A busca por um estilo de vida saudável vem aumentando e atingindo cada vez mais indivíduos que procuram alimentos que se adequem a esse quesito, como os da culinária japonesa. Apesar dos pratos serem considerados benéficos a saúde, a característica altamente perecível, pela presença do peixe cru, aliado a um preparo com elevada manipulação, aumenta os riscos de contaminação. Assim, considerando que o sushi é o prato tradicional japonês mais conhecido no mundo, identificado como peixe cru, justifica-se a necessidade do estudo dos perigos inerentes a este alimento. Nesse contexto, a qualidade sanitária de amostras de sushis (n=15) à base de salmão preparados em restaurantes (n=5) especializados em culinária japonesa da região do Brejo Paraibano (Brasil) foi investigada, tendo como modelos microbiológicos: contagem de coliformes e de coliformes termotolerantes, contagem de microrganismos aeróbios mesófilos e de bolores, contagem de estafilococos coagulase positivo, contagem de Bacillus cereus e pesquisa de Salmonella spp. A avaliação da qualidade e segurança microbiológica baseou-se na metodologia estabelecida pela American Public Health Association (APHA). Verificou-se que 53,3% das amostras apresentaram contagem de coliformes termotolerantes acima dos limites estabelecidos pela legislação brasileira. A contagem de microrganismos aeróbios mesófilos e bolores tiveram valores que variaram de 8x102 a 4,5x105 UFC/g e de 2,4x102 a 2,4x105 UFC/g, respectivamente. Quanto aos patogénicos, 6,6% das amostras tinham contagem de estafilococos coagulase positivo acima do limite (>5x103 UFC/g) e, em 13,3%, presença de Salmonella spp. Não houve crescimento de B. cereus em nenhuma das amostras. De acordo com os dados obtidos, medidas higiênico-sanitárias mais rigorosas devem ser adotadas, a fim de controlar os possíveis riscos potenciais à saúde do consumidor. A procura por vegetais prontos para consumo e com características semelhantes às do produto fresco tem crescido de maneira significativa, destacando-se o mercado dos vegetais minimamente processados, que são definidos como quaisquer frutas ou hortaliças que foram alteradas fisicamente a partir de sua forma original e mantidas em seu estado fresco. Nesse contexto, o presente estudo teve como objetivo avaliar a contaminação microbiológica de frutas e hortaliças minimamente processadas comercializadas na região metropolitana de João Pessoa, Paraíba, Brasil, através de indicadores de higiene (contagem de coliformes totais e termotolerantes) e de patogenicidade (contagem de estafilococos coagulase positivo e pesquisa de Salmonella spp.). Cinco espécies de frutas, e três de hortaliças, foram coletadas semanalmente, e durante 3 semanas consecutivas nos hipermercados locais, totalizando 24 amostras. Seguindo critérios amostrais de acesso livre e intencional, os produtos foram escolhidos de acordo com a disponibilidade das frutas e hortaliças minimamente processadas nos hipermercados, estando acondicionadas em bandejas de poliestireno expandido, envoltas por filme de polietileno e armazenadas em balcões refrigerados. Toda a avaliação baseou-se nos métodos preconizados pela American Public Health Association (APHA). Verificou-se que nenhuma amostra apresentou contagem de coliformes termotolerantes acima dos limites estabelecidos pela legislação brasileira. A contagem de coliformes totais tiveram valores que variaram de < 3 NMP/g à 93 NMP/g nas frutas e de < 3 NMP/g à 39 NMP/g nas hortaliças. Quanto aos patogênicos, 87,5% tinham contagem de estafilococos coagulase positivo acima de 103 UFC/g e, em 20,8%, presença de Salmonella spp. Os resultados obtidos revelaram produtos de baixa qualidade e/ou inaceitáveis, e que medidas eficazes de controle higiênico-sanitárias devem ser adotadas para minimizar os riscos à saúde dos consumidores.
