axial points with 9 formulations and 4 replications at the central point was applied, totaling 12 assays. A base formulation is developed to be applied in the design with different levels (0, 0.5, 1, 2, 3%) According to the planning (DCCR), pre-gelatinized starch and dextrin. A regression model was developed for the variable Shear Force response (texture). Analyses of chemical composition, Aw, ph, texture and scanning microscopy and sensory analyses were performed. For the development of the patties the best result was for 1.5% of pre-gelatinized starch and 1.0% dextrin. Thus, the use of mechanically separated meat with the addition of pre-gelatinized starch and dextrin to produce restructured products is of great importance for the fish industry, as it improves the texture of the breaded presented a Greater acceptance by consumers.
It is essential to establish a correct feeding rate, combined with an efficient feeding strategy, aiming to achieve maximum growth of fish with lower feed consumption. The objective of the present work was to determine the food management of juveniles of jundia (Rhamdia quelen) cultivated in net tanks, through two trials; I-to evaluate the feeding rate of juveniles of jundia fed with extruded and pelleted diets; and II-evaluate different feeding strategies with extruded diets. The feed rate showed a linear effect directly proportional to feed consumption and apparent feed conversion. The types of feed and the feeding rate influenced (P>0.05) in the biochemical parameters, with significant interaction for erythrocytes. The feeding strategy influenced (P>0.05) in the parameters of weight gain and in the biochemical parameters of HDL, triglycerides, albumin and for the lipids in the carcass of jundiás. It is concluded that 2% feed for juveniles of jundia (R. quelen) because it provides better rates of apparent feed conversion, it is recommended the use of extruded feed for providing better health status of fish. Two daily feedings are recommended at 8 am and 5 pm, with 50% being provided for each feeding, however, there is a need to feed the ...
