The consumption of Brazilian cassava has been reduced due to a lack of adjustment to the modern lifestyle. To reverse this trend, new products could be developed specifically targeted to high-value niche markets. Cereal bars stand out as fast food high in nutritional value. A bar formula mimicking cereal bars was prepared using a mixture of Brazilian cassava flour, hydrogenated vegetable fat, dried bananas, ground cashew nuts, and glucose syrup. After being pressed, the bars were dried for 1 hour at 65 °C, packaged in films, and stored under ambient conditions. Its stability was continuously monitored for 210 days in order to ensure its safety and enable its introduction to the market. Texture loss was observed in the packed bars after 90 days of storage, but the sensory characteristics allowed the testers to perceive this tendency after only 30 days of storage. However, chemical, physical, and microbial analyses confirmed that the bars were safe for consumption for 180 days. The results showed that a 45 g cassava flour-based bar enriched with nuts and dried fruits can meet 6% of the recommended daily fiber intake with a caloric value between that of the common cereal bar and that of an energy bar. Adapting the formula with ingredients (fruits, nuts) from different regions of Brazil may add value to this traditional product as a fast food.
The aim of the study was to evaluate the chemical, physical and nutritional composition and sensory acceptability of different sweet potato cultivars to classify the best genotypes for human consumption. We evaluated ten genotypes extracted from the Germplasm bank of Midwest State University, Brazil. The cultivars were evaluated regarding their sensory acceptability and chemical (reducing sugar; nonreducing sugar; total sugar; pH; total soluble solids; titratable acidity; total soluble solids/titratable acidity ratio; and instrumental colour) and nutritional composition (moisture; ash; protein; lipid; carbohydrate; energy value; total carotenoid; and ascorbic acid). Greater scores (p < 0.05) for overall acceptance were obtained for the white pulp genotypes Amorano, Júlia, UGA 45, and UGA 49. There was a statistical difference (p < 0.05) in the chemical and nutritional composition of sweet potatoes, except for the pH values. Generally, tuber have a light colour (values of L* greater than 50) with a yellow shade (b*) and green subshade (negative a* values). The exception was noticed in the UGA 34 genotype, which presented a higher red shade (positive a* value) and a yellow subshade. The cultivars more indicated for human consumption were the UGA 34 (favorable nutritional profile), UGA 45 (better acceptability and favorable chemical and nutritional composition), and Amorano (better acceptability and favorable chemical composition). On the other hand, the UGA 29 genotype may be characterized as the less appropriated for consumption. That, due to its less acceptance from the consumers and an inferior chemical and nutritional characterization. We conclude that the Brazilian sweet potato cultivars more indicated for human consumption are the UGA 34, UGA 45 and Amorano, considering that present more favorable chemical, nutritional and sensory acceptability characteristics. The UGA 29 genotype may be characterized as less recommended for consumption.
RESUMOObjetivo: identificar a percepção do egresso da graduação em Enfermagem sobre as contribuições da universidade privada para inserção no mercado de trabalho. Métodos: pesquisa de campo exploratória, descritiva, de abordagem qualitativa. Os dados foram coletados entre abril e outubro de 2016 por meio de questionário estruturado aplicados a 40 enfermeiros formados em uma universidade privada de São Paulo. Resultados: a análise de conteúdo possibilitou a identificação de três categorias temáticas, sendo: "Sentimento de despreparo para atuação no mercado de trabalho", "Segurança para o primeiro processo seletivo" e "Desenvolvimento de competências para o ser enfermeiro". Considerações finais: identificou-se o sentimento de satisfação da maioria dos egressos na sua formação, de maneira representativa para a inserção no mercado de trabalho e para a vida profissional. Resumo A preferência cultural do brasileiro originou grupos e subclassificações da farinha de mandioca em função dos processos adotados. Diferenças de processamento das farinhas de mandioca podem afetar a digestibilidade do amido, assim seu teor calórico foi investigado. Foram selecionadas cinco amostras dos três grupos de farinha de mandioca: Seca, Bijusada e D’água. O teste de digestibilidade do amido foi realizado in vitro, incubando a suspensão de farinha com amilase (alfa-1,4-glucano-4-glucanohidrolase) em condições de temperatura e pH que simulam a digestão humana. Alíquotas foram coletadas a cada 15 minutos, durante 1 hora e o teor de glicose liberado foi expresso em calorias rapidamente disponíveis. Os resultados mostraram que o valor calórico de todas as amostras de farinha de mandioca permaneceu ao redor de 300 kcal. 100 g–1. Considerando a cinética de liberação em função do tempo e do grupo, as amostras de farinha de mandioca diferiram. As farinhas de mandioca com menor granulometria, Biju Fina e Furnas (Grupo Bijusada e Seca), apresentaram rápida liberação de açúcares aos 15 minutos, variando de 110 a 215 kcal. 100 g–1, respectivamente. A farinha de mandioca Fina (Grupo Seca) teve liberação uniforme de glicose durante a avaliação. O açúcar liberado pelas farinhas de mandioca com maior granulometria, Biju Grossa e D’água (Grupo Bijusada e D’água), apresentaram dois picos de liberação: o primeiro aos 15 minutos de incubação (liberando 84,2 e 120,48 kcal. 100 g–1, respectivamente); enquanto o segundo pico para a amostra Biju Grossa ocorreu aos 45 minutos (112 kcal. 100 g–1), para a farinha D’água foi após 60 minutos (67,88 kcal. 100 g–1). Pela avaliação microscópica foi observada a presença de grânulos de amido residuais não hidrolisados, variando de 2,42 a 17,85%. Os resultados mostraram que o valor calórico das farinhas de mandioca variou em função do processamento, que afetou a granulometria da farinha, que por sua vez influenciou a gelatinização do amido, fatores esses que determinaram a intensidade da ação das enzimas na liberação de glicose.
