Produção e estabilidade de conservação de farinha de acerola desidratada em diferentes temperaturas Production and storage stability of acerola flour dehydrated at different temperatures ResumoO objetivo deste trabalho foi identificar a melhor temperatura de desidratação para a produção de farinha de acerola de alta qualidade de consumo e estabilidade de parâmetros físico-químicos durante a conservação. Frutos de acerola 'Flor Branca' foram colhidos no estádio de maturação maduro em um pomar comercial do Vale do São Francisco, Petrolina, PE. Frutos com ou sem sementes foram sanitizados e desidratados nas temperaturas de 60 °C, 70 °C e 80 °C em estufa de circulação de ar forçado e, em seguida, foram triturados para a obtenção da farinha, a qual foi armazenada em temperatura ambiente em embalagens de polietileno herméticas. A polpa dos frutos foi utilizada para a determinação do pH, sólidos solúveis (SS), acidez titulável (AT), ácido ascórbico (AA) e umidade. A farinha de acerola foi avaliada a cada 15 dias, por um período de 75 dias, quanto ao pH, SS, AT, AA e cor. Para todas as temperaturas de desidratação, os valores de pH e SS foram semelhantes, variando entre 3,5-4,2 e 6,3-11,7, respectivamente. Os SS apresentaram menor variação ao final do armazenamento. A AT aumentou em todas as amostras variando de 5% a 10%. As perdas de ácido ascórbico foram de 76,2% e 80%, 23,9% e 55%, ou 37,9% e 65% para as farinhas com e sem sementes desidratadas a 60 °C, 70 °C e 80 °C, respectivamente. De acordo com os resultados obtidos, a melhor temperatura de desidratação é 70 °C, pois resultou em farinha com alta qualidade de consumo e estabilidade de parâmetros físico-químicos durante 75 dias de conservação. AbstractThe objective of this work was to identify the best dehydration temperature for the production of high quality acerola flour and to provide stability of the physicochemical parameters during storage. 'Flor Branca' acerolas were harvested at the red ripe stage in a commercial orchard in the São Francisco Valley, Petrolina, PE, Brazil. Fruits with or without seeds were dried at 60, 70 and 80°C in a forced air circulating oven. The dried fruits were then ground to obtain the flour, which was stored at room temperature in hermetically sealed polyethylene bags. The fresh fruit pulp was evaluated for its pH value, soluble solids (SS), titratable acidity (TA), ascorbic acid (AA) and moisture contents. The acerola flour was analysed every 15 days for 75 days for pH, SS, AT, AA and colour. For all the drying temperatures, the pH and SS showed similar levels, ranging from 3.5 to 4.2 and 6.3 to 11.7, respectively. The cultivation of acerola in Brazil is growing. The acerola fruit is known to have several properties concurrent with where it is grown. The determination of the water activity of biological products becomes essential in studies on drying, storage and packaging processes since the higher the water activity of a product, the higher the susceptibility to attacks by microorganisms. This study aimed to evaluate desorption isotherms of acerola fruits (Malpighia glabra L.) for the temperatures 30, 40 and 50 °C by the indirect static method. The experimental data were adjusted to the mathematical models BET, GAB, Halsey, and Oswin and Smith. Analyses of residues, coefficient of determination, relative standard deviation and estimated standard deviation were calculated for each adjusted model and used to evaluate the model that best adjusted to desorption isotherms. Based on the results obtained, the Smith's model represented isotherms with a higher precision for this variety of acerola.Additional keywords: drying; Malpighia glabra L.; mathematical models. ResumoO cultivo de acerola no Brasil tem-se apresentado cada vez mais crescente. O fruto da aceroleira é conhecido por apresentar várias propriedades concomitantes com o local onde é cultivada. A determinação da atividade de água dos produtos biológicos torna-se indispensável nos estudos dos processos de secagem, armazenagem e embalagem, uma vez que, quanto maior a atividade de água de um produto, mais propenso ele está ao ataque de microrganismos. Este trabalho teve como objetivo estudar as isotermas de dessorção em frutos de acerola (Malpighia glabra L.) para as temperaturas de 30, 40 e 50 o C pelo método estático indireto. Aos dados experimentais foram ajustados os modelos matemáticos de BET, GAB, Halsey, Oswin e Smith. A análise dos resíduos, do coeficiente de determinação, do erro médio relativo e do erro médio estimado, calculada para cada modelo ajustado, foi usada para se avaliar o modelo que melhor se ajustou às isotermas de dessorção. Com base nos resultados obtidos, o modelo de Smith representou essas isotermas com maior precisão para esta variedade de acerola. A B S T R A C TIncreases in room temperature may significantly influence the germination process of several plant species. It can directly interfere directly with physiological, biochemical and other activities, thus altering the maximum seed capacity to activate seedling emergence, as well as the morphological Plants. The objective of this study was to evaluate the effect of temperature on germination of three varieties of corn. It was used three different maize varieties: BRS Assum black, BRS011, and BRS033 Asa Branca. The treatments consisted of three controlled temperature: 20°C and 40°C and 30°C. The variables analyzed were percentage of germination; germination speed index; mean germination time; germination frequency; height change and stem; stem diameter; number of leaves; chlorophyll a, b, overall; fresh and dry stem, leaf and root. The Tukey test was applied at 5%, in the variables when significant. The 30°C temperature range is ideal for germination and early development of corn seedlings. The varieties studied do not differ significantly for dry mass production, except the roots, as well as the biometric variables. There are no differences between varieties in the production of chlorophyll. The temperature of 30 proved that influences the increased production of chlorophyll A and total; stem and leaves dry weight as well as the biometric variables. Podem interferir diretamente em atividades fisiológicas, bioquímicas entre outras, alterando desta forma a máxima capacidade das sementes em ativar a emergência das plântulas, bem como a formação morfológica das plantas.
