As frutas oriundas dos biomas Amazônia e Cerrado, como açaí (Euterper oleracea) e a bacaba (Oenocarpus bacaba), são apreciadas por seus sabores exóticos, potencial nutricional e funcional. À busca por alimentos saudáveis e a descoberta de nutrientes de cunho funcionais existentes nos resíduos frutícolas, fez com que aumentasse a relevância por subprodutos derivados das cascas e caroços ou sementes, levando para o crescimento da indústria alimentícia. Logo, o objetivo do estudo foi produzir farinha a partir do caroço de açaí e da casca da bacaba, bem como sua caracterização física, química e tecnológica. O caroço de açaí foi adquirido na cidade de Imperatriz (MA) e a bacaba foi obtida na Aldeia Pedra Branca Terra Indígena Krahô no estado do Tocantins. Os resíduos foram secos em estufa com circulação de ar, na temperatura de 50ºC. As farinhas oriundas do caroço de açaí e da casca da bacaba apresentaram valores consideráveis de nutrientes, sendo uma boa fonte de proteínas, lipídios e carboidratos, além de apresentar baixa umidade e pH ácido contribuindo como barreira contra o crescimento de microrganismos. Os valores de cinza obtidos em ambas as farinhas estão de acordo com a legislação brasileira. A farinha do caroço de açaí e da casca da bacaba apresentaram baixa luminosidade e os valores de chroma (C*) e ângulo de hue (h*) indicaram uma coloração avermelhada para todas as farinhas. Os resultados das análises tecnológicas, como índice de absorção e de solubilidade, mostram potencial para elaboração de novos alimentos.
A massa caseira tipo talharim apresenta elevados teores de carboidratos e baixas quantidade e qualidade proteica. Todavia, é um dos alimentos mais consumidos pela população. Diante disso, este trabalho tem como objetivo avaliar massas frescas tipo talharim formuladas com diferentes concentrações de farinha de marisco. Foram desenvolvidas cinco tipos de massas, sendo uma amostra de macarrão tradicional, três amostras com diferentes concentrações de farinha de marisco (5%, 10% e 15%) e uma amostra com a associação entre farinhas de marisco e linhaça (5% + 5%). As amostras foram analisadas quanto aos teores de umidade, lipídios, proteínas, fibras, cinzas, carboidratos e valor calórico total do produto. Foi adotado um delineamento inteiramente casualizado com três repetições. As formulações com maior concentração de farinha de marisco apresentaram maiores teores de proteína e cinzas e menor teor de carboidratos. O acréscimo da farinha de linhaça dourada na massa do macarrão com marisco proporcionou um aumento nos teores de fibra bruta e lipídeos. O enriquecimento da massa de talharim com diferentes concentrações de farinha de marisco aumentou o valor proteico do produto, representando uma alternativa para agregar valor nutricional ao alimento.
Bacaba (Oenocarpus distichus Mart) is a fruit that comes from palm trees native from the Arecaceae family and presents important nutritional and socioeconomic value for rural communities. Although being very popular, this fruit has very few cataloged chemical characteristics. The present study aimed to optimize the bacaba antioxidant extraction process by investigating the most efficient extraction interval and the best rotation time, using ethanol and methanol/acetone solvents, with the content of total phenolics and antioxidant activity. Methanol acetone solvent mixture was the most efficient solvent for extracting antioxidants from bacaba, with an extraction time of 90 minutes and 20 minutes of rotation interval at 5,000 rpm.
O cajá-manga (Spondias dulcis) é um fruto com elevado valor nutricional e compostos antioxidantes, estes agem na prevenção do estresse oxidativo causados por radicais livres e na redução dos riscos de doenças crônicas não transmissíveis. A determinação de compostos antioxidantes é difícil, pois diversos fatores interferem na eficiência de sua extração, levando a perda de compostos ativos. O objetivo do presente estudo consistiu na otimização do método de extração de compostos antioxidantes utilizando metodologia de superfície de resposta. As amostras foram submetidas a testes em que variam a relação: amostra: concentração do solvente, intervalo de extração, tempo de rotação e velocidade de rotação. Não houve diferenças significativa nos resultados em relação ao tempo de rotação, velocidade de rotação e a interação desses com as demais variações para a determinação da atividade antioxidante; no entanto, as diferentes concentrações do solvente e intervalo de extração, e a interação concentração do solvente x intervalo de extração foi significativo e afetaram a atividade antioxidante.
