Influência das condições de torra e do processo extrativo em blends de café Influence of roast conditions and extractive process in coffee blends
Resumo O Brasil é o maior produtor de sacas de grãos de café verde, sendo a população brasileira a maior consumidora de bebida de café do mundo. Diversos parâmetros fazem essa bebida ser tão apreciada pelo consumidor, destacando-se as características sensoriais e seu efeito estimulante, que é causado pela presença da cafeína. Neste sentido, a etapa de recepção dos grãos é fundamental porque é onde os grãos são selecionados e importantes mudanças químicas que conferem ao café o sabor, aroma e cor peculiar podem ocorrer no seu processamento. As espécies Coffea arabica (café arábica) e Coffea canephora (café conilon) são as mais utilizadas pelas torrefadoras de café a nível mundial, isso por causa de suas altas produtividades e bons rendimentos a nível industrial. Para este trabalho foram coletadas 300 g de 20 lotes, 15 lotes de café arábica e 5 lotes de café conilon, onde foram feitas as separações por tipos de defeitos intrínsecos e extrínsecos e, classificação do café, de acordo com a Instrução Normativa nº8, de 11 de Junho de 2003, Regulamento Técnico de Identidade e Qualidade para Classificação do Café Beneficiado Grão Cru. Os principais defeitos identificados nos lotes de grãos de café distribuídos para empresas do agreste pernambucano foram grãos dos tipos: preto, ardido, verde, quebrado, concha, chocho, mal granado, brocado e impurezas (casca, pedra, pau e torrão). Por fim, os resultados das classificações dos grãos mostram que o defeito mais recorrente nas amostras de café arábica são os grãos verdes seguidos de grãos quebrados e, nas amostras de café conilon os principais defeitos foram verdes, ardidos e quebrados, recebendo assim classificação 8. Um maior controle deve-se ter nesta etapa, de forma que se tenha uma melhor classificação do café, melhor produto ao consumidor associada a um bom rendimento industrial. As espécies Coffea arabica e Coffea canephora, arábica e conilon, respectivamente, são as mais utilizadas mundialmente pelas torrefadoras de café. São espécies que conferem características sensoriais distintas e variáveis em função de suas concentrações e técnicas de processamento. Nesse sentido, esse trabalho teve como objetivo traçar o perfil físico-químico de blends elaborados com café arábica e conilon submetidos a diferentes condições de torrefação. Foram elaborados onze blends, de acordo com um planejamento fatorial completo 23, em diferentes concentrações de arábica e conilon, temperatura e tempo de torra. Os blends foram torrados, moídos, analisados físico-quimicamente e os resultados submetidos à análise estatística. Todos os blends classificados como torra fina, mostraram baixa perda de massa e bom rendimento. A densidade foi mais elevada para os blends com maior concentração do conilon. O pH e a cor foram os parâmetros mais influenciados pelo grau de torra. Os valores de umidade, sólidos solúveis totais, extrato aquoso, cafeína e lipídeos estavam de acordo com o exigido pela legislação. Foi observado que os experimentos elaborados com 31,25% de café arábica, torrados a 170 ºC por 12 min, mostraram resultados satisfatórios, em relação aos aspectos visuais e físico-químicos, indicando que este pode ser um padrão de blend adotado pelas indústrias torrefadoras de café.
