Summary The objective of this work was to develop low fat or light cakes by substituting the fat with either guar or xanthan gums. In order to measure the effect of this substitution, the following were evaluated: specific density of the dough, specific volume, moisture content, internal characteristics and the presence of moulds. Cakes with 25 and 50% substitution of the fat were also evaluated with respect to water activity (Aw), firmness and elasticity. The proximate composition analysis was used to determine the reductions in fat content and caloric value. Cakes with 50% substitution with guar and xanthan gums, up to 15 days storage, showed no significant difference (P < 0.05) with respect to firmness and elasticity. Therefore substitution of 50% of the normal fat content with gums allowed the production of cakes that were light with respect to their fat content. It was found that those made with xanthan gum were considered better with respect to overall appreciation and texture in the acceptability test.
a b s t r a c tThis work fully demonstrated the formation of amino acids complexes with b-cyclodextrin (b-CD) by the method of nuclear magnetic resonance with the rotating frame Overhauser effect spectroscopy (ROESY) and diffusion ordered spectroscopy (DOSY) techniques. The tested amino acids display the following decreasing order of affinity for b-CD: tryptophane > tyrosine > phenylalanine > proline > histidine > isoleucine. The influence of complexation on taste perception was determined with a trained panel to qualify taste alterations of single amino acids and quantify the debittering of soy protein hydrolysate by b-CD complexation. The results showed that b-CD complexation is effective for modifying single amino acids taste perception and debittering soy protein hydrolysate. Bitterness sensation of the latter is reduced by 90% when 5% b-CD was added, thus b-CD is recommended as a prospective additive for masking bitter taste of new functional food products.

The formation of the inclusion complexes of phenylalanine, tryptophane, tyrosine, isoleucine, proline and histidine with a-CD were detected by nuclear magnetic resonance techniques (ROESY and DOSY) and the sensory characteristics of soy hydrolysates were judged by a panel of trained tasters. It was concluded that these amino acids form inclusion complexes with a-CD and the order of affinity for the a-CD cavity is phenylalanine % tryptophane > proline > isoleucine % tyrosine % histidine. a-CD alters the bitter taste perception of the amino acids and reduces the bitter taste from hydrolyzed soy protein. These results indicate a potential use of a-CD for debittering protein hydrolysates in acidic beverages.
*A quem a correspondência deve ser enviada ResumoForam estudados diferentes agentes de corpo na substituição total da sacarose na formulação de chocolate, buscando-se obter um produto diet em sacarose e light em calorias (25% de redução calórica teórica em relação à formulação padrão, com sacarose) e com boa aceitação sensorial. Os agentes de corpo utilizados neste estudo foram: polidextrose, inulina, frutooligossacarídeos -FOS, lactitol e maltitol; como edulcorante de alta intensidade empregou-se a sucralose. Os chocolates light obtidos foram submetidos às análises de umidade (Karl Fisher), tamanho de partículas (micrômetro digital) e propriedades reológicas (viscosidade plástica -ca e limite de escoamento de Casson -ca ). O teor de umidade dos chocolates light variou de 1,23 a 2,12%; o tamanho de partículas de 19 a 24 m; o ca de 6,60 a 11,00 Pa.s; e o ca de 0,05 a 1,31 Pa. As formulações com polidextrose, polidextrose e lactitol e polidextrose e maltitol foram selecionadas para análise sensorial por apresentarem boa performance tecnológica e adequada maquinabilidade da massa de chocolate durante as diferentes etapas do processo. A análise sensorial indicou que as três formulações avaliadas não diferiram entre si ao nível de significância de 5% em relação à intensidade do aroma, dureza, derretimento na boca e sabor e, quanto à intenção de compra, as amostras diferiram entre si ao nível de significância de 5%, sendo que a formulação que continha 32,60% de Polidextrose e 15,57% de Maltitol foi a preferida. AbstractA study was made of various bulk agents as sucrose substitutes in the formulation of chocolate, aiming to obtain a diet product in terms of sucrose and a light product in terms of calories (25% fewer calories than standard formulations containing sucrose) with good sensorial acceptance. The bulk agents used in this study were polydextrose, inulin, fructo-oligosaccharides -FOS, lactitol and maltitol. Sucralose was used as a high intensity sweetener. The light chocolates were analyzed for moisture content (Karl Fischer), particle size (digital micrometer), and rheological properties (Casson plastic viscosity, ca , and yield strength, ca ). The moisture content of the light chocolate varied from 1.23 to 2.12%, while particle size varied from 19 to 24 m, ca from 6.60 to 11.00 Pa.s, and ca from 0.05 to 1.10 Pa. The formulations containing polydextrose, polydextrose and lactitol, and polydextrose and maltitol were selected for a sensory analysis due to their good technological performance and adequate machinability of the chocolate mass in the different stages of the process. Probiotic buttermilk‐like fermented milk in different flavors in versions with sucrose and sucralose were processed in a pilot plant. The Mesophilic Aromatic Culture CHN‐22 and Bifidobacterium animalis Bb12 were the cultures employed for fermentation. Physicochemical composition, apparent viscosity, diacetyl content, viability of cultures during storage, and acceptance of product via sensorial analysis were assessment factors. The high viability of the probiotic culture was observed (average 8.08 log cfu/ml) during refrigerated storage (28 days) of buttermilk and good acceptance of the product via sensory test. However, the probiotic culture might have been responsible for the loss of diacetyl, a volatile compound that is a characteristic feature of the product.

Além do sabor e do odor, estão incluídos nestes parâmetros o tempo de cozimento, a quantidade de água absorvida, as propriedades reológicas da massa (firmeza, mastigabilidade e elasticidade) e as características da superfície (pegajosidade, desintegração e perda de sólidos solúveis) [10]. Para MISKELLY [13], a firmeza e a ausência de pegajosidade após o cozimento, bem como a cor e a resistência durante a mastigação são os parâmetros de qualidade mais importantes. Estas características são inerentes ao uso do trigo T. durum.No Brasil, a semolina de trigo T. durum ainda é pouco empregada para a produção de massas. Do total de 813 mil toneladas de macarrão produzidas no país em 2001, apenas 4% empregaram o trigo durum como matéria-prima [4] em função das limitações para o seu cultivo no país e também do elevado custo do produto importado. Os fatores que limitam o cultivo deste trigo no Brasil são: ocorrência de níveis tóxicos de alumínio no solo e fatores climáticos (excessiva umidade relativa do ar nos meses de plantio, ocorrência de geadas durante o período de espigamento e de chuvas e granizo durante a colheita) [7]. Para a produção de massas alimentícias no Brasil, utiliza-se como matéria-prima a farinha do trigo T. aestivum, com características adequadas à panificação. A adição de ovos à formulação do macarrão é uma das maneiras de se melhorar a qualidade do produto fabricado a partir dessa matéria-prima.A adição de ovos à massa confere a cor amarela, melhora a elasticidade, principalmente em massas longas, reduzindo a quantidade de resíduo na água de cozimento e, conseqüentemente, a pegajosidade da massa, além de aumentar o valor nutricional. Durante a preparação da massa, a albumina do ovo tem influên-cia positiva sobre a proteína da farinha, ajudando na formação da rede protéica e melhorando o envolvimento do amido por essa rede [12].
