Different fatty acid proportions produce potential inflammatory and metabolic changes in organisms. However, the evidence for how each fatty acid mediates the metabolic pathway, and its lipid stability remains controversial. To resolve this controversy, the present study investigated the metabolic effects of cold-pressed linseed (LG), coconut (CG), and baru (BG) oils in comparison to those of soybean oil (SG) in mice, in terms of their oil characterization and stability. The quality analysis showed less oxidative behavior among PUFA-rich oils (SO, BO, and LO, with induction periods lower than 2 h compared to 39.8 h for CG), besides the high contents of tocopherols and carotenoids in SG and LG. In the experimental study, CG presented higher triglyceride (257.93 ± 72.30) and VLDL-cholesterol levels (51.59 ± 14.46, p < 0.05), while LG reduced LDL levels (59.29 ± 7.56, p < 0.05) when compared to SG (183.14 ± 22.06, 36.63 ± 4.41 and 131.63 ± 29.0, respectively). For visceral fats, the adiposity index was lower for BG (7.32 ± 3.13) and CG (9.58 ± 1.02, p < 0.05) in relation to SG (12.53 ± 2.80), and for leukocyte recruitment, CG presented lower polymorphonuclear (PMN) (p < 0.0001) and mononuclear (MN) (p < 0.05) cell infiltration, demonstrating anti-inflammatory potential. In NMR-based metabolomics, although CG presented higher values for the glucose, lactate, and LDL/VLDL ratio, this group also evidenced high levels of choline, a lipotropic metabolite. Our study emphasized the controversies of saturated fatty acids, which impair serum lipids, while alfa-linolenic acid presented cardioprotective effects. However, coconut oil also has a positive immunomodulatory pathway and was found to reduce visceral bodyfat in mice. Therefore, for future applications, we suggest a combination of lauric and al-fa-linolenic acid sources, which are present in coconut and linseed oil, respectively. This combination could be less obesogenic and inflammatory and exert cardioprotective action.

Antimicrobial Properties of Lauric Acid and Monolaurin in Virgin Coconut Oil: A Review

Virgin coconut oil is obtained by wet processing of coconut milk using fermentation, centrifugation, enzymatic extraction, and the microwave heating method. Presently, VCO has several positive effects and benefits to human health, hence, it is regularly consumed and widely known as a unique functional food. VCO contains lauric acid (45 to 52 %). By lipase in the digestive system, VCO can undergo a breakdown into lauric acid, 1-monolaurin, and 2-monolaurin. These components have both hydrophilic and lipophilic groups and are also recognized as excellent antimicrobial lipids. Furthermore, lauric acid and monolaurin can be used as antibacterial, antifungal, and antiviral with broad-spectrum inhibition. Lauric acid and monolaurin have a strong ability to destroy gram-positive bacteria, especially S. aureus, fungi such as C. Albicans, and viruses including vesicular stomatitis virus (VSV), herpes simplex virus (HSV), and visna virus (VV). Lauric acid and monolaurin interact with certain functional groups located in the cell membrane and can cause damage to the cell. In general, the potential of VCO as healthy food is contributed by lauric acid and monolaurin which are antimicrobial agents.

ABSTRAK Telah dilaksanakan kegiatan pengabdian kepada masyarakat Desa Tanjung Seteko Indralaya. Tujuan kegiatan ini adalah untuk memberikan informasi kepada masyarakat tentang: pengolahan buah kelapa menjadi virgin coconut oil (VCO) dan demonstrasi pembuatan dan pemanfaatan VCO. Kegiatan Pengabdian kepada Masyarakat ini diikuti 20 orang ibu rumah tangga dan remaja putri yang berasal dari desa Tanjung Seteko. Kegiatan yang dilaksanakan adalah memperkenalkan teknologi pembuatan VCO. Selain itu dilakukan juga diskusi dan demonstrasi penggunaan VCO sebagai ramuan yang berguna bagi kesehatan. Penyuluhan yang dilakukan mendapat tanggapan yang positif dari masyarakat. Kegiatan diskusi dan tanya jawab juga mendapat perhatian yang tinggi dari masyarakat. Masyarakat merasa senang karena mendapatkan pengetahuan dan keterampilan tentang teknologi pembuatan VCO. Dengan diberikannya penyuluhan masyarakat juga menjadi faham cara membuat ramuan berbahan dasar VCO. Masyarakat juga berharap kegiatan pengabdian dapat berlangsung secara berkelanjutan, sehingga wawasan mereka akan terus bertambah baik. Kata Kunci: Pembuatan, Penyuluhan, VCO ABSTRACT Community service activities in Tanjung Seteko village Indralaya have been carried out. The purpose of this activity is to provide information to the public about: processing coconuts into virgin coconut oil (VCO) and demonstrations of making and using VCO. This community service activity was attended by 20 housewives and young women from Tanjung Seteko village. The activity carried out to introduce the technology of making Virgin Coconut Oil. In addition, discussions and demonstrations on the use of VCO as an ingredient that is useful for health were also held. The counseling carried out received a positive response from the community. Discussion and question and answer activities also received high attention from the community. People are happy because they get knowledge and skills about VCO manufacturing technology. By providing public education, they also understand how to make VCO-based ingredients. The community also hopes that service activities can take place in a sustainable manner, so that their knowledge will continue to improve. Keywords: Making, Counseling, VCO
