Partiendo del análisis de la cultura popular del maíz, del frijol y de la mandioca y algunos de sus subproductos en el campo de la gastronomía brasileña, el objetivo de este artículo es contrarrestar la lógica agresiva vigente de producción de alimentos en Brasil. En primer lugar, analizaremos la cultura del maíz a través de la experiencia del proyecto de extensión Pirapoca (UFRJ), que se ocupó de investigar el maíz nativo brasileño y de divulgar su valorización. Por otro lado, la mandioca (Melchior y Fujihara, 2018), concebida como alimento para las clases sociales populares, resiste a los diversos procesos de borrado de su relación con los pueblos indígenas y de su pasado mítico. Finalmente, presentaremos el frijol, a través del acarajé (Bitar, 2011), una comida de origen africano traída a Brasil y que resiste a los procesos de borrado de las herencias afrobrasileñas. Con esto, buscamos enfatizar formas de resistencia a los modelos propuestos por las grandes corporaciones del agronegocio.
