Globalization induces changes in the combinations of productions and activities within farming systems in all parts of the world. These changes can only be apprehended through an in-depth understanding of the mechanisms and diversity of these farming systems. Labor, as a major technical determinant of differences in competitiveness, is central in these transformations. The technical and economic analysis of labor in Andean dairy production in this paper illustrates this issue. Combining various scales of analysis of labor and productivity highlights the technical obstacles faced by Andean dairy farmers, demonstrates the technical and economic principles of these production systems, and puts them in a competitive context. This analysis also discusses the benefits of a labor-centered approach of farming systems.
Since the 1950s, the development of livestock farming in France has focused on a technical model aimed at constantly increasing the physical productivity of labour, to the detriment of value creation. A comparative study of four small agro-pastoral regions illustrates the consequences of this development model in the geographical context: falling numbers of agricultural jobs and an ebb in the share of grazing in the diet of flocks, resulting in underuse or abandon of the areas deemed most difficult, which has in turn led to closure of landscapes. Alternatives have, however, emerged, some of which seek to create more value through a frugal functional model based conversely on greater use of pastoral resources, promoting more sustainable agriculture. The limited development of these frugal agro-pastoral systems is analysed here, with the aim of identifying areas of competition and the limits of coexistence between agricultural development models.
Depuis le début des années 1990, la production laitière péruvienne est en forte croissance. Le développement des filières laitières répond à celui d’un marché protégé des importations, en expansion du fait de la croissance démographique urbaine et rendu accessible par l’amélioration du réseau routier. Il concerne les filières artisanale et industrielle qui sont liées en amont et en aval par des relations d’interdépendance et des rapports de force. A partir d’enquêtes technico-économiques auprès des éleveurs laitiers de différentes régions, cet article montre que ce développement laitier se traduit par d’importantes inégalités de revenus entre les catégories de producteurs, reflet de leur accès différencié aux ressources. Les données statistiques consultées et les entretiens réalisés avec différents acteurs des filières laitières péruviennes permettent d’évaluer les enjeux et les limites des démarches qualité mises en oeuvre dans les filières artisanales pour faire face aux industries. L’article s’interroge finalement sur l’impact des accords de libre-échange dans lesquels le Pérou est engagé sur les filières laitières nationales et conclut par des propositions de politiques d’accompagnement à ce développement laitier.
