The regional variability and age–age correlation on vitamin B1, vitamin B2 and minerals (Ca, Mg, P, K, Cu, Fe, Mn, Na, and Zn) concentration in baobab leaves were investigated. Baobab was cultivated from seeds from 11 countries including Benin, Burkina Faso, Kenya, Malawi, Mali, Mozambique, Niger, Tanzania, Togo, Senegal, and Sudan. Vitamins B1 and B2 content were assessed using microbiological VitaFast kits methods and minerals by atomic absorption and flame spectrometry methods. Overall, the results showed a higher content of vitamin B2 compared to vitamin B1 with the highest vitamin B2 content (1.04 ± 0.05 mg/100 g DM) from Senegal. The highest iron (Fe) content of 26.39 mg/100 g was found in baobab leaves from Mali. For age–age correlation, adult baobab leaves of Nankoun in Burkina Faso provided the highest calcium (Ca) content of 3373 mg/100 g. However, for provenance trial, young plants from three communities of Burkina Faso showed the highest calcium (Ca) and potassium (K) content. The study demonstrated that vitamins B1 and B2 and mineral contents in baobab leaves vary with the country and the age of the tree. Vitamin B1 content was higher in baobab leaves from ascendants compared to those from descendants, while in contrast vitamin B2 content was higher in the leaves from the descendants compared to their ascendants (mother tree).

The present study was undertaken to investigate the microbiological quality of milk and artisanal dairy products sold in Ouagadougou markets. Forty-five (45) samples of milk and dairy products including raw milk, sour milk and yoghurt were collected and analyzed for aerobic mesophilic bacteria (AMB), total coliforms (TC), thermotolerant coliforms (TTC), Staphylococcus aureus (S. aureus), lactic acid bacteria (LAB) and yeasts and moulds (YM). The coliforms bacteria were then purified and identified by using API 20E system. The mean values of TC, TTC, S. aureus LAB and YM in the raw milk were 8.95, 6.43, 6.21, 4.83, 8.01 and 4.78 log cfu mL -1 respectively, In sour milk they were 10.44, 5.62, 4.12, 6.98, 7.38 and 3.75 log cfu mL -1 respectively, while in yoghurt samples the mean values of TC, TTC, S. aureus LAB and YM were 9.98, 5.77, 5.50, 6.12, 9.78 and 4.86 log cfu mL -1 respectively. The dominant coliforms isolated from raw milk, sour milk and yoghurt samples were found to be Escherichia coli, Klebsiella pneumonia and Enterobacter cloacae. Citrobacter spp was not found in any of the analyzed samples. The wide range of the samples analyzed did not comply with the standards quality. Thus it is necessary to set up an awareness program including capacity building of all the actors working in the sector of milk and dairy products.

Zoom-koom is a popular non-alcoholic beverage in Burkina Faso, which is based on cereals and mainly produced by women with important socio-economic implications. This study aimed to evaluate the effect of controlled fermentation using two selected isolates of lactic acid bacteria (LAB) as starter cultures, on the rheological and hygienic quality of zoom-koom. The starter cultures were used singly in monoculture and both in mixed culture. Microorganisms dynamic during the controlled fermentation were followed and enumerated using pour plate methods. The titratable acidity, pH, viscosity, water, ash, crude protein (N×6.25), crude fat and total carbohydrates contents were determined on the final zoom-koom by using standards methods. Sensory analyses of zoom-koom samples were performed by a panel of 30 tasters. The enterobacteria counts of all the controlled fermented zoom-koom samples using starters cultures decreased totally and significantly (p˂0.05) from 6.4 (LAB 1), 5.5 log CFU/g (LAB 5) and 3.8 (LAB 1 and 5 in mixed culture) to ˂ 1 log CFU/g after 24 h of fermentation. However, those of natural fermentation without inoculum decreased significantly (p˂0.05) but not totally (1.4 log CFU/g after 24 h of fermentation). The aim of this study was to optimize composite breads of wheat and whole millet flour by the use of natural improvers. Three types of local malted cereals were used as natural improvers. The millet flour was fermented with EPSs producing LAB strain prior to use. The technological characteristics of the composite flours were determined using an alveograph. The physicochemical and nutritional characteristics of the composite breads were determined using standard methods and their sensory profiles were evaluated by a panel of 35 consumers. The alveograph results showed an increase in dough resistance, deformation and a decrease in extensibility and elasticity with the level of incorporation of millet flour. From the results of physico-chemical analyses of composite breads, no significant difference (p > 0.05) was observed in the use of the three types of local cereal malts except for the incorporation of 50% of the millet flour. The control sample presented the lowest acidity and dry matter value, the highest water content and pH value. No significant difference (p > 0.05) was observed in the use of the three types of cereal malts for the macronutrient contents of the composite bread samples. IntroductionAchieving nutritional goals depends on individual, organisational and environmental capacities. The aim of this study was to analyse and identify capacity gaps among the coordination platforms and networks, and the key technical institutions related to nutrition in Burkina Faso for a capacity development plan formulation.MethodsUsing the new Nutrition Capacity Framework developed by the United Nations Network, information were collected using the Nutrition Stakeholder Mapping and Analysis tool, and the Checklist for Capacity Areas. Capacity needs were analysed in terms of Human resource and infrastructure, functional, organisational, coordination and partnership, and financial and resource mobilisation.ResultsLimited human resource capacity in nutrition was highlighted in most cases by the structures, and the nutrition coordination structure and more than 4/5 of the technical structures are faced with the unavailability of working materials, tools and basic Internet connection. Only 10 among the 30 structures have a unit or service for exchange on nutrition, and only three of them have integrated nutrition actions. Shortfalls were noted in terms of functional, facilitation, communication and advocacy skills, as well as a weak diversification of resource mobilisation strategies.ConclusionThe use of the analytical framework helped to identify the gaps and to propose paths for capacity development. Efforts need to be strengthened, intensified, coordinated, monitored, evaluated and funded.
