RESUMONas últimas décadas, os pesquisadores deram mais atenção aos benefícios dos alimentos fermentados para a saúde, como o Kombucha, uma bebida oriental tradicional feita geralmente de chá adoçado fermentado por um consórcio simbiótico de bactérias e leveduras. Neste trabalho, uma bactéria ácido láctica (BAL) foi isolada de um Kombucha brasileiro e identificada como Pediococcus acidilactici, usando primers da região V3-V4 do gene 16S rRNA. Testes de segurança foram realizados, incluindo resistência a antibióticos, atividade hemolítica, gelatinase, coagulase e DNAse. Os critérios de
