A carne de siri produzida em Antonina (PR) tradicionalmente é beneficiada e comercializada informalmente, em condiçõesmuitas vezes precárias. Na unidade de beneficiamento de pescado Serramar buscou-se a implantação de um modelo de produçãoindustrial. A adoção das boas práticas de fabricação é necessária para garantir a qualidade e segurança dos alimentos. O objetivo do trabalho foi verificar o efeito da adoção de medidas de boas práticas sobre a qualidade microbiológica da carne de siri beneficiada. Como instrumento de avaliação utilizou-se análise microbiológica da água de abastecimento e da carne de siri beneficiada na unidade. As amostras de carne de siri foram distribuídas em quatro grupos: grupo I – antes das alterações na higienização dos objetos e utensílios e mãos, tempo de exposição da carne de siri à temperatura ambiente e uso de luva; grupo II após adoção de medidas de boas práticas de fabricação referentes a higienização dos objetos, utensílios e mãos; grupo III após adoção das medidas de higienização, juntamente com a diminuição do tempo de exposição da carne de siri à temperatura ambiente e grupo IV posteriormente à adoção de medidas de higienização, diminuição do tempo de exposição e utilização de luva. A água de abastecimento não apresentou crescimentomicrobiológico. A análise microbiológica da carne de siri apresentou os seguintes resultados: contaminação por mesófilos e número mais provável (NMP) de coliformes totais mais alta no grupo I e decrescente à medida que foram adotadas as boas práticas. O NMP de coliformes termotolerantes foram altos no grupo I, com decréscimo nos grupos subseqüentes, havendo crescimento não esperado no grupo 4. Esse crescimento pode estar relacionado com contaminações da água do mar e cozimento inadequado. Em todas as amostras foi negativa a pesquisa de Salmonela sp. A pesquisa de Staphylococcus aureus apresentou-se em desacordo com a legislação nos 3 primeiros grupos e dentro do limite no grupo 4. Para o beneficiamento do siri a adoção de procedimentos de higienização e diminuição do tempo de exposição são insuficientes para prevenir o crescimentos S. aureus, sendo necessário o uso de luvas. Os resultados apresentados reforçam a necessidade da adoção de medidas de treinamento, capacitação pessoal e monitoramento da qualidade da água do mar e adequação de condições higiênico-sanitárias.
A educação cartográfica, fundamental para o estudo da geografia, tem sido negligenciada no ensino básico e necessita de novas ferramentas para tornar seu aprendizado mais efetivo. Diante das inúmeras transformações que o mundo atual enfrenta e dada à rapidez dessa evolução tecnológica, torna-se fundamental que a postura pedagógica dos profissionais de educação compartilhe essas mudanças nas salas de aula, através de ações e materiais didáticos que comunguem nessa mesma direção. Dessa forma, este trabalho apresenta uma contribuição para uma prática mais motivadora, associando a utilização das geotecnologias, em especial as técnicas do Sensoriamento Remoto, no ensino dos conceitos básicos da cartografia para alunos das séries iniciais do 2o segmento do Ensino Fundamental. Através de uma abordagem lúdica e interativa, as atividades propostas, de caráter prático, tiveram como objetivo principal, tornar os alunos sujeitos na construção do saber cartográfico, na busca de uma aprendizagem mais prazerosa, significativa e inclusiva. A utilização das novas tecnologias, cada vez mais presente nos dias atuais, além de contribuir para a educação cartográfica de crianças e adolescentes, possibilita uma ampliação da percepção do espaço vivido e de suas transformações. Neste contexto, a utilização e difusão de imagens de satélite como suporte para esse processo de aprendizagem no ambiente escolar pode contribuir para a formação de um cidadão mais consciente e participativo na construção de uma sociedade que possibilite a todos a garantia do atendimento de suas necessidades atuais e futuras.

Food Nutr., São Paulo, SP, v. 38, n. 2, p. 134-143, ago. 2013 In this study, we aimed to evaluate self-efficacy in a diet with reduced fat and identify stages of change in behavior for weight loss in employees of two schools in the municipality of Viçosa, Minas Gerais state. It is a crosssectional study with a sample of 21 subjects, 95% females. Weight and height were self-reported and nutritional status was obtained by the body mass index (BMI). We applied a questionnaire containing Likert Scale from 0 to 100 points to measure self-efficacy in following a diet with reduced fat. We calculated the average value of each individual: the score 0 classifies the individual as "not confident", 50 as "moderately confident", and 100 as "very confident". Algorithm was also used to identify the stages of change in behavior. Body weight was 60.75±12.73kg. Overweight and obesity accounted for 21.1% and 15.7% of the subjects analyzed, respectively. We verified that 50% of individuals did not maintain their desired weight for more than six months and that 50% actively attempted to lose weight in the last month; of these, 40% were aimed at weight loss in the following six months. Regarding stage changes, 50% of subjects were in the pre-contemplation stage; 30%, 5%, and 15% were in the preparation, action, and maintenance stages, respectively. Results showed that the individuals studied were moderately confident in following a diet with reduced fat, mean score of 40.68±21.96, and that most of them were in their pre-action stages. It is suggested that interventions be accomplished with school officials, among individuals who are in the stages of preparation and maintenance, to promote body weight reduction besides encouraging self-efficacy among the less confident. .
