RESUMONo Rio Grande do Sul, desde 1993 a salmonelose tem sido a Doença Transmitida por Alimentos (DTA) de maior ocorrência, assim como em outros estados brasileiros e países da Europa e Américas. Mudanças nos sistemas de produção de alimentos e pressão social têm levado ao aumento da incidência de DTA. O presente trabalho teve por objetivo analisar a ocorrência de surtos de salmonelose Transmitidas por Alimentos ocorridos no Rio Grande do Sul no ano de 2000, destacando os principais alimentos envolvidos e os fatores implicados nestes surtos. Foram analisados 99 relatórios finais de investigação de surtos. A salmonelose correspondeu a 74,7% dos surtos confirmados, sendo 72,2% dos surtos associados ao consumo de alimentos preparados com ovos. A utilização de matéria-prima sem inspeção sanitária e a manipulação incorreta dos alimentos constituíram-se nos fatores predisponentes à contaminação dos alimentos por Salmonella, em 73% dos surtos investigados. Os alimentos envolvidos nos surtos de DTAs foram preparados (48,6%) e consumidos (55,4%), em sua maioria, em residências. Os resultados do presente estudo sugerem a necessidade de controle da Salmonella nas aves, a partir da granja, e da adoção de boas práticas de fabricação. ABSTRACTIn Rio Grande do Sul, since 1993 salmonelosis has been the food borne disease of major occurrence. Salmonelosis is one of the most important public health hazards in many countries. Changes in the systems of production of foods and social pressure have led to the increase of the food poisoning incidence. The aim of this work was to verify the salmonelosis foodborne outbreaks occurred in Rio Grande do Sul in 2000. 99 final reports of outbreak inquiry had been analyzed. Salmonelosis corresponded to 74.7% of the outbreaks confirmed. Most of these outbreaks (72.2%) were associated with the consumption of raw eggs. The raw material use without sanitary inspection and the incorrect manipulation of foods had consisted in the factors what contributed to the contamination of foods of Salmonella, in 73% of the outbreaks investigated. Usually, the foods had been prepared (48.6%) and consumed (55.4%) in residences. The results of the present study suggest the need of more control of these bacteria in poultry production and the adoption of good manufacturing practices.
ResumoA utilização de antimicrobianos, de maneira excessiva e indiscriminada na produção animal intensiva, tem desencadeado o aumento no número de microrganismos resistentes, os quais podem ser transportados para ambientes aquáticos. O objetivo do presente estudo foi determinar o perfil de resistência a antimicrobianos de isolados de Escherichia coli obtidos de águas subterrâneas e superficiais em região de produção de suínos. Através do teste de suscetibilidade antimicrobiana foram analisadas 205 linhagens de E. coli. Observou-se, maior índice de resistência ao cefaclor tanto em águas superficiais (51,9%) quanto subterrâneas (62,9%), enquanto todas as amostras foram sensíveis à amicacina. O percentual de amostras multirresistentes foi de 25,96% e 26,73% em águas superficiais e subterrâneas, respectivamente; enquanto 19,23% e 13,86% foram sensíveis a todos os antimicrobianos testados. Determinou-se que o índice de resistência múltipla aos antimicrobianos (MAR) foi de 0,164 para águas superficiais e 0,184 para subterrâneas. Não foram verificadas diferenças significativas no perfil de resistência a antimicrobianos em linhagens de E. coli isoladas em água superficiais e subterrâneas, mas o índice MAR calculado em pontos de água subterrânea podem oferecer risco potencial de transmissão de genes de resistência. The use of antibiotics, so excessive and indiscriminate in intensive animal production, has triggered an increase in the number of resistant microorganisms which can be transported to aquatic environments. The aim of this study was to determine the profile of the antimicrobial resistance of samples of Escherichia coli isolated from groundwater and surface water in a region of pig breeding. Through the test of antimicrobial susceptibility, we analyzed 205 strains of E. coli. RESUMOA população microbiana mesófila em águas subterrâneas e superficiais em localidades onde há criação intensiva de suínos tem sido pouco estudada. Este estudo teve como objetivo analisar a diversidade de comunidades de mesófilos aeróbios de águas do rio Suruvi e seus afluentes de poços profundos em propriedades produtoras de suínos localizadas no município de Concórdia, estado de Santa Catarina. As cepas bacterianas foram classificadas de acordo com suas características microscópicas e por testes bioquímicos. Na análise morfológica, observou-se predomínio de colônias com elevação convexa, bordos inteiros, puntiforme, pigmentação ausente e opaca, em ambos os grupos amostrados (águas subterrâneas e superficiais). Observou-se um percentual de 13,7% e 39,9% de cepas bacterianas com características do grupo de bactérias entéricas nas águas subterrâneas e superficiais, respectivamente. Verificou-se que os índices de eqüitabilidade de águas subterrâneas (0,2199 a 0,5423) foram significativamente maiores (p=0,003) que aqueles observados em águas superficiais (0,1154 a 0,2273). Porém, o mesmo não foi observado em relação à diversidade (p>0,05). As águas superficiais apresentaram uma maior quantidade de bactérias mesófilas, inclusive o grupo das entéricas comparado com as águas de poços profundos, indicando maior suscetibilidade das coleções de superfície a alterações na microbiota.Descritores: diversidade bacteriana, dejetos suínos, microrganismos mesófilos aeróbios. ABSTRACTThe mesophilic bacterial population of surface waters in sites of intense pig husbandry has been but scarcely investigated. This study aimed to analyze the diversity of aerobic mesophilic communities in the waters of the Suruvi river and its tributary rivers, as well as in waters of deep wells built in pig farms in the municipality of Concórdia, state of Santa Catarina, Brazil. Bacterial strains isolated were classified according to microscopic characteristics and biochemical tests. The morphologic analysis revealed the prevalence of dull, punctiform cultures of convex elevation, entire margins, but no chromogenesis in both water samples analyzed (underground and surface). Strains that were characterized as enteric bacteria were present as 13.7 and 39.9% in underground and surface waters, respectively. Equitability indices for underground waters (0.2199 to 0.5423) were significantly higher as compared to those indices observed for surface waters (0.1154 to 0.2273). The objective of this study was to assess the antibiotic resistance pattern in Salmonella strains isolated from sausages and pork cuts processed in the same slaughterhouse in Rio Grande do Sul, Brazil. The agar diffusion method was used to test ten different serovars isolated from sausages (n= 127) or from pork cuts (n=62) against 14 antimicrobial drugs. Resistance to sulphonamide (54.0%), tetracycline (35.4%), streptomycin (31.2%), nalidixic acid (28.0%), sulphametoxazole/trimethoprin (24.9%), neomycin (22.2%), chloramphenicol (22.2%), ampicillin (20.6%), tobramycin (19.6%), cefaclor (14.3%), gentamicin (9.5%), amoxacillin/clavulanic acid (5.8%), amikacin (4.2%) and ciprofloxacin (2.1%) was observed. The multiresistance pattern (resistance against at least four antibiotics) was found in 39% of Salmonella strains. The multiresistance pattern was more common in pork cut isolates (62.9%) than in sausage isolates (27.5%). Strains of S. Bredeney and S. Panama, the two most isolated serovars in this study, showed the highest number of multiresistant strains (39.3% and 42.5%, respectively).
