ResumoO presente trabalho teve como objetivo estudar as propriedades reológicas, de cor e a cinética do processo de desidratação osmótica, a pulso de vácuo, de fatias de manga. As fatias de manga foram imersas em soluções hipertônicas de sacarose, nas concentrações de 45, 55 e 65 °Brix com temperatura controlada (20 e 30 °C). No início do processo, aplicou-se ou não um pulso de vácuo, utilizando as pressões de 50 e 100 mbar por 10 minutos. As frutas foram desidratadas por 5 horas, sendo avaliadas em diferentes tempos em relação à perda de peso, perda de água, ganho de sólidos, a w , cor e propriedades reológicas (tensão e deformação na ruptura). O aumento da concentração e da temperatura da solução causou um aumento na perda de peso e de água enquanto que a incorporação de solutos foi favorecida em baixas concentrações e altas temperaturas e com a aplicação do pulso de vácuo. O amaciamento do produto, caracterizado pela diminuição da tensão máxima de ruptura, e o aumento da deformação na ruptura da amostra ocorreram nas condições de maior incorporação de solutos. AbstractThe aim of this work was to study rheological and colour properties and process kinetics of mango slices subject to pulsed vacuum osmotic dehydration. The slices were immersed in osmotic sucrose solutions (45, 55 and 65 °Brix) at 20 or 30 °C. At the beginning, a sub-atmospheric pressure was applied or not to the solid-liquid system (50 or 100 mbar of pressure) for 10 minutes followed by an atmospheric pressure operation up to 5 hours. Fruit samples were evaluated after pre-determined times in terms of weight loss, water loss, solids gain, a w , colour and rheological properties (stress and strain at rupture). The concentration and temperature increases lead to a weight and water reduction. Solid gain was favoured by lower concentration and a higher temperature and by the pulsed vacuum application. The sample softening, which is characterized by a reduction of maximum stress at rupture, and the increased stress on strain at rupture ocurred at the great solids updake conditions. The colour parameters did not change during the dehydration process.
-INTRODUÇÃONo projeto de equipamentos e nos processos que envolvem transferência de calor, tais como: secagem, refrigeração, congelamento, evaporação e aquecimento, torna-se de grande importância o conhecimento das propriedades termofísicas dos materiais. Em especial, quando se deseja conhecer o tempo de duração de um dado processo, os coeficientes fenomenológicos do material precisam ser conhecidos.Os métodos que podem ser usados na determinação experimental da condutividade térmica são classificados genericamente em regime permanente e regime transiente. No primeiro, os valores locais da temperatura são constantes em relação ao tempo e, no segundo, os valores locais da temperatura variam em relação ao tempo.O método em regime permanente apresenta a desvantagem de requerer muito tempo para realizar o experimento, o que pode causar migração de umidade da amostra, principalmente para materiais biológicos, além de erros devido à resistência de contato entre a parte metálica e a amostra e perdas de calor ao ambiente.Os coeficientes fenomenológicos cujo conhecimento é importante são: K t , K m , D m e D t , ocorrendo em equações de transferência simultânea de massa e de calor, onde K t é a condutividade térmica, D m é a difusividade de massa, D t é o coeficiente de migração da umidade induzida pelo gradiente de temperatura (efeito Soret) e K m é o coeficiente de transferência de calor induzida pelo gradiente de umidade (efeito Dufour). A determinação desses coeficientes visa avaliar o efeito do gradiente de temperatura na migração de umidade em diferentes tipos de alimentos.Uma forma de se determinar estes coeficientes é através dos equipamentos de coluna aberta e de coluna fechada, construídos por SHIKI & PARK [4].Neste trabalho, foram determinados os coeficientes K t, K m, D t e D m para grãos triturados de soja através da utilização dos equipamentos de coluna fechada e de coluna aberta.Foram avaliadas três diferentes granulometrias com diferentes dimensões de corpos-de-prova, a fim de se determinar a influência dos mesmos sobre a condutividade térmica e a difusividade mássica do material. Para determinação da condutividade térmica, foram avaliados os fluxos de calor através da fonte quente e da fonte fria. -MATERIAL E MÉTODOS -Obtenção de amostra e corpo-de-provaOs corpos-de-prova utilizados foram obtidos a partir de grãos triturados de soja, separados por classes de tamanho. Essa separação foi efetuada através de um INFLUÊNCIA DA GRANULOMETRIA, DO DIÂMETRO E DO COMPRIMENTO DE AMOSTRAS DE GRÃOS TRITURADOS DE RESUMOEste trabalho teve como principal objetivo verificar a influência da granulometria de grãos de soja triturados, assim como do diâmetro e do comprimento do corpo-de-prova na determinação de coeficientes simultâneos de transferência de calor e massa.
