a b s t r a c tThe effect of heat-moisture treatment (HMT) on the properties of rice starches with high-, medium-and low-amylose content was investigated. The starches were adjusted to 15%, 20% and 25% moisture levels, and heated at 110°C for 1 h. The swelling power, solubility, pasting properties, morphology, enzymatic susceptibility and X-ray crystallinity of the starches were evaluated. HMT reduced the swelling power and solubility of the starches. The strongest effect of HMT occurred on the high-amylose starch; the pasting temperature was increased and the peak viscosity, breakdown, final viscosity and the setback were reduced. HMT increased the starch's susceptibility to a-amylase and promoted a reduction in the starch relative crystallinity.
ResumoOs resíduos gerados na indústria de sucos têm sido subaproveitados, desperdiçando um produto que pode apresentar potencial para ser incluído na alimentação humana. Assim, o objetivo do estudo foi realizar análise microbiológica e da composição nutricional das farinhas do resíduo de suco de uva, maçã, laranja e acerola, com diferentes granulometrias. Os resíduos da produção de suco foram obtidos através de doação de uma indústria do município de Bento Gonçalves-RS, sendo então secos e moídos para obter a farinha em diferentes granulometrias (>0,600 mm; 0,600 mm; 0,425 mm; 0,300 mm; ≤0,250 mm). As amostras de farinha foram submetidas à análise de composição centesimal, acidez, pH, Brix e polifenóis totais. As análises microbiológicas incluíram contagem de coliformes termotolerantes e pesquisa de Salmonella spp. Os resultados indicaram qualidade microbiológica satisfatória. Quanto à composição centesimal, os resultados mostraram que a granulometria influenciou o valor nutricional das farinhas e que os valores energéticos das farinhas do resíduo de acerola, laranja e uva foram inversamente proporcionais ao tamanho da partícula. Todas as farinhas analisadas podem ser consideradas ricas em fibras, cujos valores variaram de 11,2% a 54,5%. As farinhas de uva e acerola apresentaram maiores teores de proteínas, 8,2% a 15,6% e 8,3% a 12,1%, respectivamente. As farinhas do resíduo de laranja e uva apresentaram elevados teores de polifenóis totais. Portanto, o uso destes resíduos na alimentação humana pode ser recomendado, melhorando o valor nutricional de preparações. SummaryResidues obtained from the juice industry have been underused, wasting a product that might present potential to be included in food for humans. Thus the objective of the present study was to carry out microbiological and nutritional compositional analyses of the flours made from grape, apple, orange and acerola juice residues, with different granulometries. The juice residues were obtained by donation from an industry in Bento Gonçalves (RS/Brazil), dried and ground in order to obtain flours with different granulometries (>0.600, 0.600 mm, 0.425 mm, 0.300 mm and ≤0.250 mm). The flour samples were submitted to an analysis of the proximate composition, acidity, pH, °Brix and total polyphenols. The microbiological analysis consisted of enumerating heat tolerant coliforms and testing for the presence of Salmonella spp. The results indicated satisfactory microbiological quality. The proximate composition showed that granulometry influenced the nutritional values of the flours and that the energy values of flours obtained from acerola, orange and grape residues were inversely proportional to the particle size. ResumoA proposta deste estudo foi desenvolver e avaliar as características nutricionais, físicas e sensoriais de um biscoito, elaborado com substituição parcial da farinha de trigo por farinha de quinoa, além de analisar as características nutricionais das farinhas de trigo e quinoa. Foram elaboradas formulações de biscoito padrão (100% de farinha de trigo) e com substituição de farinha de trigo nas concentrações de 10%, 20% e 30% de farinha de quinoa. Os biscoitos foram avaliados quanto aos parâmetros químicos, físicos e de textura, além de atributos sensoriais. As farinhas foram avaliadas quanto à composição centesimal. Os atributos de diâmetro, espessura, fator de expansão, volume específi co, rendimento e dureza mostraram-se bastante similares entre o biscoito padrão e as formulações com farinha de quinoa, o que indicou que a farinha de quinoa é bem incorporada à massa dos biscoitos. Conforme se aumentou a concentração, de 10 até 30% de farinha de quinoa, os biscoitos apresentaram maior maciez. Note-se que a nota no teste de aceitabilidade para todos os atributos variou entre seis e sete, não diferindo entre as formulações, indicando que a adição de até 30% de farinha de quinoa não altera as características sensoriais do biscoito. Assim, a substituição parcial de farinha de trigo por farinha de quinoa incrementou o valor nutricional dos biscoitos. A composição centesimal da farinha mostrou que a quinoa apresenta maiores teores de proteína, lipídios, fi bras e cinzas, em comparação ao trigo. SummaryThe purpose of this study was to develop and evaluate the nutritional, physical and sensory characteristics of a cookie made with partial replacement of the wheat fl our by quinoa fl our, and to analyze the nutritional characteristics of the wheat and quinoa fl ours. Formulations were drawn up of a biscuit with 100% of wheat fl our and with replacement of the wheat fl our by quinoa fl our at concentrations of 10%, 20% and 30%. The cookies were evaluated with respect to their chemical, physical and texture parameters and sensory attributes, and the fl ours for their proximate composition. The attributes of diameter, thickness, spreading factor, specifi c volume, hardness and yield were quite similar between the standard cookie and the formulations with quinoa fl our, indicating that the quinoa fl our was well incorporated into the biscuit dough. As the concentration increased from 10 to 30% of quinoa fl our, the hardness of the cookies decreased, and the score in the acceptability test for all the attributes ranged between six and seven. There was no difference between the formulations showing that the addition of up to 30% quinoa fl our did not change the sensory characteristics of the cookies. Thus, the partial replacement of wheat fl our by quinoa fl our increased the nutritional value of the cookies. Introdução: Devido ao fato de que muitas pessoas são intolerantes à lactose, novas propostas de preparações dietéticas com bons atributos sensoriais e isentas deste dissacarídeo são necessárias para garantir bem-estar e qualidade de vida para estes indivíduos. Objetivo: desenvolver sorvete com extrato hidrossolúvel de arroz. Método: Foram produzidos sorvetes com 50% e 100% de substituição do leite bovino por extrato hidrossolúvel de arroz em dois sabores (morango e chocolate). Os métodos para o desenvolvimento deste estudo basearam-se na análise físico-química do sorvete, bem como a análise sensorial para definir o nível de aceitação do produto e preferência por parte dos consumidores. Resultados: Os sorvetes de extrato hidrossolúvel de arroz, tanto de chocolate, como de morango obtiveram maiores teores de carboidratos e menores valores energéticos, devido ao fato de ter menor teor de proteína e lipídio, em comparação com o sorvete feito com leite bovino. Obteve-se boa aceitação, sendo que o sorvete de 50% extrato de arroz sabor morango não obteve diferença significativa do sorvete com 100% de leite de bovino, em relação à preferência. Conclusão: Conclui-se que o sorvete com extrato hidrossolúvel de arroz é um produto com boas características nutricionais e tem boa aceitação, podendo ser uma opção para pessoas intolerantes à lactose.
