The increasing demands for foods with fresh‐like characteristics, lower synthetic additive and preservative contents, and low environmental footprint, but still safe to consume, have guided researchers and industries toward the development of milder processing technologies and more eco‐friendly packaging solutions. As sustainability acquires an increasingly critical relevance in food packaging, bio‐based and/or biodegradable materials stand out as suitable alternatives to their synthetic counterparts. In this context, the use of nanoemulsions has represented a step forward for improving the performance of sustainable food packaging devices, especially for the successful incorporation of new compounds and functionalities into conventional films and coatings. This class of emulsions, featuring unique optical stability and rheological properties, has been developed to protect, encapsulate, and deliver hydrophobic bioactive and functional compounds, including natural preservatives (such as essential oils from plants), nutraceuticals, vitamins, colors, and flavors. This article presents the surfactants (including naturally occurring proteins and carbohydrates), dispersants, and oil‐soluble functional compounds used for designing food‐grade nanoemulsions intended for packaging applications. The improved kinetic stability, bioavailability, and optical transparency of nanoemulsions over conventional emulsions are discussed considering theoretical concepts and real experiments. Bottom‐up and top‐down approaches of nanoemulsion fabrication are described, including high‐energy (such as high‐pressure homogenizers, microfluidics, ultrasound, and high‐speed devices) and low‐energy methods (for instance, phase inversion and spontaneous emulsification). Finally, incorporation of nanoemulsions in biopolymer matrixes intended for food packaging applications is also addressed, considering current characterization techniques as well as their potential antimicrobial activity against foodborne pathogens.

Polyamidic nanofibrous membranes containing gated silica mesoporous particles, acting as carriers, are described as novel hybrid composite materials for encapsulation and oncommand delivery of garlic extracts. The carrier system consists of MCM-41 solids functionalized in the outer surface, with linear polyamines (Solid P1) and with hydrolyzed starch (Solid P2), both acting as molecular gates. Those particles were adsorbed on electospun nylon-6 nanofibrous membranes yielding to composite materials M1 and M2. FE-SEM analysis confirmed the presence of particles incorporated on the nylon nanofibers. The release of the entrapped molecules (garlic extract) from the P1, P2, M1 and M2 materials was evaluated using 2 cyclic voltammetry measurements. Electrochemical studies showed that at acidic pH P1 and M1 were unable to release their entrapped cargo (closed gate), whereas at neutral pH both materials release their loading (open gate). Dealing with P2 and M2 materials, in the absence of pancreatin a negligible release is observed (closed gate), whereas in the presence of enzyme the load is freely to diffuse to the solution. These newly developed composite nanomaterials, provide a homogeneous easy-to-handle system with controlled delivery and bioactive-protective features, having potential applications on pharmacology, medical and engineering fields INTRODUCTION

The effect of chitosan‐based coatings containing ethanolic extracts of propolis (EEPs) on the quality of chill‐stored, vacuum‐packed fillets of cachama, an emerging aquaculture species of fish native to the Amazon basins, was evaluated. Coatings were prepared by adding propolis to chitosan following two different strategies: (1) incorporation of microencapsulated EEP and (2) direct incorporation of EEP. Fillets were dip‐coated, vacuum‐packed in medium‐oxygen barrier bags, stored at 4°C, and their quality was evaluated during 20 days, by monitoring lipid oxidation indexes, physicochemical parameters, microbiological quality indicators, texture profile, and sensory acceptance. Chitosan‐EEP coatings significantly increased the time stability of physicochemical, microbiological, and sensory quality indicators of the fish meat compared with control treatments (uncoated vacuum‐packed fillets). In particular, the secondary lipid oxidation of the coated muscles was 12% to 15% lower compared with uncoated samples after 12 days; pH and total volatile base nitrogen (TVB‐N) presented a slower increase in the coated samples; and a greater inhibition of coliforms was observed between days 8 and 16. The chitosan‐EEP coatings had a positive effect in both texture stability and sensory acceptance of the products during storage. Moreover, chitosan coatings with encapsulated EEP had better impact on the evaluated sensory quality parameters. The results indicate that the combination of the barrier properties of chitosan with the bioactive properties of propolis compounds against oxidative free radicals and microbiological deterioration allowed for the edible coatings to extend the shelf life of this aquaculture product with respect to conventionally vacuum‐packed fillets.

Quantitative analysis of carotenoids has been extensively reported using UV-Vis spectrophotometry and chromatography, instrumental techniques that require complex extraction protocols with organic solvents. Fourier transform infrared spectroscopy (FTIR) is a potential alternative for simplifying the analysis of food constituents. In this work, the application of FTIR with attenuated total reflectance (ATR) was evaluated for the determination of total carotenoid content (TCC) in Cucurbita spp. samples. Sixty-three samples, belonging to different cultivars of butternut squash (C. moschata) and pumpkin (C. maxima), were selected and analyzed with FTIR- ATR (attenuated total reflectance). Three different preparation protocols for samples were followed: homogenization (A), freeze-drying (B), and solvent extraction (C). The recorded spectra were used to develop regression models by Partial Least Squares (PLS), using data from TCC, determined by UV-Vis spectrophotometry. The PLS regression model obtained with the FTIR data from the freeze-dried samples, using the spectral range 920–3000 cm−1, had the best figures of merit (R2CAL of 0.95, R2PRED of 0.93 and RPD of 3.78), being reliable for future application in agriculture. This approach for carotenoid determination in pumpkin and squash avoids the use of organic solvents. Moreover, these results are a rationale for further exploring this technique for the assessment of specific carotenoids in food matrices.
