<p>The objective was to determine the willingness to pay a price premium from consumers for artisanal chocolates. The data was obtained from a survey of household heads. Artisanal chocolate incorporates knowledge transmitted by generations, which resulted in the possibility of adding value. 55 % of the interviewed know and consume bitter and semi-bitter handmade chocolates, and 92% would be willing to pay a premium. The significant variables (p ≤ 0.05) that explain the DAP a premium are schooling, household income, the quality of the cocoa and the type of toast.</p>
Objetivo: Conocer el valor comercial del chocolate casero tradicional elaborado en la Región Chontalpa, Tabasco. Diseño/metodología/aproximación: El estudio se realizó en el Ejido José María Morelos y Pavón del municipio de Cárdenas y en la Ranchería Miahuatlán del municipio de Cunduacán, Tabasco. Se aplicaron entrevistas, y se realizaron dos talleres participativos. Con dos familias cooperantes se realizó observación participativa, registro de los tiempos de trabajo, y toma de fotos y videos del proceso de elaboración del chocolate casero. Resultados: La estimación del valor comercial de un kilogramo de chocolate casero dulce fue de $290.20. El precio promedio de los chocolates caseros ofertados por los productores fue $198.60 variando de $150.00 a $300.00. El precio del chocolate dulce, ofertado por la chocolatera de Cárdenas es de $110.10. Este producto, se elabora de manera industrial y los procesos y volúmenes de producción son automatizados. Limitaciones del estudio/implicaciones: Los chocolates caseros tradicionales se elaboran con insumos de la comunidad, no se usa energía eléctrica ni fósil, en el proceso de producción se aplica experiencia personal y tecnología autóctona. El producto es de autoconsumo y los excedentes son comercializados en el mercado local. Hallazgos/conclusiones: El chocolate casero tradicional tiene un valor comercial 80.1% mayor al chocolate industrial. No obstante, por la proporción de cacao y por su sabor, olor y aroma los consumidores pagan este sobreprecio.
Objetivo: describir y analizar los conocimientos tradicionales empleados para la elaboración de chocolates artesanales en Tabasco, México. Metodología: se empleó un método de investigación analítico cualitativo. Los datos se obtuvieron a través de talleres participativos, observación directa y entrevistas a profundidad, a productores(as) rurales de chocolates. Resultados: el chocolate casero artesanal está presente en la dieta de los habitantes de la Chontalpa e incorpora saberes locales transmitidos de forma oral por generaciones. Producen para el autoconsumo y en algunos casos, comercializan el excedente. Limitaciones: futuras investigaciones sobre el tema deberán abordar la estructura de costos de producción y las preferencias de consumidores por los atributos relacionados con ingredientes locales y proceso artesanal. Conclusiones: existe un potencial nicho de mercado con consumidores locales y regionales que han perdido los saberes en la elaboración de chocolates, a los sectores que no tienen tiempo ni espacio para generar sus propios productos y un mercado de la nostalgia que se ubica en la cabecera municipal.
Objetivo: Registrar las bebidas prehispánicas y novohispanas elaboradas a base de cacao y maíz, consumidas en la región de la Chontalpa, Tabasco. Diseño/metodología/aproximación: El estudio fue realizado en comunidades rurales y urbanas de los municipios de Cunduacán, Cárdenas y Huimanguillo. Se realizó observación participativa en rituales al cacao y Día de Muertos, talleres y seis entrevistas semi-estructuradas. Se complementó con una revisión documental. La información se analizó con una matriz de importancia para determinar la preferencia de las bebidas reportadas y consumidas por la población. Resultados: Se registraron 29 bebidas a base de cacao y/o maíz, 22 prehispánicas y 7 bebidas novohispánicas. De siete bebidas a base de maíz, dos son alcohólicas, consumidas en rituales. De 14 bebidas elaboradas a base de cacao y/o maíz, cinco incluyen miel, vainilla y achiote, y una bebida es solo de cacao tostado, reportada en la literatura como el chocolate amargo. Tres bebidas son a base de cascarilla de cacao (te de cacao) y mucilago de la mazorca de cacao (atole de chaqueta). Las bebidas mayormente preferidas por la población de Tabasco son: el pozol, el polvillo de cacao, el atole de maíz y de cacao, el atole de mujer, y el chocolate amargo. Limitaciones del estudio/implicaciones: En los rituales sacralizados al cacao está prohibido grabar, tomar fotos y videos. Lo anterior limitó contar con evidencia de fotos y audios. Hallazgos/conclusiones: De las 29 bebidas reportadas a base de cacao y/o maíz, el pozol y polvillo con cacao son las de mayor preferencia. La primera es una bebida pre-hispánica que combina el cacao y el maíz.
