Teve-se como objetivo avaliar a qualidade físico-química de filés de espécies de peixes comercializados em feiras livres de Belém e determinar a composição centesimal desses produtos. Foram realizadas análises físico-químicas (temperatura, pH, cocção e prova de amônia), composição centesimal (umidade, proteínas, lipídeos, cinzas e carboidratos) e determinação de valor calórico de filés de 14 amostras das espécies de peixes dourada, filhote, piramutaba, pescada gó e pescada amarela. As análises foram realizadas segundo recomendações do Laboratório Nacional de Referência Animal e Instituto Adolfo Lutz. Os resultados de temperatura de conservação variaram de 10,9 a 22,7 °C; os valores de pH variaram de 6,37 a 7,22; os resultados para cocção e amônia foram negativos. Na determinação da composição centesimal a umidade variou de 78,80 a 85,45%; a proteína de 13,83 a 18,63%; o teor de lipídios de 0,08 a 1,44%; o teor de cinzas de 0,98 a 1,52%; o teor de carboidratos de 0,21 a 0,95% e os valores calóricos variaram entre 56,04 a 85,03 kcal/100g. Houve diferença estatística significativa a 5% entre as espécies de peixes avaliadas para os parâmetros temperatura, pH, umidade, proteínas e cinzas. Todas as amostras avaliadas estavam em desacordo com a legislação quanto à temperatura de conservação. Enquanto, pelo valor de pH, apenas as amostras de filhote atenderam ao preconizado na legislação. O estudo da composição centesimal revelou baixo teor de gordura e de valor calórico das amostras. Sendo possível observar a influência das espécies e sua composição química pelos grupos formados na HCA e PCA.
ResumoO pirarucu é um peixe da Amazônia de grande porte, comumente comercializado na forma de mantas salgadas e secas. Este estudo verificou a qualidade bacteriana do pirarucu salgado seco, comercializada na cidade de Belém. Clostridium Sulfito Redutor (CSR), Bacillus spp., Escherichia coli e Salmonella spp. foram pesquisados em 40 amostras. Constatou-se a presença de CSR, de Bacillus spp., de E. coli e de Salmonella spp., respectivamente, em 32,5%, 62,5%, 30% e 25% das amostras estudadas. Clostridium perfringens foi confirmado em uma amostra, o que caracteriza perigo de intoxicação alimentar, pois essas bactérias são formadoras de esporos e podem persistir nos alimentos quando a maioria dos micro-organismos entéricos já foi destruída. Conclui-se que o pirarucu salgado seco comercializado na cidade de Belém apresentou condições higiênico-sanitárias insatisfatórias, devido à presença de bactérias patogênicas e toxigênicas, que indicam contaminação fecal e pelo solo, manipulação não higiênica, recontaminação pós-processamento e armazenamento inadequado, o que torna este alimento impróprio para o consumo humano, por não atender aos padrões microbiológicos previstos na legislação brasileira e por acarretar risco à saúde do consumidor.Palavras-chave: qualidade, Arapaima gigas, peixe salgado seco, bactérias patogênicas e toxigênicas. AbstractThe Arapaima gigas is a large fish from Amazon, being sold in salted dry pieces. The bacterial quality was studied in 40 samples of salted dry pirarucu sold in the Belém city, in relation to indicators microrganisms of hygiene and sanity conditions and pathogenic bacteria. Sulfite Reduction Clostridium (SRC), Bacillus spp., Escherichia coli and Salmonella spp. were isolated in 32.5%, 62.5%, 30% and 25% of samples studied, respectively. Clostridium perfringens was confirmed in one sample. We can conclude that dried salted pirarucu marketed in the Belém city showed inadequate sanitary conditions due to the presence of toxigenic and pathogenic bacteria that indicate fecal and soil contamination, inadequate manipulation, post-processing recontamination and improper storage. This fish was in disaccord with the official standard and characterize a potencial risk to public health

RESUMO O presente trabalho teve como objetivo verificar as adequações higiênico-sanitárias e físicoestruturais de boxes de comercialização de peixes no mercado do Ver-o-Peso, localizado em Belém, no Pará. A coleta de dados ocorreu entre os meses de abril a junho de 2018, através de visitas técnicas ao mercado e nas áreas internas de 60 boxes de comercialização de pescado, com registros fotográficos e aplicação de uma lista de verificação de adequação às Boas Práticas de Fabricação (BPF) relativas às edificações e manipulação. Verificou-se que as paredes e pisos dos boxes possuíam revestimentos de material impermeável e lavável, porém, observou-se falhas nos procedimentos de higienização, assim como acúmulo de resíduos em vários pontos do mercado, acarretando em possíveis focos de contaminação. Em relação aos utensílios usados pelos permissionários, 81% (n=49) apresentavam materiais resistentes à corrosão em bom estado de conservação e 19% (n=11) apresentavam utensílios sujos e enferrujados, além de que nenhum colaborador utilizava equipamento de proteção individual específico e adequado. Os dados obtidos comprovam que o mercado apresenta condições higiênico-sanitárias inadequadas, com matériaprima sem acondicionamento adequado, assim como ambiente insatisfatório para o manuseio de alimentos, comprometendo a qualidade do peixe e colocando em risco a saúde dos consumidores.
O objetivo do presente estudo foi avaliar a qualidade da carne de caranguejo-uçá obtida por método experimental, usando-se as Boas Práticas de Fabricação (BPF) e pelo método artesanal (sem as BPF). Foram avaliados 100 caranguejos mediante cada método. Observaram-se valores semelhantes para as amostras obtidas pelos métodos experimental e artesanal para a contagem de Staphylococcus coagulase positiva (< 102 UFC. g-1), < 2,5x102 e 3,3x106 UFC. g-1 para a Contagem de Bactérias Heterotróficas Aeróbias Mesófilas, < 3 e > 1.100 NMP. g-1 para Coliformes Totais, e < 3 e 43 NMP. g-1 para coliformes a 45 ºC, respectivamente. Não foi detectada Salmonella spp. nas amostras analisadas. As amostras obtidas pelos dois métodos apresentaram teores médios de Bases Voláteis Totais de 16,80 e 23,90 mg N/100 g, de Trimetilamina de 0,31 e 0,49 mg N/100 g e valores de pH de 8,0 e 7,8, respectivamente. Quanto à cocção, todas as amostras apresentaram odor normal, caldo límpido, carne firme e resultados negativos na prova de Nessler. Não foram detectadas histamina, putrescina e cadaverina na carne de caranguejo estudada. As amostras analisadas apresentaram boa qualidade físico-química, sendo classificadas como “produto de acordo com os padrões legais vigentes” para a Contagem de Staphylococcus coagulase positiva, NMP de Coliformes totais e a 45 ºC e na pesquisa de Salmonella spp. As amostras obtidas pelo método artesanal foram consideradas como “produto impróprio para o consumo humano” em relação à Contagem de Bactérias Heterotróficas Aeróbias Mesófilas. A sequência tecnológica e as BPF utilizadas no método experimental contribuíram para a boa qualidade bacteriológica e físico-química da carne de caranguejo-uçá.
