Se analizó la calidad composicional, fisicoquímica e higiénica de la leche cruda acopiada en dos empresas procesadoras de lácteos en Cotopaxi, Ecuador, y se comparó con las normativas ecuatorianas. Se seleccionaron 10 proveedores por empresa para un total de 210 muestras por empresa colectadas en 21 días consecutivos. La calidad composicional (grasa) se midió con base a la norma INEN 0012, para la calidad fisicoquímico se utilizaron los métodos de análisis de las normas INEN 0009, INEN 0011, INEN 0013, CONVENIN 1315-79. Para la calidad higiénica se utilizó la norma AOAC 990.12 y para determinar residuos de antibiótico se usó el kit AuroFlow BTS Combo Strip Test. Las variables de acidez, materia grasa, densidad relativa, color, olor, aspecto, pH y antibiótico mostraron cumplimiento de la normativa ecuatoriana y no presentaron diferencias significativas entre las empresas receptoras. Contrariamente, el contenido de grasa y pH fueron diferentes entre las empresas (p<0.05). La calidad higiénica de la leche reportó un alto recuento de microorganismos aerobios mesófilos (7.58E+07 UFC/ml y 8.02E+07 UFC/ml) sin diferencias entre empresas. En conclusión, la mayoría de los parámetros de calidad fisicoquímica y composicional de la leche proveniente de unidades de producción familiar se ajustan a la normativa nacional, a excepción de la temperatura y la calidad microbiológica, resultados que se le atribuye a la inadecuada práctica de ordeño y almacenamiento de la leche.
Objetivo: caracterizar las granjas avícolas y la autosuficiencia de maíz y soya, en Tungurahua-Ecuador. Metodología: se realizaron entrevistas a noventa avicultores seleccionados mediante muestreo no probabilístico; se utilizó estadísticas de producción y exportaciones reportadas por la Asociación de Fabricantes de Balanceados (AFABA) y el Ministerio de Agricultura, Ganadería, Acuacultura y Pesca (MAGAP), y se calcularon índices de Tasa Media de Variación Acumulada y autosuficiencia y dependencia alimentaria. Resultados: en Tungurahua el 78% de avicultores se dedican a la crianza de aves de postura y el 62% tienen instalaciones semiautomatizadas. El 100% de maíz y soya utilizado por la avicultura de Tungurahua, procede de otras provincias e importaciones internacionales. Entre el 2007 y 2016, el maíz registró un índice de autosuficiencia promedio anual de 0.9, mientras que la soya registró 0.08. Limitaciones: la información estadística de producción nacional e importaciones de granos se encontró dispersa. Conclusiones: los resultados indican la presencia de diversos tipos de sistemas de producción avícola. Éstos, según el nivel tecnológico, van desde los artesanales hasta los automatizados. Así mismo, la producción nacional alcanza a cubrir con dificultad la demanda nacional del sector avícola, no así la soya nacional que cubre una mínima parte. Con base en éstos resultados se sugiere mantener la política de sustitución de importaciones de maíz amarillo y ampliar a la soya.
La mashua (Tropaeolum tuberosum Ruiz and Pavón) es un tubérculo comestible y domesticado en la región central de los Andes; de poca importancia comparado con otros cultivos andinos, pero con un gran potencial para ser explotado en la industria. Por tal razón, el objetivo de este estudio fue determinar las características morfológicas del almidón, harina y proteína liofilizada de cuatro genotipos de mashua cultivadas en el herbario de la Facultad de Ciencias Agropecuarias en 2018. Mediante el uso del microscopio electrónico de barrido (MEB), los resultados mostraron gránulos de harina con formas esféricas, ovaladas con diámetro mayor y menor de 6 μm y 5 μm en el genotipo amarilla (MA); 9.4 μm y 8.6 μm en el genotipo blanco (MB), 8.3 μm y 6.9 en el genotipo verde amarilla (MVA), 9.9 μm y 9.1 μm en el genotipo poza rondador (MPR). Los gránulos de almidón tienen tamaños de 7.1 μm y 6.1 μm (MA), 18 μm y 16.3 μm (MB), 8.3 μm y 7.3 μm (MVA), 7 μm y 6.5 μm (MPR) con formas esféricas, ovaladas y esféricas-truncadas. Mientras que las micrografías de la proteína liofilizada se observó láminas con tamaños de 130, 221, 224 y 237 μm (MVA, MA, MB y MPR, respectivamente). La forma ovalada y esférica se destacan en los gránulos de harina y almidón y la forma poligonal aplanada en la proteína, mientras que los de mayor tamaño fueron los genotipos MB y MPR (almidón y harina) y en el caso de la proteína MPR.
RESUMENEl efecto antimicrobiano del aceite esencial de canela (Cinnamomum zeylanicum) sobre cepas de Salmonella choleraesuis y Salmonella typhimurium fue investigado. El aceite de canela se obtuvo a través del método de destilación por arrastre de vapor y sometido a decantación, almacenándolo en refrigeración a 4 °C. Se aplicó un diseño completamente al azar con cinco tratamientos (10, 30, 50, 70, 90% de aceite de canela) y cinco repeticiones. La Concentración Mínima Inhibitoria determinada del extracto se verificó al 50, 70 y 90% del aceite. En agar Mueller-Hinton se observó cero crecimientos de colonias con respecto a la Concentración Bactericida Mínima.
