Auf der Basis äthanol‐unlöslicher Substanzen werden bei Gurken verschiedener Sorte und Herkunft die Gesamtmenge an Pektin, der Veresterungsgrad und die Anteile an versene‐ und milchsäure‐löslichen Pektinfraktionen sowie der Eiweißgehalt in Abhängigkeit vom Wachstum, von der Lagerung und von der Einlegedauer bei der Herstellung von Salzgurken quantitativ verfolgt. Weiterhin wird die Cuticula von Einlegegurken isoliert und nach Dicke und Zusammensetzung charakterisiert. Gegenüber der relativ unveränderlich bleibenden Gesamtmenge an Pektin — auch bei eingelegten Früchten von fester bzw. weicher Konsistenz—nimmt der Eiweißgehalt der Gurken mit zunehmendem Gewicht und in der Phase der Milchsäurebildung ständig stark ab. Eine Erhöhung der löslichen Pektinmenge ist teilweise bei Gurken — schwerer als 100 g — und bei der zwischenzeitlichen Lagerung der Früchte nach der Ernte feststellbar. Tiefgreifende Veränderungen am Protopektin hinsichtlich des Veresterungsgrades und der Transformation in versene‐ und milchsäure‐lösliche Pektinfraktionen gehen während der Gärperiode vor sich. Bei weichen Salzgurken liegt praktisch die Gesamtmenge an Pektin in löslicher Form vor. Eine derartig vollständige Desaggregation des Protopektins wird durch die Wirkung von mazerierenden Lakenenzymen, vorwiegend mikrobiellen Ursprungs, herbeigeführt. Gurkeneigene Enzyme, insbesondere Pektinesterase und Polygalakturonase sowie Milchsäure vermögen das Protopektin in der Regel nur partiell in lösliches Pektin umzuwandeln. Die im einzelnen erzielten Ergebnisse werden unter Einbeziehung des zwischen der Lake und dem Gurkeninnern stattfindenden Stoffaustausches ausgewertet. Der Prozeß der Desaggregation des Protopektins, der letztlich zum Weichwerden von Salzgurken führt, wird in Primär‐ und Sekundärvorgänge unterteilt.
