In birds [24] it may be present in amounts up to 150 pg/g in the skin, 50 pg/g in the blood and 30 pg/g in the liver. The mechanisms of its formation in the body and of its excretion are controversial. Under the influence of intestinal bacteria, in particular of Escherichia colz and A erobactev aerogenes, which are able to acetylate histamine, a histamine conjugate is formed [68] with the consequent appearance of acetylhistamine in the faeces. The liver may also possibly be involved in histamine excretion from the body. Experimental investigations [zo] have shown that histamine occurs in rats which have been reared in sterile conditions and whose intestinal content is germfree. In this case females excrete the histamine conjugate while in males the excretion of free histamine prevails.Various

IENISTEA DK576.8.07:664 Bakterien-Gehalt, Lebensmittel Die Notwendigkeit der Lebensmitteluberwachung im Interesse der Volksgesundheit reicht weit in die Geschichte der Menschheit zuruck. Schon friih wurde hierzu die organoleptische Untersuchung verwendet ; spaterhin, als sich die physikalisch-chemischen Untersuchungen auf dieses Gebiet erstreckten, wurden Untersuchungen und Beurteilung vervollkommnet. Erst gegen Ende des 19. Jahrhunderts wurde die Frage nach der Abbautatigkeit der Lebensmittelkeime aufgeworfen. Die Entdeckung mikrobiologischer Verfahren zur Isolierung und Zahlung van Keimen hat zur praktischen Anwendung gefiihrt. Zahlreiche Forscher begannen, sich rnit den Eigenschaften des Trinkwassers, des Eises. der Milch und Milcherzeugnisse usw. zu befassen. Unter den ersten derartigen Studien an Lebensmittelprodukten sind die Beobachtungen LOFPLERS (1887) zu erwahnen [IS], der rnit Bezug auf die in der Milch auftretenden Bakterien erwahnte, da13 die ersten Kenntnisse hieruber aus dem Jahre 1840 stammten, als FWHS einen Vibrio beschrieb, der der Milch eine blaue Farbung verleiht. DUCLAUX [5] veroffentlichte 1888 ein Buch uber die chemische und bakteriologische Untersuchung der hfilch. Die Forschungen iiber die Qnalitat und Verunreinigung von Lebensmitteln stellten die Notwendigkeit von mikrobiologischen Testen heraus; hierzu werdensowohl in der laufenden Kontrolle als auch zur Kontrolle ihrer Herstellungverwendet : einmal Zahl der vorhandenen Keime, d. h. ihre Gesamtzahl im Verhaltnis zu Oberflachen-, Gewichts-oder Volumeneinheit, ferner Testbakterien zur Ermittlung von Faekalverunreinigung, schlieBlich auch verschiedene andere Keime. die nnerwiinschte Veranderungen hervorrufen und dadurch Qualitat und Nahrwert vermindern [9]. Hinsichtlich der Zielsetzung der skizzierten Verfahren zur Ermittlung von Keimen konnen 3 Gruppen von mikrobiologischen Testen unterschieden werden. Die ersten z Gruppen befassen sich rnit Keimen, die als Test fur eine Verunreinigung durch eine dem menschlichen Organismus schadliche Mikroflora zu betrachten sind: sog. sanitare und hygienische Teste; die dritte Gruppe umfaDt Keime, die auf die Qualitat eines Erzeugnisses hinweisen, das sind die sog. mikrobiologischen Qualitatsteste. Dev quantitative Keimgehalt bei der rnikrobiologischen Lebensmitteluntersuchung und Beurteilung Die Bestimmung der Gesamtzahl der vorhandenen Keimemit Ausnahme der industriellen Mikroflorakann einen Hinweis auf den Grad der Verunreinigung liefern. Die Mikroflora stammt aus dem umgebenden Milieu und vermag zu unerwiinschten Veranderungen zu fuhren. Die quantitativ mikrobiologischen Beobachtungen haben recht bald sowohl zu hygienischen Deutungen als auch ziir Feststellung mikrobiologischer Normen fur Lebensmittel gefiihrt. So erschien 1893 der erste Standard, der die Anzahl der Bakterien in \'orzugsmilch auf hochstens zoooo/ml [2,4] begrenzte. Es wurde untersucht, inwiefern Tiefkühlung und Aufbewahrung bei −20 °C die in Zellophan verpacktem Schweinehackfleisch befindlichen Enterokokken beeinflussen. Insgesamt 219 Proben aus 37 verschiedenen Chargen von Schweinehackfleisch wurden geprüft. In dem genannten Produkt befanden sich 45–140000 Enterokokken je 1 g. Zum Unterschied von der Gesamtzahl der aeroben mesophilen und psychrotrophen Bakterien sowie auch der coliformen Bakterien, die während der Tiefkühlung und Lagerung bei −20 °C stetig und erheblich sinkt, erleidet die Enterokokkenzahl keine bedeutenden Veränderungen. Die 301 isolierten Enterokokkenstämme gehören zu den Arten Str. faecalis, Str. faecalis v. liquefaciens, Str. faecalis v. zymogenes und Str. faccium. Nach Tiefkühlung und Lagerung des Fleisches in diesem Zustand wird ein zahlenmäßiger Anstieg der atypischen Enterokokkenstämme beobachtet. Die Methylenblau‐Reduktion erfolgt mit deutlicher Verspätung. Das Phagenspektrum bleibt bei den Untersuchungen unverändert; es wird auf die Bedeutung der Lysotypie für die Enterokokkenidentifizierung und für epidemiologische Befunde hingewiesen. Als äußerster zulässiger Grenzwert werden 1000 Enterokokken je 1 g gefrorenes Hackfleisch vorgeschlagen.
Bei 148 Backwarenproben (Kremschnitten, Schokoladengebäck) aus verschiedenen Konditoreien konnte B. cereus in 32,4% der Fälle isoliert werden; die Keimzahl schwankte zwischen 10 und 1000/g. Als besonders nützlich hat sich die natürliche Anreicherung der Backwaren durch 24std. Lagerung bei 21 und 32 °C erwiesen; hierbei wird die Bakterienvermehrung sowie die Sporenbildung gefördert. Es sind 137 B.‐cereus‐Stämme isoliert und identifiziert worden, davon waren 134 gegenüber Mäusen pathogen.
