This study was carried out to determine the effect of moisture content on physical properties of some grain legumes seeds such as kidney bean (Phaselous vulgaris), dry pea (Pisum sativum),and black-eyed pea (Vigna sinensis) seeds. Three different moisture contents for each grain legume were evaluated. The average length, width, thickness, geometric mean diameter, and unit mass of seeds ranged from 16.66, 8.86, 7.17, 10.17mm, and 0.715g for kidney bean; 7.46, 6.02, 4.49, 5.85mm, and 0.158g for pea; 9. 19, 6.96, 6.26, 7.32mm, and 0.255 g for black-eyed pea at a moisture content of 8.21%, 8.20%, and 5.66% (wet basis), respectively. The sphericity, thousand-seed mass (1000-seed mass), and projected area increased, whereas the bulk and kernel densities linearly decreased with an increase in moisture content for each grain legume seed. The porosity, the volume of seed, and angle of repose increased for three grain legumes seeds, whereas the angle of repose decreased for blackeyed pea seeds in the moisture contents studied. The static and dynamic coefficients of friction on various surfaces, namely, galvanised metal, chipboard, mild steel, plywood, and rubber also linearly increased with an increase in moisture content of each grain legume seed.

BACKGROUND: The experiment was carried out with total of 270 eggs, which were collected from a brown-egg layer strain of Lohmann hens reared in a cage system. Collected eggs were categorized according to weight and classified as medium, large, extra-large or jumbo. The purpose of the study was to determine the effect of egg weight on egg quality characteristics.

The physical properties of nuts and kernels of three Turkish walnut varieties (Juglans regia L.) such as dimensions, weight of nuts and kernels, sphericity, bulk density, volume, and coefficient of friction were determined. The resistance of the nut and kernel of walnut varieties to damage was determined by measuring the average rupture force, deformation and rupture energy along the X-, Y- and Z-axes at different compression speeds (30 and 60 mm/min). Both the static and dynamic coefficient of friction values were greater for the sheet iron surface than the galvanized one for all walnut varieties. The highest nut rupture force, deformation and rupture energy among the three walnut varieties occurred for Kaman loaded on the Y-axis. The results indicated that when testing the effects of compression axes the rupture force is highly dependent on walnut varieties. The lowest force needed to rupture the nut or kernel was found in walnut varieties with Sebin that were tested at a compression speed of 60 mm/min.

Food Sci., 28: 547-556.The variations in physical properties such as the size dimensions, unit mass, sphericity, projected area, bulk density, true density, volume, coefficient of friction on various surfaces, and terminal velocity of shelled and kernel walnuts as a function of the moisture content were determined. With an increase in the moisture content, the sphericity, projected area, bulk density, volume, and porosity of shelled and kernel walnuts increased, whereas the true density linearly decreased. Studies on rewetted walnuts showed that the terminal velocity increased from 14.17 m/s to 15.50 m/s, and from 12.60 m/s to 14.35 m/s, for shelled and kernel walnuts, respectively. The static and dynamic coefficients of friction of shelled and kernel walnuts on chipboard and plywood surfaces also increased linearly with an increase in the moisture content.

The effects of compression in different axes and speeds on mechanical properties and selected geometric properties of almond cultivars were investigated. The average sphericity, volume and surface area ranged from 60.5 to 71.1%; 3.52 to 3.81 cm 3 and 0.60 to 0.61 cm 2 for almond cultivars. The greatest and least rupture force of almond were obtained along the X and Z axes for each cultivar. The results indicated that the effects of compression along the axis and speed on the rupture force were highly dependent on almond cultivars. Selected mechanical properties were affected by geometric and mechanical parameters of almond cultivars.
